Cucumbers cooked according to the classic recipe in tomato sauce are good at room temperature. This snack has a mild flavor that almost everyone likes.

Cucumbers in tomato sauce - a simple recipe without sterilization

Composition (per 4.5 l):

  • cucumbers - 5 kg;
  • water - 0.5 l;
  • tomato paste - 0.5 l;
  • table vinegar (9 percent) - 100 ml;
  • sugar - 100 g;
  • salt - 50 g;
  • garlic - 3 heads;
  • bay leaf - 6-9 pieces;
  • cloves - 6–9 pcs.;
  • parsley - 6-9 branches.

Cooking method:

  • Wash the cucumbers, cut off their tips, cover with cold water and leave for 3-4 hours.
  • Drain the water, rinse the cucumbers, let the water drain. If the fruits of cucumbers are large, cut them into several parts.
  • Sterilize jars. At the bottom of each place a sprig of parsley, a bay leaf and a clove.
  • Peel the garlic and arrange it in jars.
  • Fill jars with cucumbers, trying to stack them as tightly as possible.
  • Boil water and pour cucumbers, cover with lids and leave for a quarter of an hour.
  • Through a special plastic lid with holes and a spout, drain the water into the pan.
  • Bring the drained water to a boil, refill the cucumber jars with it, and let it sit for 15 minutes.
  • Pour the water back into the pan, measure its amount. In the recipe, the amount of tomato paste and other ingredients is indicated on the basis that 2 liters of marinade will be required. If it turns out that it needs less or more, then the amount of ingredients will need to be proportionally changed.
  • Make a marinade with tomato paste, sugar, salt, vinegar and water. Water can be taken clean or drained from jars of cucumbers. Bring the marinade to a boil and simmer for 15 minutes, then pour over the cucumbers.
  • Roll up the jars, turn over and wrap until cool. After the jars have cooled, put them away for winter storage in the pantry.

Despite the lack of sterilization, an appetizer prepared according to a simple recipe keeps very well under normal conditions. It turns out spicy and fragrant, with a pleasant sourness.

Cucumbers in tomato sauce with onions and garlic

Composition (per 4.5 l):

  • cucumbers - 5 kg;
  • tomato sauce (preferably "Krasnodar") - 0.5 l;
  • onion - 0.5 kg;
  • garlic - 3 heads;
  • vegetable oil - 150 ml;
  • sugar - 100 g;
  • salt - 50 g;
  • table vinegar (9 percent) - 100 ml;
  • water - 0.25 l.

Cooking method:

  • Rinse the soaked cucumbers and cut into semicircles about 2–3 cm thick. Place in a saucepan.
  • Mix sauce with water and vinegar.
  • Peel the onion and garlic, run them through a meat grinder and add to the tomato mixture.
  • Put salt, sugar there, stir.
  • Pour in the oil and stir again.
  • Pour the resulting mass of cucumbers and put the pan on the fire.
  • Simmer the appetizer over low heat until the cucumbers change color.
  • Arrange in jars and, having covered with lids, sterilize them for 10-15 minutes.
  • Roll up the banks. Leave to cool under the covers upside down. After cooling, store in any place convenient for you - the snack is great at any temperature.

This appetizer recipe is very popular. It turns out moderately sharp. Before serving, it is enough to put it in a salad bowl.

Spicy cucumbers in tomato sauce

Composition (per 4.5 l):

  • cucumbers - 5 kg;
  • tomato paste - 100 g;
  • water - 100 ml;
  • vegetable oil - 150 ml;
  • sugar - 100 g;
  • salt - 50 g;
  • garlic - 0.2 kg;
  • table vinegar (9 percent) - 100 ml;
  • hot paprika - 5 g;
  • ground black pepper - 5 g.

Cooking method:

  • Cut the prepared cucumbers into columns about 3 cm high, put them in a thick-walled pan.
  • Mix oil, salt, sugar, paprika and black pepper, tomato paste diluted in half with water. Pour the cucumbers with the resulting mixture and put on low heat.
  • After the sauce boils, simmer the cucumbers in it for 15 minutes.
  • Add garlic, passed through a press, and vinegar, mix.
  • Keep the cucumbers on fire for a couple more minutes, then turn off the stove.
  • With a fork, arrange the cucumbers in pre-sterilized jars. Top with the remaining sauce in the saucepan. Cover with clean lids.
  • Sterilize snack jars in a pot of water for 20-30 minutes, depending on the size of the jars.
  • After rolling up the jars, turn them over, cover with a blanket and leave it under it until it cools. Take away for the winter.
