Pectin is not only an integral part of fruits and some fruits. This substance is an important component of a healthy diet and has many beneficial properties that surprise those who do not yet know about the features of this herbal component.

Benefit

Pectin is a purified polysaccharide. It is obtained in the process of extraction from citrus fruits and apples. Due to its thickening, stabilizing, gelling and clarifying properties, pectin is a food additive labeled as E440. In plant products, this component is also found in various root crops and vegetables.

This substance is used to prepare various foods: it is added to desserts, sweets, jellies, ketchups, marshmallows, mayonnaises, canned food and dairy products.

Among the useful properties of pectin, its ability to quickly normalize metabolism is distinguished. Also, this component maintains an optimal level of cholesterol in the blood, improves blood circulation and intestinal motility.

One of the most important properties of this substance is its ability to remove harmful substances (toxins, radionuclides, pesticides). It is not surprising that he is called an orderly for living organisms. It perfectly heals the cells of the body, has an indirect effect on the rejuvenation process.

Due to its valuable features, pectin is often used to make medicines. Also, this substance has enveloping and binding properties. And this is especially important for the gastrointestinal mucosa. In the case of the development of peptic ulcers, this component has an analgesic and anti-inflammatory effect.

Pectin must be consumed by people who live in contaminated areas (the daily norm of this substance is approx. 15 grams).

Another valuable feature is the presence of a huge amount of dietary fiber in it (about 76 g or 370% of the daily value per 100 grams). Given the low calorie content and valuable properties, pectin can be safely called a dietary food product.

Pectin provides a huge benefit to pregnant women: this component helps to normalize stools and is an effective prevention of constipation.

Also, pectin is useful for weight loss. Due to the cleansing properties of this substance, it is often added to the dietary diet. It also promotes the removal of harmful carbohydrates and prevents these substances from being absorbed into the blood. Not surprisingly, this component is popular among those who want to get rid of ancient fat deposits. It is pectin that is able to free the body from fat, which the body has accumulated over the years. According to nutritionists, daily consumption of about 20-25 grams of apple pectin will help rid the body of 300 grams of fat per day!

Harm

If you use pectin in excess of the norm, then you can get acquainted with the harmful features of this substance.

If you add it to food excessively, you can reduce the level of absorption of minerals. Fermentation in the intestines may also begin, which causes flatulence and low digestibility of fats and proteins.

When pectin enters the body as part of natural foods, the body receives only beneficial properties.

The composition of this substance does not include fats and there are no saturated fatty acids. And the level of carbohydrates in this substance is also minimal. In addition, pectin does not contain carcinogens and other harmful substances that can have a destructive effect on the body.

calories

There are 52 kcal per 100 grams of pectin (2.6% of the daily requirement).

The nutritional value

Pectin is a universal substance that is used both in the food and pharmaceutical industries. Its use is not harmful.

In the masses, he received the unspoken name "natural orderly". Consider what it is and what its benefits are.

Pectin - what is this substance?

Pectin is a chemical compound that is formed from galacturonic acid residues. In translation, the word means literally "frozen".

The additive is actively used in medicine, in the pharmaceutical industry in food production. Designated as E440. The polysaccharide absorbs moisture well, and after complete swelling it begins to dissolve.

The main features of pectin include:

  • the ability to keep the shape;
  • gelling;
  • encapsulation;
  • clarification;
  • thickening (thickener);
  • has a moisture-retaining property;
  • is a good sorbent.

For mass use, the polysaccharide is intended in liquid and powder form. It can be found in supermarkets for home use. The substance can serve as a substitute for gelatin.

Pectin is found in many plants, vegetables, fruits and berries. It improves their stability during storage and prevents them from losing moisture.

The substance is mainly extracted from apples and citrus fruits, less often from root crops. Many foreign enterprises are engaged in its production. Citrus polysaccharide is usually lighter than apple.

In the food industry, the substance is used as a thickener. It is added according to GOST and TU to mayonnaise, fillings of confectionery products, marshmallows, marmalade. At home, with his participation, jelly and jams are prepared. In the pharmaceutical industry, it is used for shaping (encapsulating) tablets.

Where to buy pectin? It is sold in pharmacies in powder form.

What is useful?

Pectin is often included in body cleansing medications. It is a good sorbent. When ingested, it absorbs toxins and harmful compounds and removes them from the body.

