Fasting is a very strict, one might say, biased to the composition of the diet period. But he also allows himself to be pampered from time to time. And if you have time, then at least every day.

Pastries in fasting, of course, cannot be rich, that is, containing eggs, milk, butter, and even a modest margarine. The dough is based on only water and flour, however, excellent pies are obtained from such a batch, and especially fast ones that are fried in a frying pan (this, of course, is not quite pastries, but pies), buns, pizza, rolls. That is, everything that the soul and stomach yearn for the most during strict restrictions.

Baking depends on the dough

As a result, the quality of the finished product depends on how successfully the dough is mixed, how and in what quantity the ingredients are selected, how the conditions for its “aging” are met.

Baking during Lent - this is a complete transition to "low-fat" dough: water + flour + salt + a little sugar + vegetable oil. This is a basic recipe for all types of lean pastries, which can also be successfully used for making dumplings, homemade noodles and pancakes.

Experienced housewives know that even with such a limited number of ingredients, you can surprise your household with amazing splendor with loaves and pies. The main thing is to knead the dough correctly and approach the matter with a soul.

As for the test itself, it answers the same - it fits quickly and efficiently, especially if it is kneaded with warm water and stands for several minutes in a warm place. And if the yeast is fresh.

Approximate time for increasing the dough in volume is 30-40 minutes.

Features of kneading on the water

Whatever one may say, but has more advantages than disadvantages. Firstly, everyone has flour and water, which means that homemade bakery products are available to all segments of the population.

Secondly, homemade cakes, no matter how modest the recipe is, are much tastier than store-bought ones. It can be eaten fresh as soon as it cools down - this is an absolute plus.

Thirdly, it does not get stale or moldy longer. The structure is somewhat different from baking - lean baking is more porous and viscous ("rubber"), but this allows it to stay fresh longer.

Varieties of Lenten Test

Despite the severity and uniformity of the components of the lean test, it is still divided into varieties:

  1. Yeast.
  2. Pirozhkovoe.
  3. Custard.

And each can make amazing pastries for Lent. Recipes can begin to learn precisely at the stage of preparing the right dough.

Yeast: 3 cups of water, 8 cups of flour + 6 tablespoons for dough, 4 tablespoons of sugar, a pinch of salt, a glass (olive can be used), 100 g of fresh yeast.

Preparing such a dough is simple and quick: mix flour (6 tablespoons), sugar, yeast and water. Let stand for about 15 minutes. This is steam. Then butter and the rest of the flour should be added to it. Just like that, a few minutes - and the dough is ready.

Pie: 500 g flour, 10 g dry yeast, water, depending on the amount of baking: from 400 to 600 g, a teaspoon of salt, 40 g each of sugar and vegetable oil.

Add sugar, yeast, salt and a little flour to a portion of warm water. Leave for 15 minutes until frequent bubbles form on the surface. Gradually sprinkle flour into the dough and pour in the oil. The dough should be soft when kneading. Then it must be left alone for 25-30 minutes - let it fit. After it has doubled in size, the dough should be turned over onto a floured board, kneaded completely and formed into a ball.

Custard: the name is rather symbolic, since the dough is prepared on boiled and cooled to 30 about water. In fact, yeast dough is not kneaded in a water bath. The principle of preparation and ingredients are the same as in the previous recipe.

Filling

Baking in the post can be another delicacy! The dough is dough, but a lot depends on the filling. And here you can use everything that grows in the garden and on fruit trees.

First of all, this is cabbage, adored by the majority. Baking during Lent is not complete without pies with this filling. Cabbage is allowed even on the strictest days, so people use it: pies with sauerkraut, stew, fresh cabbage help out a lot.

For donuts: roll out a layer 3 cm thick, cut out “pancakes” with a small glass and place them in heated oil. In 5 minutes they will inflate and turn into balls. Very fast and very tasty. The only downside to this recipe is that it's inconvenient to flip the donuts in the simmering oil.

For brushwood: the layer should be thinner - 2-2.5 cm. Cut even diamonds from the dough, cut in the middle. Insert one end of the rhombus into the gap formed. Place in hot oil.

Sprinkle both donuts and brushwood on top with powdered sugar.

Open pie with cucumbers and barley porridge

This pie is very good if the hostess is not bothered by baking in the post. What to cook - the question of every day, but if the family adheres to the fast, then it becomes even more relevant and difficult to solve. But not with pearl barley.

Dough Ingredients:

  • half a glass of rye and wheat flour;
  • 2 tbsp. l. vegetable oil;
  • half a glass of water or weakly brewed coffee;
  • 1 tsp baking powder (1/2 if it's soda);
  • 0.5 tsp salt.

Filling: 100 g of pearl barley (when boiled, the volume will increase three times), 3 medium-sized pickles, 2 medium onions. The filling is easy to prepare - boil the barley, cool, chop the onion and fry in vegetable oil, grate the cucumbers on a coarse grater, add to the pan while the onion is cooking. Simmer them together for a few minutes (until the cucumber smell loses its sharpness), add barley.

