One of the recipes for a popular delicious cake called "Broken Glass" or "Shards". Its main component is jelly of different colors, which is prepared separately. The rest of the ingredients for the cake vary, depending on preference: it can be sour cream, cream, milk. Here, many housewives add pieces of biscuit or cookies for a change. I like the option of making a cake with cream that is pre-whipped. They give the cake an extraordinary lightness and are very tasty combined with simple jelly. Absolutely any convenient dish is suitable as a form for a cake, whether it is a plastic bowl, a metal pan or glass deep dishes. I used a cake tin.

Ingredients:

  • 500 ml of heavy cream;
  • 0.5 st. Sahara;
  • 25-30 g of gelatin;
  • 4 bags of jelly in different colors.

Recipe for jelly cake "Broken glass"

1. First, let's prepare a multi-colored jelly. We take 4 identical glasses and pour a bag into each.

2. Pour hot water (100 degrees) and stir with a fork until completely dissolved. Or do as directed on the jelly packet. Just do not change the amount of water at the same time, so that the jelly turns out to be more dense. Place in the refrigerator until completely chilled, at least an hour.

3. Now you need to prepare the gelatin for the creamy base. To do this, pour 1 tbsp into a glass. with a slide of gelatin and pour cold boiled water. Let it swell for 30 minutes. We take a break for 15 minutes.

4. We check the multi-colored jelly for readiness. If it is ready, we immerse the glasses in hot water and wait until the jelly begins to lag behind the walls of the glass. You need to immerse in hot water gradually (put it in and take it out) and very carefully so that the glass does not crack from a sharp temperature drop. This is especially true for glasses with thin walls. Remove the jelly by inverting the glass onto a plate. Jelly cut into cubes. You can put it in the refrigerator for another 5 minutes so that it does not melt while the cream is being prepared.

5. Now let's start making cream. Beat them with sugar until lightly thickened.

6. We heat the gelatin in a water bath (do not bring to a boil in any case) or act according to the instructions on the package. Pour into the cream in a thin stream, stirring immediately.

7. If the cream is cold, then the gelatin will begin to set immediately. Therefore, you need to act quickly. Pour the cream and multi-colored gelatin into the mold, mix quickly. We send it to the refrigerator until completely solidified.

8. It remains only to remove the finished jelly cake. To do this, moisten a towel with hot water and wipe the form, warming it from the outside. That's all. Delicate and light cake with Broken Glass jelly is ready! Bon appetit!

Today I will be talking about jelly cake "Broken glass"! I am periodically accused of feeding people not the healthiest food. Yes, I’m like that - I buy store-bought mayonnaise, and give sweets to children, and I can even boil sausages when I’m too lazy to cook. This culinary blog is not about a healthy lifestyle, it's about how you can, without too much bother, cook varied, tasty and - I'm not afraid of this word - mostly healthy food for a rather big family every day. Breakfasts, lunches and dinners without much hassle - this is the main leitmotif of the site, so I am not at all touched by the thought that purchased jelly is terrible and fefefe. Nothing terrible will happen if once a month my children eat a set of flavors and colors in a sweet form. Just as nothing bad will happen if they eat it twice a month or every week. I think that I quite weightily dilute their diet with fresh vegetables, fruits, salads and cereals, soups and cutlets - so much that you can not suffer from an extra portion of jelly cake. All in all. I already gave - version on sour cream. Recently, we have been preparing the same cake on yogurt - and it will turn out, in my opinion, more interesting and tastier: yogurt gives the case lightness, airiness. Sour cream is denser and more solid, it is felt as a leading note, but yogurt very delicately gives way to fruit jelly, remaining a necessary but secondary performer. In short, it's better to try - and both options, to feel the difference.

Life is too short, so start with dessert.
Barbara Streisand

Broken glass cake recipe in my performance it is built on store-bought jelly and store-bought yogurt, however, if these products are taboo for you, you can do it all yourself at home: mix home-made compotes with gelatin, put milk with sourdough in a warm place, get the right "clean" products without E-shek, dyes, stabilizers and preservatives, and already collect them in a jelly cake. Everything is in your hands and the question is how free and accessible they are for such games.