Useful properties include:

Contraindications

When taking drugs based on pectin in large quantities, the opposite effect may be observed. This does not apply to fruits and vegetables - they contain a small dosage. You also need to moderately consume dietary supplements and industrial products, where its concentration is sufficient.

The main contraindication for taking in a concentrated form is children under 6 years of age. Caution should be used for cholecystitis, pancreatitis and peptic ulcer - during the period of exacerbation, it is not recommended to use pectin (dosage form).

With excessive use, the following side effects are observed:

  • obstruction;
  • reduced absorption of useful components;
  • severe flatulence;
  • fermentation in the intestines.

Note! In its pure form, pectin sorbent is sold in a pharmacy. Detailed rules of use are indicated in the instructions for use. A teaspoon ½ of the substance is mixed in a half-liter container. The resulting solution is cooled and taken twice a day.

Where is it contained?

Pectin is a useful substance that is used in pharmacology, food production, and medicine. It is found in vegetables and fruits, presented in a pure liquid or powder form. It is used to cleanse the body and for weight loss. One of the most popular procedures today is the pectin diet based on fruits and vegetables.

The human body does not always receive only beneficial bacteria, vitamins and minerals. Sometimes with air and junk food you can infect yourself with toxins, microbes and toxins. To avoid this, there is a useful herbal supplement - pectin, which quickly cleanses the body of carcinogenic substances, regulates metabolism, normalizes the functioning of the intestines and gastrointestinal tract, and has a beneficial effect on the liver and pancreas.

Moreover, pectin polysaccharides serve as a good thickener and quickly turn various liquids into jelly (marmalade, jelly, ice cream, yogurt, marshmallows), which both children and adults love so much. Food with such a substance is not only tasty, but also healthy and accessible even to diabetics. Pectin lowers blood sugar and can kill cancer cells. Women use it for natural rejuvenation.

Beneficial features

Pectin is simply a godsend, as it is widely used in the culinary environment and in medicine. It performs the following functions:

  • significantly reduces the percentage of cholesterol in the blood
  • balances the metabolism
  • normalizes peripheral circulation
  • causes intestinal peristalsis to function properly, transforming into a gel-like state, the substance envelops the entire mucous membrane, and thereby protects the digestive system from inflammation
  • cures ulcerative colitis, gastritis

pectin powder

Thanks to such healing properties, pectin can cure many chronic diseases, even food allergies. Treatment takes place without complications and long, painful procedures. A woman can easily remove extra pounds and permanently part with body fat accumulated over many years. The figure becomes slim, beautiful, kilograms disappear before our eyes, the skin becomes alive and silky.

Contraindications and harm

Pectin is practically harmless, it is not for nothing that it can be used as an additive when feeding children. However, there is still a danger.

The first danger is an overdose. For an overdose to occur, a person must consume a huge amount of berries and fruits containing polysaccharides, or go too far with the amount of a biological powdered supplement. In case of an overdose, the following phenomena may occur:

  • severe flatulence, disruption of the colon
  • bloating
  • the process of absorption of beneficial minerals and vitamins by the body is slowed down
  • poor digestibility of protein and fats

The second danger is an allergic reaction and intolerance by the body. Rarely causes asthma.

However, the effects listed above are very rare, on the contrary, pectin should be included in your daily diet. That's why you need to know which ingredients and products contain it the most.

Products containing pectin polysaccharides

pectin in fruit

There is a food supplement E440, but it is best to use pectin in its natural form. Most of the pectin is found in fresh fruits and berries that grow in almost every garden: blackberries, strawberries, currants, raspberries, cranberries, gooseberries, grapes, cherries, pears, quince, apples, peach, cherries, plums, apricots, mountain ash. Imported fruits: orange, tangerine, lime, grapefruit and lemon, mainly this substance is contained in their peel.

There is also a lot of pectin in beets and cabbage, especially if they are used to make cake. The largest concentrate is found in apple, beet and plum peels.

But how to calculate at home whether a fruit really has pectin, and in what quantity? This is pretty easy to do. It is enough to finely chop the fruit or berry, mix a teaspoon of the mass with 1 teaspoon of alcohol, then close the entire contents tightly with a lid and shake the container thoroughly. If after a while the juice turns into a gel-like substance, then the pectin concentrate is high, if several jelly-like pieces float on top, then the concentration is low.

This additive is present in the food industry: jelly products, sauces, sweets, marshmallows, ice cream. Pectin in its pure form can be purchased at any pharmacy.

