Today we will boil eggs .... Do you think there is nothing to be able to do here, and everything is elementary? They threw eggs into boiling water, after a certain number of minutes they got it out, and you're done? It is not that simple! Therefore, I will devote an entire post to boiled eggs.

To begin with, I turned to my beloved Harold McGee.

Let's talk about hard boiled eggs.

According to McGee, boiling is not the best way to boil eggs. Turbulent water causes the eggs to spin, leading to cracking of the shell, leakage of protein.

When the temperature at which eggs are boiled greatly exceeds their coagulation temperature, the outer layers of the protein become "rubber". Eggs should be boiled at 80ºC -85ºC. McGee recommends steaming the eggs. If you boil them in water, it will take you 10-15 minutes (depending on the size of the egg and the method of cooking) for hard boiled eggs. After 10 minutes, the protein becomes white and elastic, while the yolk remains slightly moist and crumbly. After 15 minutes, it becomes lighter, drier and granular.

Sometimes the eggs are boiled for many hours to bring out the color and flavor. For example, Chinese tea eggs are boiled until tender, then the shells are slightly cracked, and simmered in a mixture of tea, salt, sugar and spices to produce a marbled and very fragrant elastic protein.

What is a perfectly boiled egg?

A properly boiled egg has a firm yet tender texture. The shell remains intact and is easily peeled off, the yolk is in the center, its taste is delicate and not sulphurous.

To get a good texture and taste, you need not to overcook the egg. Any method that is well below boiling point will help avoid overcooking. After boiling, it is worth lowering the eggs into ice water.

How to fight against cracking of the shell and shells that are not peeled off well?

First of all, boil the eggs at a "low boil". Paradoxically, in order to guarantee a beautifully cleaned egg, you need to use an old egg! This is due to the low pH of the fresh egg protein, which makes the protein adhere more strongly to the shell. A few days after laying the eggs in the refrigerator, the pH rises and the shells peel off more easily. You can add a little baking soda to the water while boiling to make it more alkaline. But it can enhance the sulfuric taste of the eggs.

If you want an "attractive" slicing egg, use good quality fresh eggs and keep them on their sides in the refrigerator. Although, the last rule has not been proven 100% and cannot be fully relied upon.

It happens that a gray-green spot appears on the surface of the yolk of a hard-boiled egg. It is a harmless formation of iron and sulfur (iron sulfide). It forms at the junction of the protein and the yolk, because there the sulfur from the protein comes into contact with the iron from the yolk. The alkaline environment of water and an increase in temperature are conducive to the "leakage" of sulfur atoms from the protein proteins, after which the sulfur reacts with iron on the surface layer of the yolk. The older the eggs, the faster this reaction occurs. High temperature and long cooking also enhance this reaction.

To minimize the "greening" of the yolk, you can use fresh eggs, cooking them as little as possible, and cooling immediately after boiling.

Regarding soft-boiled eggs and in a bag

All the same cooking rules apply to such eggs, only it is necessary to reduce the cooking time depending on the desired result.

Let's look at the terminology used by McGee:

French oeuf à la coque boiled for only 2-3 minutes to get a warm, but semi-liquid protein and yolk. We call such eggs - soft-boiled eggs.

Coddled or “soft-boiled” eggs, boiled for 3-5 minutes to get a slightly hardened outer protein, a semi-liquid inner and a runny warm protein.

If we boil the eggs for 5-6 minutes (mollet eggs (from the French molle,“soft”), then we get a semi-liquid yolk and sufficiently elastic protein to peel a whole egg from the shell.

It seems to me that both options can be attributed to eggs boiled in a bag. Only everyone likes a different degree of cooking. I prefer the second option.

Maybe someone knows how these two methods of cooking are called in Russian? What is the linguistic difference?

From theory to practice

Having studied the theory, I decided to move on to practice. So, McGee advises boiling eggs at 80ºC -85ºC. How to do it? I never figured it out. After all, even if you first bring the water to this temperature, even with very light bubbling, it will still rise to 95ºC in a couple of minutes, or even up to 98 ºC!

I turned to the book Essentials of Professional Cooking. The book gives three options for boiling eggs in the shell.

There are two general rules that apply to all of them. Eggs should be taken out of the refrigerator an hour before cooking. You can warm them to room temperature by putting them in warm water for 5 minutes. Cold eggs can crack from temperature contrast. The exact cooking time depends on the size of the eggs and the temperature.

