Place a steaming bowl, place jars on it. Select the mode - stew or steam. Sterilize jars for 10 minutes. Then place them upside down on a towel.

We put grapes (or brushes) in prepared jars.

Fill jars with boiling water. Do this carefully so that the jar does not burst (although after sterilization, the likelihood of this is very small).

We leave the jars for 15 minutes to sterilize them. There is no compote color at this stage (even if you use dark grape varieties).

After 15 minutes, drain the water into a saucepan. Add sugar and citric acid. Put the pot on the fire and bring to a boil. Taste the syrup, if it's not sweet for you, add more sugar.

Pour the jars a second time and immediately roll them up with prepared lids. Wrap the jars until completely cool with an old blanket. If you took only dark grapes, then after cooling the compote will be a rich color. White grapes will not give color.

1. Pour the pot, in our case 2-liter, with cold spring water and bring to a boil.
2. Rinse the bunches of grapes, the berries can be separated from the twig. Select and discard spoiled or bursting berries so that our compote does not turn sour. When the water boils, put the berries in the water and bring to a boil again.
3. Then add sugar. If you are preparing compote from homemade sour grapes, add 5 tablespoons of sugar or to taste, if the grapes are already sweet, less. Bring the compote to a boil and turn off the stove. I have an electric stove, so after turning off the compote, it still continues to boil for about 5 minutes. If the stove is gas, let the compote with sugar boil for 5 minutes and turn it off. Leave the pan with compote under a closed lid for about half an hour. When the berries settle to the bottom, the compote is ready. Thus, the compote is saturated with berry flavor and aroma and acquires a very beautiful, more intense color.

If you roll grape compote into jars for the winter, you need to fill the jars with compote several times, then drain it and boil it, and pour it again, that is, sterilize it well.

Option 1: Classic Grape Compote Recipe

The drink is prepared by double pouring, there is nothing frighteningly complicated in this - the technology is extremely clear and much simpler than jam, with its repeated heating and cooling. Of course, it is better to cook compote and some kind of confiture or jam, but if you prefer to stock up on drinks, here is a simple and proven recipe for you.

Ingredients:

  • eight hundred grams of ripe grapes;
  • sugar, refined - a full glass.

Grape compote recipe step by step

Approximately two liters of water will be required for the indicated amount of grapes. Take it a little with a margin, pour it into the pan, turn on a quick fire under it. Disassemble the bunches of grapes, removing the berries from the branches, inspect them, removing the dented and spoiled ones.

Collect the grapes in a colander and put it under running water, then let it drain completely and pour the berries into a jar. They should take up about a third of the volume. If your grapes are very sweet varieties, it makes sense to add a couple of lemon slices.

Pour boiling water over a jar of berries to the very top, cover with an inverted lid, hold for ten minutes. Dark grapes can visibly color the water, don't worry, that's how it should be. Drain the water back into the pan, put on heat, let it boil again.

In jars, pour sugar directly on top of the grapes, before doing this, make sure that there are no lumps in the sugar. Under the jars of grapes, place a thick cloth or substitute an empty bowl, pour boiling water a second time. Seal using suitable sterilized caps. Turning upside down, leave the compote for a day under the covers.

Option 2: A quick recipe for grape compote without sterilization

The mass of grapes is indicated with the expectation of twigs and low-quality berries, it is very good if such problems do not arise. In addition to mint, or rather instead of it, you can use small slices of vanilla, dry cloves or pieces of cinnamon.

Ingredients:

  • a little over two kilograms of grapes;
  • four liters of water;
  • five hundred grams of sugar;
  • sprig of fresh mint.

How to quickly prepare a fragrant compote from grapes

For twenty minutes, lower the bunches into a large bowl filled with cold water. Then remove and shake off the moisture, carefully remove the berries from the branches, rinse in a colander and inspect. Put aside all the grapes that cause you the slightest suspicion, it is better not to risk compote.

Carefully sterilize the jars, place washed and slightly dried berries in them about a third of the height. Throw a couple of mint leaves, pour sugar on top, dividing it in proportion to the number of jars and their volume.

Boil the water, typing it in advance with a small margin. We lower a long spoon into the jar, quickly pour boiling water over the berries. Do not try to do this with several banks at the same time. Pour boiling water over them and immediately clog one at a time. During the day, soak for cooling, covering the jars with compote with a thick cloth.

Option 3: Simple grape compote in a saucepan

A mixture of different grapes is not a whim of the compilers of the recipe. By combining different varieties, you, firstly, provide a beautiful color to the drink, and, secondly, improve its taste. Compote is very effective if any of the grape varieties in it are muscat.