It is enough for a person to consume 15 grams of pectin per day, but for this you need to eat at least 1.5 kilograms of fruits or berries. This amount allows you to cleanse the body and maintain the necessary balance. People who are overweight, constipated, diabetics and have oncology can increase the daily portion to 25 grams.

This substance, discovered more than two hundred years ago, is in great demand in such industries as: cooking, pharmaceuticals, cosmetology and medicine. This is a kind of thickener, saturated with useful properties.

Potential harm from overuse

Foods on the high peptide list need to be monitored. Despite the huge benefits, sometimes this substance leads to poor health. Basically, pectin causes harm in the case when its intake into the body is excessive. The daily norm for an adult is g. At times exceeding these indicators, a person risks causing such complications:

  1. bloating, increased flatulence as a result of fermentation in the large intestine;
  2. discomfort in the lower abdomen, colic;
  3. violation of the microflora of the digestive tract;
  4. feeling unwell, dizziness;
  5. skin rashes;
  6. problems with absorption of nutrients;
  7. difficulty digesting proteins and fats;
  8. in some cases, intestinal obstruction.

In order for these effects to occur, you actually need to eat a lot of fruits or vegetables. It is unlikely that someone will absorb them in kilograms. As practice shows, such side effects are the result of an overdose of nutritional supplements. Therefore, it is necessary to take any drugs only strictly if there are indications, as well as after consulting a doctor.

Indeed, in this case, the substance is used as a thickener and enters the stomach in a small amount. Another thing is a handful of fresh berries or a ripe fruit. Pectin removes toxins and carcinogens from the body. Pectin reduces the level of sugar and cholesterol in the blood, normalizes the intestinal microflora. Pectin is believed to reduce the risk of cancer.

Pectin is used in the preparation of jams, yogurts, ice cream, cheeses, ketchups and mayonnaise. It is actively used in the manufacture of some dairy products, marmalade and marshmallows. However, the most useful pectin is found in food. Products containing pectin substances are quickly absorbed and normalize bowel function.

A large consumption of foods that contain pectin can harm the body. Since pectin improves digestion, the absorption of vitamins and minerals may be impaired. There may be fermentation in the intestines and bloating. The body will receive less fats and proteins. But in order for the body to be oversaturated with pectin fibers, it is necessary to consume it in large quantities in the form of special supplements.

In this case, intestinal obstruction may occur. Fruits and vegetables contain pectin in small amounts and will not cause any problems. In order for pectin to be well absorbed and not accumulated in the body, it is worth drinking at least 2 liters of water per day. Also, you should not use pectin in the form of special additives without special need.

A large amount of pectin is found in berries and fruits. Among them are rose hips, currants, mountain ash and plums. Pectin fibers are found in apples, beets, watermelons and pineapples. Citrus zest has excellent gelling properties. If we consider sweets, then marshmallows, marshmallows and most oriental sweets have pectin fibers.

In most cases, pectin is obtained from apples and beets. In some cases, sunflower baskets are used. The resulting pectin is used not only in the food industry, but also in the manufacture of medicines. Pectin is widely used in the cosmetic industry in the form of stabilizers.

Table containing pectin

Pectin has a positive effect on the body and to make up for its deficiency, it is enough to consume fresh fruits and vegetables every day. The use of 25 grams of pectin daily allows you to lose weight and cleanse the body of toxins. With a pronounced deficiency of pectin, you can use special additives. Beets, apples, peaches, oranges, and cabbage are high in pectin, so Chastnosti.com is advised to include them in your diet.

    Pectin

    Pectin or pectin is a gluing substance, a polysaccharide formed from galacturonic acid residues and present in most higher plants - fruits, vegetables, root crops and some types of algae. Being a structural element of tissues, pectins help maintain turgor, increase plant resistance to drought and long-term storage.

    Pectin, as a substance, was isolated 200 years ago from fruit juice by the French chemist Henri Braconnot. The first factories for the mass production of pectin were built in the 30s of the twentieth century.

    The use of pectin

    Pectin is widely used in the food and pharmaceutical industries. In medicine, pectin is used to make physiologically active substances that have beneficial properties for human health. In addition, the structure-forming properties of pectin make it possible to use it as a drug encapsulating agent.

    Pectin substances on an industrial scale are obtained from citrus and apple pomace, sunflower baskets and sugar beet pulp. In the food industry, pectin is registered as an additive called E440 and is used as a thickener for the production of fillings for sweets, jelly, marmalade, marshmallows, ice cream, juice drinks.