Preparation of the dough: in a bowl, mix both flours, baking powder and salt, pour in the oil and stir until crumbs form. Then pour in warm water or coffee. Knead a soft dough, it will not turn out very much. Roll out on a sheet into an even circle (diameter 30x30 cm). Put the filling on it and pinch the edges nicely. Bake at 200-220 degrees for half an hour.

This pie is a great pastry in the post. It is very easy to cook it in a slow cooker, only the shape will be slightly different. Actually, now everyone bakes in this newest kitchen unit in order to save time and effort.

No dessert!

Which sweet tooth can endure long and dull days without your favorite desserts? You can replace them with fruits, nuts, but you still miss the bun.

One thing saves from longing for the liver - pastries in the post. Pies with fruit filling can also be attributed to desserts, but sometimes you want something else.

Filling: 5 large apples and a little sugar (approximately 100 g).

Preparation: mix the ingredients for the dough, diluting them with a little water. The kneading should be cool. Wrap the finished dough in cling film or foil and leave for an hour in a warm place. During this time, you can have time to make the filling: peel the apples, cut them into slices and mix with sugar.

Put apples on a thin layer of dough (do not take the juice released from them), roll up the roll and put it to bake, after piercing it in several places. The dessert will be ready in 20-25 minutes.

Strudel with pear filling

Pastries in the post, the photos of which look very appetizing, are just as tasty in essence. Pear strudel has a special taste and aroma - this dessert is worth a try.

Despite the apparent complexity of preparation, the strudel is easy to cook.

Dough: flour - 240 g, water - 120 ml, a pinch of salt and 40 g of vegetable oil.

Filling: 500 g of durum pears, 2 pcs. cloves, lemon, 100 g of nuts and raisins, 50 g of sugar, a little cinnamon and a bag of vanilla sugar. Powdered sugar - for decoration.

Preparation: mix all the ingredients, put the dough in the refrigerator immediately after kneading and proceed to the filling. Steam the raisins, chop the nuts, peel the pears and cut into cubes, pour over the lemon juice. Caramelize sugar by adding a little water to it (literally a spoon). Add pears, raisins, cloves, cinnamon and vanilla sugar to sugar. Cook until the liquid has completely evaporated, then mix with nuts.

Roll out the dough thinly, brush with oil and evenly distribute the filling. Collapse. Bake for half an hour at 200 degrees.

Buns "Pumpkin"

Ingredients: a glass of any of the fruit juices, 1.5 cups of flour, 1 tsp. soda, 3 tbsp. l. sugar, apple, 3 tsp. lemon juice, a little raisins, a bag of vanilla sugar, salt, 50 g of vegetable oil.

Preparation: mix flour with sugar, add a pinch of salt, extinguish soda with lemon juice and stir in fruit juice, add oil. Pour the liquid into flour, add washed raisins, peeled and diced apple, zest and vanilla sugar there.

Knead the uncooked dough, from which with wet hands form balls and put them on a baking sheet covered with parchment paper. Sprinkle the balls with sugar. Bake for 15-20 minutes at 180 o.

What else can be baked in the post

To make it easier to endure the difficulties of fasting, you can treat yourself to your favorite dish, borrowed from the Italians, who cannot live without flour. Guessed? That's right, it's pizza!

Such a hearty meal will not break the strictness of fasting if you make dough for it on water (it is described a little higher how), and use mushrooms and tomatoes or some other vegetable mix as a filling. Of course, such a pizza should not contain cheese.

There is no easier flour products than pastries in fasting. There are a huge number of recipes from the dish you like, and if one of the housewives considers the preparation itself too laborious (test in particular), then you can simplify your task by buying the necessary one ready-made. On the eve of Lent, it appears in a wide range on supermarket shelves.

You don’t have to bother at all - just cut diamonds out of it, sprinkle with sugar, put a cherry or a nut in the center - and the five-minute cookie is ready. This is the most hassle-free home cooking.

LENTEN OAT COOKIES

Do not expect reasons for enthusiasm and applause from this recipe. Just cookies - nibble on tea or have a snack in the afternoon. Unobtrusive, inexpensive, uncomplicated - in general, an ideal option for every day.

140 g of sugar;
75 g oatmeal;
140 g wheat flour;
3 art. l. any fruit juice;
50 ml of vegetable oil;
1/3 tsp salt;
1/3 tsp soda.

Mix both types of flour, sugar, salt, soda.
Separately combine juice and oil. Gradually adding the dry mixture, knead a soft, non-sticky, tender dough.
We roll it into a thin layer, cut out cookies with cookie cutters.
We shift to a baking sheet, bake at a temperature of 200 degrees for about 10 minutes.

Advice. If desired, finely chopped dried fruits, nuts, seeds can be added to the dough.

LENTEN MUFFINS

The recipe is so simple that it's hard to believe that something worthwhile will come out of it. But you believe! Absolutely simple, almost primitive - but the result is very, very worthy.

2 cups of flour;
1 glass of any fruit juice;
1 cup of sugar;
6 art. l. odorless vegetable oil;
1/3 tsp salt;
1/3 tsp soda;
nuts, berries or dried fruits to taste.