Broken glass cake recipe on yogurt

Ingredients:

3 packs of jelly of different colors;

800 ml drinking yogurt;

30 g gelatin.

Instruction

  • We boil water. Pour each jelly into a separate bowl - wide, not deep. Pour hot water - usually packs of jelly are designed for 400 ml of boiling water (at least, all our manufacturers do just that), I add 350 ml so that the jelly is a little more dense and the cake keeps its shape better.
  • We clean in a cold place for 5-6 hours. It’s more convenient for me to pour the jelly in the morning, and do the rest of the manipulations before going to bed, then the Broken Glass cake is just ready for breakfast. Sometimes the algorithm is just different - I pour jelly in the evening, collect the cake in the morning, and enjoy it the next evening.
  • Pour the gelatin into a small saucepan, fill it with water so as to only moisten the dry mass, cover it with liquid (up to 100 ml). Leave until the gelatin swells - for 5-10 minutes.
  • We warm the gelatin over minimal heat - dissolve until smooth, but in no case boil.
  • Pour room temperature yogurt into a large bowl. We introduce gelatin in a thin stream, while quickly working with a mixer so that the gelatin is evenly distributed over the yogurt. The more even, the better.
  • We cut the frozen jelly directly in bowls into cubes of arbitrary size and - often - of arbitrary shape.
  • We shift into a bowl with yogurt - a spoon, not particularly caring about the safety of the cubes.
  • We mix.
  • We cover the bowl with cling film or a bag, put it in a cold place for at least 5 hours.
  • By the time of serving, we collect a full sink of hot water. For 5-10 seconds, lower the bowl of cake into hot water, making sure that water does not get into the bowl.
  • Cover the bowl with a large plate and invert the cake onto a plate.
  • Cut into slices and serve.
  • Bon appetit!

A delicious dessert that does not require any baking or special tricks in cooking. Broken glass cake worthy of any festive table - whether it's a dinner party or a quiet romantic dinner! Such a jelly cake can be prepared in completely different ways: with the addition of biscuit, cookies, or simply pour the cake mass into a mold and let it thicken. Instead of sour cream, you can use the most delicious yogurt, with or without fillers.
You can add various fillers to it: nuts, candied fruit, pieces of fresh or canned fruit, multi-colored jelly (made by yourself) or marmalade.

Cake "Broken glass" in milk:

Ingredients:

  • gelatin - 20–25 g
  • milk - 250 ml
  • water - 100 ml
  • sugar and vanilla to taste
  • fruits of your choice (you can do without them)

Cooking:

Prepare the jelly according to the instructions on the package, BUT reducing the amount of water to 150-180 ml. Pour the finished jelly into molds, let it harden in the refrigerator. If desired, you can make jelly from homemade compotes (1 incomplete tablespoon of gelatin per 1 cup of compote). When the jelly is ready, proceed to milk jelly.

For milk jelly, dissolve gelatin in 100 ml of water, leave for 10-15 minutes to swell. Boil the milk and cool slightly, add swollen gelatin, sugar and vanillin (to taste) to the milk, mix well. Heat the milk mixture on the stove, BUT DO NOT BOIL, otherwise the milk will curdle. Remove from stove and set aside. If necessary, you can strain.

Prepare a mold for the broken glass cake. Peel and cut fruits. I had one orange and two small kiwis. Don't go overboard with kiwi. Pineapple and kiwi break down gelatin.
Put in a form in layers: fruits and multi-colored jelly. Then pour all the CHILLED milk jelly and put in the refrigerator until completely solidified - at least 4 hours. I put it on overnight.

Before serving, dip the cake pan in hot water for a few seconds, then invert the cake onto a flat dish. Decorate the cake with fruits.