Ingredients:

  • purified water - two liters;
  • ninety grams of refined sugar;
  • four hundred and fifty grams of assorted grapes - light and dark berries.

How to cook

Put water for compote to boil in a saucepan with a small supply of volume. Rinse the grapes, first just with a stream of water, then separate from the bunches and put in a colander. Dip with it in a bowl of water for a few minutes, then rinse again.

When lowering into boiling water, be careful, you should use a colander for convenience, helping yourself also with a slotted spoon. After boiling again, slightly remove the heat and cover the pan, cook for about eight minutes.

In order to quickly cool the pot with compote, after half an hour of infusion, put it in a wide basin, pour cold water into it. By replacing the coolant twice, you will quickly cool the compote. Drain it, separating the berries, divide it into jugs or jars, keep it in the refrigerator for about an hour.

Option 4: "Assorted" - compote of grapes with apples

The requirements for grapes are clearly indicated, but use any apples in a drink. Even a few unripe fruits will do, and it will be even better than putting soft fruits in the compote. Such apples are easily boiled soft and even just boiling water can damage the slices and worsen the appearance of the compote.

Ingredients:

  • three hundred grams of grapes of any dark and fragrant variety;
  • half-liter jar of white sugar;
  • three liters of water;
  • two large hard apples.

Step by step recipe

Using a solution of baking soda, thoroughly wash the jars with it, rinse with clean running water. Sterilize by turning upside down and setting over steam for ten minutes.

Wash the grapes and apples thoroughly, pick the berries from the brushes and carefully inspect, remove all spoiled ones. Break each apple into four slices, while removing the middle. Pour pieces of fruit together with berries interspersed into jars, cover with lids and temporarily set aside.

Pour the specified amount of clean water into the pan, immediately pour sugar into it. Put on a quick heat and, stirring occasionally, let the sugar dissolve completely and the syrup boil. Without removing from heat, using a ladle, pour the syrup into jars in small portions.

Using a special seaming machine, seal the compote tightly with lids. Keep it until it cools completely, turning it upside down and covering it with a blanket.

Option 5: Compote of grapes for the winter with honey, cinnamon and cloves

Although the role of honey in a drink is solely to add sweetness to it, do not be casual in your choice of variety. It may be superfluous to specifically purchase and send rare and exquisite varieties to compote, but honey, in any case, should be natural. It is also possible to use molasses imitating artificial honey, but it does not make sense - such a compote will not differ in taste from that cooked on sugar.

Ingredients:

  • four dry cloves;
  • a quarter of a spoon of cinnamon powder;
  • about three liters of water;
  • three kilograms of grapes;
  • a quarter cup of lemon juice;
  • one and a half kilograms of natural liquid honey.

How to cook

Boil water in a saucepan. Rinse the grape brushes, remove only whole, unspoiled berries from them. Weigh, we need exactly three kilograms. Sterilize the jars and divide the grapes between them. The indicated quantity is calculated for two three-liter bottles.

Dip the cloves and chopped cinnamon into boiling water, after five minutes add and stir the honey, squeeze and pour in the lemon juice. Pour grapes in jars with boiling syrup, let stand for a quarter of an hour, drain and boil again.

After refilling, the jars are quickly rolled up and tightly wrapped in a warm blanket, allowed to cool slowly.

Recipe 6: Grape compote with whole bunches

The beauty of the recipe is not only in the elegant form. If the very fact of the presence of the bottle on the table does not seem strange to your household or guests, rinse it and wipe it dry, open it and put it on a glass dish in this form. You can disassemble the grapes before canning into small brushes, in this form it can be carefully removed from the container with compote and transferred entirely to a decanter. The presence of twigs in the drink makes the drink a little more sugary, so most often they canned whole, brushes of relatively unsweetened grapes.

Ingredients:

  • four kilograms of grapes in bunches;
  • two three-liter jars;
  • two liters of water;
  • seven hundred and fifty grams of sugar;
  • lemon acid.

Step by step recipe

Rinse the grapes several times and inspect very carefully. Remove all spoiled berries and, if found, be sure to remove the cobwebs. We put the clusters one by one in a colander, scald with boiling water, then carefully transfer them to jars.

From water, lemon and sugar, boil the syrup, pour it equally into the jars. Cover tightly with sterilized lids. Pour a certain amount of heated water into a spacious basin or a low saucepan, lower a wet towel to the bottom. Place a jar filled with grapes and syrup on top, add water “up to the shoulders” of the bottles.

Turn on a moderate fire under the pan, as the water warms up, increase it. After boiling, lower the temperature a little, detect ten minutes, then remove the jars and roll up the lids tightly.