Mix dry ingredients. Mix oil and juice. We connect both masses, add berries or nuts. We lay out the dough in muffin molds and bake at a temperature of 180 degrees for about 30 minutes. Readiness is checked with a wooden stick.

Advice. If desired, fruit juice can be replaced with strong tea.

LENTEN YEAST PANCAKES

Nothing special, just pancakes. Nothing complicated, just mix and wait for the mass to double. Nothing difficult, just fry as usual. And yet… they are wonderful. Who needs thin lean pancakes with yeast?

2 glasses of warm water;
1.5 tsp yeast;
1/3 cup sugar;
1/3 tsp salt;
3 art. l. vegetable oil;
1.5 cups flour.

Mix all dry ingredients, add warm water and oil. Knead a homogeneous liquid dough, put it in a warm place to rise.
We fry in a well-heated pan like ordinary thin pancakes, if necessary, periodically grease the pan with oil. We enjoy the lace result.

Advice. Don't forget to get a jar of grandma's jam - it greatly improves the taste of lean pancakes.

Lenten desserts - three recipes for family tea drinking

GALETTE WITH APPLES

Crispy and very tasty, the biscuit captivates with thoughts of usefulness: eating piece by piece, I want to think that whole grain flour brings more benefits than centimeters at the waist, and apples share vitamins more generously than calories.

150 g of ordinary wheat flour;
100 g whole grain flour;
100 ml of vegetable oil;
100 ml of boiling water;
a pinch of salt;
3 large apples;
2 tsp lemon juice;
1/2 tsp cinnamon;
2-3 tbsp. l. Sahara.

In a bowl of sufficient volume, mix both types of flour, add salt. Pour in vegetable oil, rub into crumbs. Pour in boiling water, knead a soft, elastic, non-sticky dough.
Peel the apples, remove the core, cut into thin slices using a vegetable cutter. Sprinkle with lemon juice.

Roll out the dough into a thin round layer. On the entire surface of the biscuit, with the exception of 2-3 cm at the edges, spread the apples in an even layer. Sprinkle them with sugar and cinnamon.
We wrap the edges of the biscuit up, carefully transfer it to a baking sheet and bake at a temperature of 200 degrees until cooked - about 25 minutes.

Advice. Add some sea buckthorn or cranberries to apples - the taste will be completely different!

ORANGE CAKE

The taste of this cupcake is very simple and unobtrusive - just what you need to decorate a family tea party. A simple cooking process, a fairly simple result, simple home gatherings. However, do not think that all this simplicity is an indicator of the poor quality of baking - on the contrary, the cake comes out very good: light, fragrant, real.

150 ml of orange juice;
zest of 1 large orange;
150 g of vegetable oil;
150 g of sugar;
380 g flour;
1/3 tsp salt;
1 tsp soda;
2 tbsp. l. water;
1 st. l. vinegar.

Remove the zest from the orange, squeeze out the juice.
Mix orange fresh with vegetable oil (refined, odorless), add sugar, stir until all grains are dissolved. Add salt and vinegar, add flour and knead a homogeneous dough.

In a small container, mix soda and water and add to the dough.

Remove the finished biscuit from the oven and let cool in the mold for an hour. Then turn the mold over, lay out the biscuit and let cool completely. Drizzle the cake with cocoa icing.

During Lent, it is customary to bake special cookies and gingerbread. Try and cook "Crosses" and "Stairs".

P cookie "Crosses" (option 1)

Ingredients:
250 g vegetable margarine (coconut or cocoa butter),
3 stack. flour,
1 stack potato starch,
1 stack Sahara,
1 tsp soda,
2 packets of vanilla sugar
1 stack water,
1 lemon
100 g raisins.

Cooking:
Chop flour with margarine and starch, add sugar, soda, vanilla sugar and lemon zest. Squeeze the juice of half a lemon into a glass of water and pour into the dough. Knead the dough and roll out. Cut into strips and make crosses. In the "crossbar" crease the raisins, symbolizing the nails. Bake at 250°C for 15 minutes.

Ingredients:
½ stack carbonated mineral water,
½ stack vegetable oil,
2 stack flour,
½ stack starch,
½ tsp dry ginger,
raisin.

Cooking:
Rinse the raisins, blanch and let cool on a towel. Knead the dough from the indicated ingredients, roll it into a ball and put it in the freezer for 20 minutes. Roll out, make crosses, fold in the raisins and bake at 160-170°C for 20-25 minutes.

Cookies "Stairs"

Ingredients:
1 stack rye flour,
2 tbsp vegetable oil,
2 t.l. honey,
¼ tsp salt,
raisin.

Cooking:
From rye flour, vegetable oil, honey and a pinch of salt, knead a rather steep dough. Mix thoroughly. Make cookies in the form of stairs: roll up 2 bundles, make crossbars between them, crease raisins into the ends of the crossbars. The number of steps must be strictly defined: seven, twelve, twenty or thirty. Bake in an oven preheated to 180-200°C for 15-20 minutes.
