An hour before cooking, prepare the food, put them out of the refrigerator: the eggs should warm up, the butter should soften. Warm butter will be easier to rub with sugar, and warmed chicken eggs will not cause lumps in the butter, as if we were mixing cold ones.

First, mash the bananas with a fork into a homogeneous gruel. For this purpose, you can use a blender.

This recipe is especially in place when there are overripe bananas in the house that look too dark and unappetizing. Let them go to baking!

Mash the bananas with a fork and set aside. In the meantime, sugar (100 g) is stirred with soft butter.

If the oil is too cold, you can cut it into pieces no larger than 2-3 cm so that as much of the surface of the oil as possible comes into contact with the air in the room. This way the oil will warm up faster and be ready to use in the recipe!

However, if you take ordinary milk, the quality of the cupcakes will not suffer from this either, they will simply have a simpler taste and a denser structure.

Pour warm milk into beaten eggs and mix a little with a mixer at the lowest speed.

Peel the banana, cut into small pieces, add butter and knead everything with a fork until a mushy, but not too homogeneous consistency. This will “tighten” the very tender dough of the cupcakes a little so that they do not fall apart when ready.

Add the mashed banana to the bowl with all the liquid ingredients and mix lightly with a mixer at low speed.

Thoroughly mix wheat flour with a whole bag of baking powder and a tablespoon of coconut flour.

Sift the prepared flour through a fine sieve directly into the bowl of liquid ingredients, then mix thoroughly with a spoon. You don’t need to mix the dough with a mixer, otherwise it will not rise!

Pour the dough into silicone molds, place them on a baking sheet and place in a preheated oven on a medium level.

The total batter should make 12 medium cupcake liners or about 20 small cupcake liners. After 10 minutes, reduce the heat in the oven to a minimum and bake for another 20-25 minutes. As soon as the cupcakes begin to lightly brown on top, you need to immediately remove them from the oven.

Allow the finished muffins to cool slightly, then carefully remove them from the silicone molds and serve as a dessert with fragrant tea.

First, take the right amount of products and leave them to heat at room temperature. I recommend doing this 2-3 hours (or earlier) before you start cooking so you don't have to wait. Butter can be put on warm to soften it.

When all the products are not cold to the touch, and the butter is soft, we will begin to prepare a delicious cake.

Before starting cooking, turn on the oven, we need to warm it up well.

To make our cupcake fluffy, we begin to beat the butter itself first. When we get a homogeneous lush mass, and this is no more than 2 minutes at medium speed (or 5-8 minutes with a whisk), we will begin to add sugar and vanilla to it. Pour them in portions of 3-4 tbsp. l. and beat for 2 minutes. After 3 times, add half of the milk, and then before the last batch of sugar, the rest.

Your mixture will be thick, milk will make the process easier, and the consistency of the mixture more airy. If you have taken food that is too cold, then you may separate the oil. It's okay, it will not affect the quality of our dessert.

Now set aside the mixture and take care of the bananas. Remove the skin from them and mash them with a fork. It is not necessary to make a too homogeneous puree. Yes, the cake will taste better.

At the next stage, add bananas to the sugar-butter mixture and beat with a whisk (you can also use a mixer, but not more than 1 minute).

Now break the eggs into the mixture and beat again for 1 minute.

Let's add flour last. It must first be sifted through a sieve. We do this not to remove lumps, but to make our dough more airy.

Flour should also be added little by little (3-4 tablespoons at a time). Perhaps your dough will take less flour than stated in the recipe - this is not a problem. It should be thick and resemble thick sour cream or cream.

Now it remains to prepare the form. I usually smear it with butter. But very good and refined vegetable.

Pour the dough into our form and put in a preheated oven on the middle shelf. The temperature in it should already be 180 C.

We bake a cake for 30-40 minutes. You can’t look into the oven earlier than half an hour later. This should only be done after a golden crust appears on the cake.

To check the readiness of the dough, use a thin toothpick or other wooden stick. Having pierced the cupcake to the bottom, and pulling it out, you need the stick to be dry, with no signs of raw dough.

Banana cake will have dark brown appetizing dots inside - this is a banana that has changed color during heat treatment.

Cooking Tips:

  • The butter will not churn if the milk is at the same temperature as it (30 C).
  • If the dough came out liquid, add a little flour, if too thick - milk.
  • Take a special mold for a cake - it will be better baked in it. If it is not available, pour the cake into any shape, with a layer no more than 5–6 cm.

  4. Now let's set aside our mass and deal with dry products: sift (for the splendor of the dough) flour and add baking powder to it.
  5. The next step is to combine the components. In a bowl with a liquid mixture, we will spread the flour with a spoon. But not all at once, but gradually: put 3 tablespoons of flour, beat for 1 minute, then add more and so on until the cooked flour with baking powder runs out.
  6. The last to go into the dough are nuts, it is better to fry them a little in a dry frying pan beforehand. Before adding to the dough, do not forget to carefully blow it so that there is no husk.
  7. The dough for the cake should resemble thick sour cream. Let it stand for 10 minutes, and during this time we will prepare the form: slightly warm it up and grease it with vegetable oil.
  8. Bake a banana cake in an oven preheated to 180 C. Place in preheated oven and bake for 45-50 minutes. Ready cake can be sprinkled with powdered sugar.

