  1. Cover rice with water and boil on the mode of your multicooker designed for cereals, 25 minutes.

Video: how to cook funeral rice kutya

It is very important to know how to cook and eat kutya according to the Orthodox custom. Having learned the tricks of preparing funeral and Christmas kutya, you can commemorate the dead in peace, as well as celebrate Christmas Eve correctly.

Step 1: prepare the raisins.

According to Orthodox customs, fruits that are added to kutia are associated with heavenly fruits that God has given to all mankind. In this dish, you can add not only raisins, but also dried fruits, such as dried apricots, prunes, and also poppy seeds, if desired. So, put the raisins in a small saucepan, fill it with plain water and leave for 20-30 minutes. Then rinse it under running water. Pour into a bowl with dried fruit. 200 milliliters purified water and boil it over medium heat 5 minutes. If you use dried apricots or prunes, after cooking, cut them on a cutting board with a knife into small pieces.

Step 2: prepare the sweet ingredient.

In history, memorial dinners symbolize the gathering of the disciples of Christ, who were glad for the Resurrection of their mentor and waited every time at the table for his appearance. Therefore, in early Christian societies, by holding joint meals, they expressed love for each other and honored the dead, telling stories about them and remembering pleasant moments in their lives. And when the Risen Christ appeared to his disciples, he ate honey. Therefore, since ancient times, honey has been put on a funeral dinner or added to other dishes so that the deceased can get enough of heavenly sweetness. In order for this ingredient to be well absorbed into the rice, and the kutya turned out to be sweet, it is necessary to melt it a little. So, put honey with a spoon in a small saucepan and, stirring constantly, heat it over medium heat literally 1-2 minutes. We control the time ourselves, since honey can be candied, and because of this, it will take a little longer to tinker with it. Instead of honey, you can add another sweet component to kutya - sugar. To do this, simply dissolve it in a small amount of hot water, using an ordinary cup and a tablespoon.

Step 3: prepare candied fruits.

On a cutting board with a knife, chop the candied fruits to the size that you like best. This ingredient is added to many dishes, such as Easter cake. After all, candied fruits are fruits boiled in syrup with a dense texture. They are very sweet and serve as an excellent substitute for sweets. Therefore, when adding candied fruits to kutia, be careful with sugar so as not to over-sweeten the dish.

Step 4: cook kutya.

First, soak the rice in a medium-sized saucepan with plain water. for 1-2 hours. After - drain the water and fill the rice with already purified water. According to the proportions, 400 milliliters of water are needed per 100 grams of cereal. As for rice, you can take either round-grain or long-grain. We put the pan with cereal on the stove, bring to a boil and after reduce the fire to a minimum. During the cooking process, do not stir the rice with a spoon. Don't worry, the porridge won't burn. On a small fire, this ingredient will "breathe", evaporating the water slowly. From time to time we check Fig. When there is practically no water left in the pan, and the cereal grains become soft, add raisins or other dried fruits, chopped candied fruit, and pour in honey or sugar water. Mix everything well with a spoon and keep on fire 1-2 more minutes.

Step 5: serve funeral kutia.

We shift the finished kutia from the pan with a spoon into a deep plate or bowl. Smooth the surface of the dish with a spoon and, if desired, decorate with raisins and candied fruit. And now cover with a lid from the pan so that the kutya slowly cools down. According to Orthodox traditions, after the kutya is consecrated, a prayer is read at the table and the memorial meal begins with a spoonful of this sweet dish. From this amount of ingredients, kutya is prepared for 25-30 people. Bon appetit!

- - Instead of rice, you can add other cereals to kutya. For example, wheat or barley.

- - Funeral kutya is prepared for a wake on the ninth, fortieth day, for six months, a year, for a memorial day, as well as special dates allotted for this.

- - Kutya after the funeral meal can be put in a cool place or in the refrigerator and commemorate the deceased with it the next day before eating, until the kutya is over.