    There are two forms of pectin obtained industrially: liquid and powder. The order of mixing products during their preparation depends on the form of the substance: liquid pectin is added to a hot, freshly cooked mass, powdered pectin is mixed with cold juice or fruit. With the help of packaged pectin, you can make jellies and marmalades from berries and fruits.

    Useful properties of pectin

    Experts call pectin the natural "orderly" of our body, since this substance has the ability to remove poisons and harmful substances from tissues: pesticides, heavy metal ions, radioactive elements, without violating the natural bacteriological balance of the body.

    The benefits of pectin are due to the effect of the substance on the body's metabolism: it stabilizes redox processes, improves peripheral circulation, intestinal motility, and also lowers blood cholesterol levels.

    Pectin is practically not absorbed by the digestive system of the body, being, in fact, soluble fiber. Passing along with other products through the intestines, pectin absorbs harmful substances and cholesterol, which are excreted from the body along with it. Pectin also has the ability to bind ions of heavy and radioactive metals, due to which it is included in the diet of people who come into contact with heavy metals or are in a polluted environment.

    The benefit of pectin also lies in its ability to improve the intestinal microflora, to have a moderate anti-inflammatory and enveloping effect on the gastric mucosa in case of ulcerative lesions, to form optimal conditions for microbiocenosis - the process of reproduction of microbes useful for the body.

    All of the above properties of pectin allow us to recommend this substance as a component of the daily diet of every person.

    The daily intake of pectin, which significantly reduces blood cholesterol levels, is 15 grams, however, pectin supplements should be preferred to eating ordinary fruits and berries.

    pectin in foods

    Sources of pectin are apples, bananas, oranges, grapefruits, nectarines, pears, peaches, dates, blueberries, plums, figs. There is less pectin in melons, pineapples, cherries, blueberries, strawberries, raspberries, green peas.

    Sweets should not be considered as a source of pectin, because in order to get an amount of a substance similar to the content of pectin in foods, you need to eat about 7 packs of marmalade.

    Pectin for weight loss

    The cleansing properties of pectin allow it to be used as a component of a weight loss diet. A person who eats the recommended dose of pectin per day, which corresponds to about 500 g of fruits and vegetables daily, needs less food to get rid of hunger. The benefits of pectin are based on its ability to bind "bad" carbohydrates, preventing them from being completely absorbed from the digestive tract.

    Pectin is very effective for weight loss in the presence of "stagnant" fat: when weight has been gained for many years. Natural fiber delicately cleanses the body of cholesterol, toxins and toxins, allowing not only to cope with fat deposits, but also to improve the body. Nutritionists are sure: the use of 25 g of apple pectin will allow you to get rid of 300 grams of excess weight per day.

    An example of a pectin diet that will allow you to get rid of 3-4 kg in 1 week:

    • 1 day. For breakfast, a salad of three grated apples with walnuts, seasoned with lemon juice, is eaten. For lunch - a salad of one boiled egg and one apple, mixed with green onions and parsley. For dinner - five apples;
    • Day 2 Breakfast - a salad of three apples plus 100 grams of boiled rice. Lunch - Three boiled apples with lemon juice, 100 grams of boiled rice without salt. Dinnergram of boiled rice without salt;
    • Day 3 Breakfast - a salad of three grated apples, 100 grams of low-fat cottage cheese without sugar. Lunch - a salad of three apples with two walnuts, seasoned with two tablespoons of honey. Dinnergram of cottage cheese;
    • Day 4 Salad of one apple and three carrots. Lunch - a salad of one apple, three carrots with lemon juice and 1 teaspoon of honey. Dinner - four baked apples;
    • Day 5 Salad of 1 grated beetroot and 1 carrot. Lunch - 3 tablespoons of oatmeal, two boiled eggs, one boiled beetroot. Dinner - carrots mixed with 1 teaspoon of honey;
    • Day 6 Repeats the menu of the first day of the diet;
    • Day 7 Repeats the menu of the second day of the diet.

    The use of pectin for weight loss eliminates the use of alcohol, coffee and smoking. The pectin diet should be accompanied by a plentiful drink of pure water, green tea or herbal decoctions without sugar.

    Apple diet is indicated for people suffering from diseases of the gastrointestinal tract, liver and gallbladder. Despite the benefits of pectin for diseases of the gastrointestinal tract of varying severity, for chronic diseases (gastritis, enterocolitis, stomach ulcers), it is recommended to boil or bake the entire daily norm of apples in an oven.