Option number 1

1. Dip the eggs into the boiling water, and immediately reduce the heat so that the eggs boil slowly, but do not boil.
2. Boil the required time:

- Soft cooked ( soft) 3 to 4 minutes

Medium cooked (medium) 5 to 7 minutes

Hard cooked (hard) 12 to 15 minutes

3. Cool immediately under running cold water. Refrigerate briefly if you want to serve the eggs warm. Hold longer if you are simmering eggs for later.

4. Start cleaning from the blunt end. For easier cleaning, run the eggs under cold water.

Option number 2

1. Place the eggs in a saucepan and cover with cold water.
2. Let the water boil
3. Reduce the heat and cook for the required time:

Soft cooked 1 minute

Medium cooked 3 to 5 minutes

Option number 3 (Only for hard boiled eggs)

Follow all the same steps as in option number 2, but after the water boils, remove the pan from the heat, cover with a lid and let the eggs stand for 20 minutes.

It didn't end there. I decided to conduct an experiment.

I took out 3 eggs from the refrigerator in advance, bought two days ago at the market. According to the seller, at the time of purchase, the eggs were three days old. Weight - about 70 grams, that is, a selected egg. By American standards, this egg is large. I boiled all three eggs hard boiled.

I will make a reservation right away. I cannot give you exact times and temperatures for each egg size.

To do this, I would need to use hundreds of eggs, spend 2 weeks in the kitchen, and burn a lot of electricity. If there is a sponsor, then I'm almost ready.

But I think my findings will help you!

In the first two options, the minimum temperature that I managed to reach was 92 degrees and with almost imperceptible bubbling. In the third option, the temperature of the water at the time of removal from the fire was 95 degrees, and dropped to 70 degrees after 20 minutes. How to cook eggs at 80-85 degrees, I never thought of. Any ideas?

In the first version, I cooked for 12 minutes.

In the second 10 minutes.

In the third, I kept the eggs in hot water for 20 minutes.

The result was the same for all three options. The protein is very tender, elastic, but not rubbery. The yolk is slightly moist in places and crumbly. That is, for a steeper yolk, it was necessary to add a few minutes. Eggs did peel better when I kept them under cold running water longer.

I always add salt to the water when boiling eggs. To keep them from cracking. Sometimes, the shell still burst. Interestingly, neither McGee nor Glisslein recommend adding salt when cooking. They don't have a word about it at all. I turned to Uncle Google.

And, as we remember, salt was put into the water from the very beginning. The question again arises: why is this necessary?

In its natural form, egg white is a viscous liquid, consisting mainly of water (88%) and protein, protein itself (11%). Under normal conditions, a long protein molecule is folded into a ball under the action of internal chemical bonds. Such balls float in water without reacting with each other. This picture changes dramatically with increasing temperature. The higher the temperature, the faster the water molecules move, the more energetically they collide with the balls. In the end, the weak internal bonds of protein coils are torn, and they turn into ribbons. These ribbons chemically bond to each other to form a strong and resilient three-dimensional network. We say: the protein has folded (although, paradoxically, for this, its molecules had to turn around).

Not only high temperature can expand protein molecules. Chemical bonds are electrical in nature, and a change in the number of charged particles around a molecule can cause molecular bonds to break spontaneously. This is what happens when salts and other compounds that give ions are dissolved in water. These charged ions contribute to the rapid formation of the protein network. In other words, protein coagulates faster in salt water. This is the meaning of salting water when boiling eggs: if the shell bursts, the protein will instantly curl up in a crack, sealing it tightly.

It seems that I was mistaken.

I didn't add salt when cooking. Soda on the advice of McGee also did not add. When boiling eggs in three versions, the most severely cracked egg was dipped in boiling water. The shell of the egg left to reach 20 minutes did not burst. And burst a little at the egg, lowered into cold water. I think this is explained by the fact that with gradual heating, there is no sharp temperature drop. In general, I really liked the 3rd option for hard boiled eggs, and I prefer the second one for soft-boiled or bagged eggs.

You can make different patterns on Easter eggs, wrapping them with an elastic band for money, colored threads, cut out blanks, again tying them with threads. You can dip the egg in water, and then roll in rice, or some other cereal, and wrapped in gauze, boil in a coloring solution.
