  5. Add a tablespoon of mustard, suneli hops, salt, be sure to add ground black pepper to the minced meat. If you did not add fresh garlic to the frying, add dried garlic directly to the minced meat (a pinch). Try raw minced meat (a pinch with your tongue) for salt and spices. It must be salty enough.
  6. Stir the mince thoroughly. If it seems to you a little soft - watery, you can add a handful (scoop it with your hand) of flour - this will make the minced meat more viscous.
  7. Heat up a clean skillet with vegetable oil. Wet your hands in cold water. Shape into round meatballs and place in the pan. Fry over high heat quickly on all sides (let the whites on the outside of the meatballs curl up and the juice will remain inside the meatballs).
  8. Put the meatballs in a fireproof dish. Can be in a pot with a lid.
  9. Mix tomato paste in a bowl (a delicious Georgian hot sauce or something similar would be even better), sour cream, water. Instead of water, if you can take meat or vegetable broth - it will be even tastier. Salt and season (khlemli-suneli) this mixture.
  10. Pour the mixture over the meatballs, cover (or, if using a refractory dish, cover tightly with foil).
  11. Simmer in the oven until tender for an hour at 180 degrees.
  1. To make the meatballs really tasty, you need to saturate the minced meat with different ingredients so that they together give a unique rich taste. These are greens (parsley, dill and even green onions), and seasonings (ground black pepper, suneli hops) and mustard, which will also contribute to the richness of taste, and necessarily garlic and vegetables - onions with carrots.
  2. If you cook minced meat yourself (scroll through a meat grinder), and from fresh meat that has never been frozen, the meatballs will definitely taste better. Checked.
  3. Don't neglect the greens. It gives juiciness and gives a lot of taste, be sure to add it to minced meatballs. In addition, if there is half a bell pepper or a tomato, cut them into small squares and add to the minced meat. This will also make the taste even more full and interesting. And for a change it won't hurt your meatballs at all. Only I would not recommend using seasonings "bouillon cubes" for meatballs. I think they are harmful and generally give some kind of artificial taste.
  4. Filling (tomato paste + sour cream) can be cooked on vegetable or meat (chicken ...) broth - this will also make the meatballs tastier.
  5. We fry meatballs (as well as fried onions and carrots) also to add richness to the taste. Meatballs need to be fried quickly, over high heat. Our goal is not to bring the meatballs to readiness, but to create a quick golden brown, roll up the whites so that the minced meat cannot release the juice from the meatballs during stewing and they retain their juiciness.
  6. It is also important to put a delicious sauce instead of tomato paste (I already mentioned this). You can even use adjika (but not much and mixed with ordinary tomato paste, because adjika is quite spicy).
  7. And the last. Meatballs are a dish that should be served and tasted hot. Only fresh, still hot, freshly cooked meatballs piping hot will be delicious and truly incomparable.

Perhaps people who take care of their health will make a remark: “Why fry so much? Both onions, carrots and garlic and the meatballs themselves ...? ". I agree, I won't argue with that. This is especially true for older people and for those who have problems with the gastrointestinal tract.

So the first thing we need to do is boil the rice. To do this, fill it in a saucepan with clean water in a ratio of 1: 2, salt and put on medium heat. Once the water comes to a boil, lower the heat to low and simmer until the rice is tender, about 15-18 minutes.

In the meantime, prepare the gravy. In a frying pan, heat half the norm according to the vegetable oil recipe and fry 0.5 diced onion until transparent. Cut the carrots into thin sticks or chop on a coarse grater, add to the onion and fry together until the carrots are soft.