    Contraindications

    The excessive use of pectin as dietary supplements (it is quite difficult to get an overdose of a substance from natural sources) can lead to a decrease in the absorption of minerals (magnesium, calcium, zinc, iron), digestibility of fats and proteins, flatulence and fermentation in the colon.

  • Pectin - what is it? The answer to this question worries many, so we will immediately begin the article with a definition. Pectin is a polysaccharide that is obtained from citrus fruits and fruits. It was discovered relatively recently, about two centuries ago by Professor A. Braconno from plum juice.

    Having studied all its properties and qualities, pectin was called "the orderly of the human body." Once inside, it absorbs harmful substances and removes them, which allows the internal organs to work better.

    It is of plant origin and is found in many fruits. Pectin is classified as a soluble dietary fiber. It is familiar to many as a food additive E 440. Now it is widely used in the pharmaceutical and food industries, due to its main property - gelling and the ability to create a product structure.

    Outwardly, the substance looks like a fine-grained powder of light beige or brown color and is odorless. Supplements derived from citrus fruits are lighter in color than apple supplements.

    Pectins, getting into the water, absorb it like a sponge, gradually increasing in volume. And only after that the process of dissolution takes place.

    Types of pectin and its calorie content

    Pectin is considered a low-calorie product, because its indicator is 52 kcal / 100 g. There are practically no proteins in it, and no fat at all, it consists mainly of carbohydrates. The polysaccharide is not absorbed in the body, but only removes harmful substances.

    All types of pectins are divided into three groups:

    HM - high methoxyl pectins. The most popular and widely used. They make up 70% of the total market volume, they are used for the production of various confectionery products (marshmallow, marmalade, jams, etc.)

    LM - low methoxyl pectins. Their manufacturing process is more complicated, so they are more expensive. Used for products with the addition of "bio".

    LMA - amidated pectins. They undergo additional processing during manufacture, which change their functional properties. More often, such substances are present in the formulations of low-calorie jams and in fillings for yogurt or jam.

    In industry and at home, this substance is used in two forms: powder and liquid extract. They are not interchangeable and each of them is used in its own way. The powder is dissolved in juice or mixed with fruit, and the liquid extract is added only to hot foods. In stores, pectin can often be bought in bags of powder.

    The benefits and harms of pectin

    Like any product, pectin can bring both benefit and harm. From a medical point of view, the following advantages of using this substance can be noted:

    • improving the metabolic rate in the body;
    • lowering the level of cholesterol in the blood;
    • improvement in the functioning of the circulatory system;
    • normalization in the work of the gastrointestinal tract (anti-inflammatory and analgesic effect);
    • removal of heavy metals, toxins and other harmful substances from the body;
    • reducing the risk of heart disease and cancer;
    • normalization of the intestinal microflora;
    • participates in the process of accelerating the breakdown of fats, which leads to weight loss.

    Taking pectins in excess of the norm is also harmful. This can lead to the following consequences:

    • increased fermentation process and excessive flatulence in the intestines;
    • malabsorption of substances such as: zinc, magnesium, iron and calcium;
    • the appearance of constipation;
    • pain in the intestinal area;
    • violation of the absorption of proteins and fats.

    An overdose of pectin can occur only with the additional intake of biologically active additives. In its natural form, as part of fresh fruits and vegetables, this polysaccharide will not bring harm. People who constantly consume pectin have healthy, supple, clean skin.

    Foods high in pectin

    The recommended intake of pectin is 25 g per day. It is better to consume it in its natural form. Then it will be better absorbed by the body and bring only benefits. Record holders for the content of this useful polysaccharide: apples and oranges. In their fiber, the content of this substance reaches almost 2%.

    There are other equally healthy fruits that must be included in the diet of a person who cares about their health, these are:

    • lemon, grapefruit, lime;
    • banana;
    • pear;
    • melon;
    • quince;
    • carrot;
    • persimmon, mango;
    • blueberries, strawberries and cherries;
    • apricots;
    • fresh pineapples;
    • plum berries;
    • dates and figs.

    It is difficult to consume the daily rate in its natural form, for this you need to eat almost a kilogram of fresh fruits or berries. But even with a regular intake of at least 15 grams, a person will feel a significant improvement in his condition. It is very useful to drink fresh juices, while it is recommended to use them together with the pulp. In order not to lose useful pectins.