  • The dough should be exactly the consistency of thick sour cream, if it is liquid feel free to add flour, if it is thick - kefir.
  • Baking powder can be replaced with soda, for this recipe you need 5 g, this is half a teaspoon.

The banana cake recipe has many variations. One of my favorites is the chocolate banana muffin. Here, the combination of products gives a sweet and very festive taste. The cake comes out moist and fluffy. Very tasty warm. I love to cook this delicacy for the New Year holidays.

I bake cupcakes on the weekend and put them on a plate next to the fruit. My family enjoys a piece of chocolate cake after a walk in the fresh air, washing down a chocolate treat with milk or tea.

Ingredients for 5-6 servings:

  • Dark chocolate - 100 g (or bar);
  • Milk chocolate - 50 g (0.5 tiles);
  • Bananas - 3 pcs. (if small);

  12. After 30 minutes, we try with a wooden stick (or toothpick) readiness. If there is batter left on it, let it stand for up to 7 minutes. If there is only melted chocolate on the toothpick, we take it out, our cupcake is ready.

  • Raisins - 50 g (2 tablespoons);

  4. Now, in a large bowl, beat 3 eggs and sugar with a mixer. The mass should become white and airy (this is 3-4 minutes).
  5. Add cooled butter, vanilla, salt and sour cream to the resulting mixture and beat again for 2 minutes, if with a mixer, with a whisk, the procedure will take longer. Our mass should become air again.
  6. Now add raisins and banana puree to it. Bananas need to be peeled and mashed with a fork. Let's stir a little again. Now we only need the uniformity of the ingredients.
  7. It's time to add flour and baking soda or baking powder. Do not forget to sift the flour, and add baking powder or slaked soda to the already sifted flour.
  8. Pour this mixture into our bowl with the workpiece in small portions, 2-3 tablespoons each and stir. Now our dough will get the consistency of a thick pancake dough or like a thick cream.
  9. Leave it to stand for a while, and we will prepare the baking dish ourselves. It should be at room temperature. We grease the bottom with butter and sprinkle flour on top.
  10. Pour the dough into a mold and place in the oven. We bake on the 3rd shelf, at 180 C. After 30–35 minutes, you need to check the degree of readiness, the first test test will be the presence of a golden crust on top, if it is not there, do not open the oven until it appears.
  11. Then pierce the cake with a wooden stick. A dry stick without traces of dough will indicate readiness. If there is dough on a stick, let stand for another seven minutes.
  12. The final moment in cooking will be sprinkling with powdered sugar. You can apply.

Cooking Tips:

  • Be very careful with the oven. Take a hot form only in special oven mitts.
  • Powdered sugar will stick to the cake better if you let it cool for 15 minutes.
  • Make banana puree just before adding it to the dough. It will be brighter.
Lean Banana Cake

In winter, you always start counting calories, because our movement in the cold season is significantly limited. But you still want something sweet. For many sweet teeth, the recipe for a lean banana muffin will be the solution to the problem. Calling him lean would not be entirely correct. But there is a considerable restriction in the number of calories compared to a regular cupcake, and it is also a healthy meal.

The taste of such a lean banana cake will differ from the traditional one, but it has its own unique notes and many will like it. You will want to cook it not only for fasting.

Ingredients:

  • vegetable oil - 40 ml (3 tablespoons);
  • sugar - 100 g (0.5 cup);
  • water - 50 ml (1/4 cup);
  • bananas (net weight) - 190 g (1.5-2 pcs.)
  • whole grain flour - 80 g (0.5 cup)
  • flour of the highest grade - 80 g (0.5 cup);
  • baking powder - 1.5 tsp. or 0.5 l of soda;
  • cinnamon - on the tip of a knife;
  • dried apricots, nuts, seeds (optional or all together) - 0.5 cups.

Cooking method:

  1. First, turn on the oven, and while it heats up, prepare the dough. We also need to rinse and chop the dried apricots and raisins if we are going to use them. It is very good after washing them to pour boiling water over them and let them stand for 15 minutes.
  2. Peel bananas and mash in a bowl with a fork, add sugar, soda and cinnamon to them and beat until foamy. Now let's add water and oil. And mix well again.
  3. Now mix both types of flour and gradually add to the mixture with a spoon.
  4. Now let's combine the dough with seeds and dried apricots, nuts (everything that is). And mix again. We get the dough thick, like a cream with nuts.
  5. It is better to line the form with baking paper, but you can also grease it with vegetable oil.
  6. Put in preheated oven and bake for 40 minutes.
  7. We check readiness when a golden crust appears on top, but not earlier than after 35 minutes. If the toothpick is free of dough, the cake is ready. If there is dough on the stick, then let it stand for another 10 minutes. But you can also do this: turn off the oven and leave the cake in it until it cools completely.
  8. You can sprinkle cinnamon sugar on top for decoration.

Cooking Tips:

  • If you bake a cake with different varieties of seeds or with different varieties of nuts, then every time you can get a new dish.
  • For the filling, you can use dried apricots, raisins and prunes. It is better to steam them, and then dry them well and only then cut them into small pieces.