Cake "Broken glass" on sour cream with biscuit:

Ingredients:

  • jelly of different colors - 3 sachets
  • gelatin - 20–25 g
  • sour cream - 500 ml
  • water - 100 ml
  • sugar and vanilla to taste
  • biscuit or any cookie

Cooking:

Prepare jelly. We do everything the same as for a jelly cake with milk. Pour the jelly into molds, put in the refrigerator until completely solidified.

My biscuit was prepared ahead of time. If it is not possible to make a biscuit on your own, you can use any soft cookies.
Cut the cooled biscuit into slices. Set aside one cake (the lowest one) for the cake, cut the other into cubes. Cookies can be simply broken into pieces.

When our multi-colored completely hardens. You can take jelly with sour cream.

Pour gelatin with water, leave to swell, then heat it on the stove, BUT DO NOT BOIL! The gelatin should dissolve. Whisk sour cream with sugar and vanilla. Pour in the cooled gelatin in a thin stream, beating constantly.

The mass almost immediately begins to set, so you need to hurry up with assembling the cake.

We lay out in the form in layers: a layer of sour cream jelly, a layer of multi-colored jelly and pieces of biscuit (or pieces of cookies). Fill out the form to the top.

Put the biscuit cake on top and lightly press down. We put the cake in the refrigerator for several hours, and preferably at night!

Before serving, dip the cake pan in hot water for a few seconds, then invert the cake onto a flat dish.
Cake "Broken glass" on sour cream with biscuit is ready! Bon appetit!!!

Note: if you are preparing a jelly cake with a biscuit, do not use the entire biscuit in the cake, there will be a lot of it.

"Broken glass" I like its spectacular appearance. If you use ready-made biscuit cakes for it (as I do), then it can be classified as a cake without baking. Also, this dessert is very light and absolutely not cloying.

There are quite a few variations of this cake: its shape, the number and order of layers, and the filling differ (since some housewives add pieces of fruit to the cake in addition to colored jelly). But 2 components always remain unchanged: a sour cream-gelatin base and pieces of multi-colored jelly, which, when cut, resemble glass pieces.

To prepare a cake for 8-10 people, you will need the following: Ingredients:
ready-made biscuit cakes - 2 pcs.
gelatin - 1 pack (20 g)
3 packs of colored jelly
sour cream - 500 g
sugar - 100 g

Complexity: average.

Cooking time: it will take several hours to prepare and set the jelly, as well as overnight to set the cake. And the cake itself is “assembled” in about 30 minutes.

According to the instructions on the package, we prepare multi-colored jelly. It is best to take jelly in contrasting colors, so the cake will look brighter. For example, yellow, red and green.

This time I had problems with the selection of jelly. In the store, I found only red (cherry) and orange (apricot). Therefore, I made green jelly myself from tarragon soda and gelatin: 1 glass of drink per 5 g of gelatin.

I also make jelly for this cake using only half the amount of water recommended on the package. For example, if 0.5 liters is indicated, I dilute the powder in only 0.25 liters. Thus, the jelly is denser and much easier to work with.

Gelatin pour 0.5 cups of cold water and let it swell for 30-40 minutes.

On low heat, with constant stirring, heat this solution until all the gelatin is dissolved.

Mix room temperature sour cream with sugar. We also introduce a gelatin solution into it and mix well.

Bowls with ready-made colored jelly are lowered into a container of hot water for 10-15 seconds and overturned on a plate. Cut into large pieces.

Cut 1 biscuit cake into large pieces.

We introduce pieces of jelly and biscuit into a sour cream-gelatin base. Mix carefully.

We spread this mass in a bowl in which the cake will solidify.

Put the cake on top of the mass and press it lightly. This will later be the basis of the cake.

We send the cake to the refrigerator for 8-10 hours.

We lower the bowl with the frozen cake into a container with hot water for 20-30 seconds and turn it over onto the dish in which we will serve it. Here is such a cake in the shape of a hemisphere should turn out. Although the form can be any, to your taste.