- - Kutya funeral is placed in the center of the table and, as usual, each person eats one spoonful before the meal. You can also take this dish with a fork or directly with your hands.

- - If for some reason you could not consecrate the kutya in the church, do not be discouraged. You can simply sprinkle the dish with holy water at home or just pray before the memorial meal.

There is Rich Kutya, which is prepared for the holidays.

According to Christian custom, the dead are commemorated on Radonitsa (parents' day). In addition to rich cakes and pies with poppy seeds, an indispensable dish is a funeral kutya made from rice with raisins. Preparing kutya is not difficult, the only thing, in addition to rice, you will need raisins, nuts and honey, because kutya, although funeral, should be rich. Therefore, if there is such an opportunity, then it is advisable to add a few pieces of dried apricots and a spoonful of poppy seeds to the listed list.

Ingredients:

(4-6 servings)

  • 1 cup rice
  • 1/2 cup nut kernels
  • 1/2 cup raisins
  • 5-6 pcs. dried apricots (optional)
  • 1 tbsp poppy (optional)
  • honey or sugar to taste
  • To cook delicious kutya from rice, you must first boil friable rice. Rice can be cooked in different ways. In my opinion, the easiest and most delicious way is to boil rice in plenty of water. To do this, measure out one glass of rice (do not be afraid, there will not be much). You can take long-grain rice, you can round. The former looks prettier, but round rice is richer in flavor.
  • Pour a couple of liters of water into the pan. When the water boils, pour the rice, immediately stir with a spoon so that the rice grains do not stick to each other and to the bottom of the pan. It is not necessary to pour rice with cold water, since rice begins to release starch in cold water, this is good for slurry porridge, but not for rice kohl. You can add a bit of salt if you like, but you don't really need it.
  • Cook rice for 15 minutes over medium heat. It is important not to miss the moment when the rice is almost ready, when the grain is already soft, it lacks literally a minute before it is fully cooked.
  • Throw the rice in a colander. You can not wash it, but if suddenly the rice is slightly overcooked, then immediately rinse it with cold water to interrupt its further cooking.
  • While the rice is cooling, prepare the rest of the ingredients for kutya. So, we measure out half a glass of raisins, half a glass of nuts, in this case walnut kernels, take dried apricots.
  • We slightly chop the nuts, but raisins and dried apricots are steamed with boiling water. We stand for 5-10 minutes, depending on the degree of their dryness, then drain the water. It is not necessary to soak raisins and dried apricots for a long time, even if the raisins are not completely swollen, then they will still pick up moisture from rice and honey.
  • We cut the dried apricots into pieces.
  • We steam poppy seeds with boiling water or hot milk. When the poppy swells, strain, and then grind in a mortar until poppy milk appears. Of course, fiddling with one spoonful of poppy seeds is not very rational, but if you bake pies or poppy seed roll on Radonitsa, then you can take a spoonful of poppy seeds from there.
  • Mix the cooled rice, nuts, raisins and dried apricots. Add honey to taste, approximately 3-4 tablespoons (depending on the sweetness of honey).
  • Add poppy seeds, mix everything. That's basically all, rice kutya is almost ready, it remains to let it brew. As you can see, the kutya recipe is quite simple, while the rice is obtained in separate grains, while the kutya itself is juicy, fragrant and very tasty.
  • Another good thing about this recipe is that you can change the set of ingredients at your discretion. For example, instead of walnuts, use cashew nuts, add not only dried apricots, but also other candied fruits, put sesame instead of or together with poppy seeds. But, I must say, the classic version is rice kutya with nuts, raisins and poppy seeds.

  • Water for cooking rice should be taken a little less than in the recipe. Then it won't stick for sure.
  • Honey. Take liquid honey. If it is frozen, heat it in a water bath. But just do not boil otherwise it will lose all its useful properties.
  • If you are allergic to honey, you can replace it with sugar. This also applies to the case when the hostess did not have any honey at the moment, and kutya needs to be prepared urgently.
