How to make pancakes with red caviar. Pancakes with caviar - this is a snack! A selection of the best dough recipes and filling options for pancakes with caviar

Pancakes with caviar are doubly representative of Russian national cuisine. Unless, of course, this fish caviar is red or black (and not “foreign, squash”). Red caviar, a gift from Pacific and Atlantic salmon, seems to emphasize the breadth of the Russian soul. In general, pancakes with any fish caviar are a truly Russian treat, generous, bright, rich.

Wikipedia states: “Making pancakes is a special skill that approaches art.”

Caviar, of course, can be any, including artificial, including not only fish. But basically, it will not be a sweet filling, which requires a special approach to serving the dish, its temperature regime and additional ingredients. Let's dwell on the most popular pancakes - with red caviar.

Recipe for pancakes for serving with caviar

Let's make the pancakes first. Here are a couple of secrets to make pancakes spread better (thinner) and turn over more easily:

  • For better spreading and subsequent sticking of pancakes, it is better to dilute milk or kefir with boiled water to the total volume.
  • It is better to warm the liquid a little, just above room temperature, so that the components dissolve and distribute better.

Universal pancake recipe:

  • water (milk, whey, kefir) - 0.5 liters;
  • flour - 2 cups (320 grams);
  • eggs - 3 eggs;
  • vegetable oil 2 tablespoons;
  • sugar - 2 tablespoons;
  • salt - 1 teaspoon
  • soda (baking powder) - 1 tsp.

Secret: for pancakes with caviar, you can add finely chopped dill or parsley to the dough.

6. We bake pancakes in a pan. Should be watched carefully. At that moment, when the pancake is completely warmed up (the batter seems to seize and stop spreading) and the edge begins to turn golden, it's time to turn the pancake over.

  1. It is best to use a special pancake pan and only for baking pancakes.
  2. It must be well warmed up.
  3. To prevent the pancake from sticking, grease the pan with butter or a drop of vegetable oil. To reduce the temperature of an overheated pan, vegetable oil is conveniently applied and rubbed with a cut of half an onion. This is especially true for non-sweet pancakes, as it will give them a slight onion flavor.
  4. Cover the pancakes with a clean kitchen towel or plate to keep them warm.

How beautiful to wrap pancakes with caviar

By itself, the method of stuffing a pancake with caviar is not complicated. We simply put caviar on the unfolded pancake and fold it or on the already rolled pancake (perhaps with some other filling). It is the brightness of the color of red caviar that requires the chef to look for special ways of wrapping and serving pancakes. I will list the most effective of them.

snail

At the beginning, the pancake rolls into a strip, and then rolls tightly from one edge to the other, like a snail. Fastened with a skewer.

Sector or triangle

The pancake simply bends along the middle line of symmetry - in half, a quarter, an octal sector.

envelope

The pancake is bent from four sides to the middle.

tubule

The tube may be open or closed. Then it can be cut into "stumps" or "rolls" at any angle.

Pouch

The edges gathered from four sides are tied together with something from above.

Pancakes for buffet

For a buffet table, it is better to use this method so that the caviar does not fall off the fork. Here, serving pancakes with a cut tube is most suitable, when the pieces turn out to be small and convenient for piercing. The envelope method is also suitable. It should also be borne in mind that the buffet table should be spectacular. And “snails” with caviar on top will look very nice on it. But you can also be original by serving pancakes with caviar in several layers, cutting a layered pancake cake into pieces in the form of canapes.

Pancakes with caviar and sour cream

If you have already made pancakes with caviar, then most likely you are convinced that the friability of caviar is an obstacle to the uniform distribution of the filling. To overcome this irritating property, it will be convenient to use it as part of the filling with other ingredients, for example, with sour cream.

You need to take thick sour cream, add red caviar to it and carefully evenly move it. You can also add finely chopped dill, parsley or a young onion. You don't need to add salt, because the caviar is already salty. This is the filling we use for our pancakes. We turn them in any way you like, which are given above.

Pancakes with caviar and cream cheese

You will get savory and tender pancakes if you take cream cheese instead of sour cream. Cheese can be anything from Philadelphia to mascarpone. Almette and Hochland will do as well.

Curd cream cheese with greens seems to be specially created for pancakes with caviar.

Pancake tubes and rolls are also more suitable here. But, since the cheese is still denser than sour cream, you should not mix it with caviar, this is not so easy to do. The cheese is usually first spread evenly over the surface of the pancake. Then the pancake is folded into a tube, but not very tight, so that this tube can be crushed into a strip. And the strip already obtained from the tube is rolled up in the form of “snails”, “stumps” or “barrels”, and a solid portion of red caviar is placed on top of the barrel, so to speak - with all my heart.

Before cutting, pancakes stuffed with caviar with cheese or sour cream should be cooled in the refrigerator for at least 20 minutes.

With caviar and red fish

Can you make it even tastier? How else can you! To do this, you need to give even more toppings! For example, the meat of red fish - salmon, pink salmon, sockeye salmon, trout, chum salmon. So, you need to take lightly salted red fish fillet, thinly slice and spread evenly over the pancake. But before that, do not forget to spread the pancake with cream cheese! Then it must be rolled up, and a savory portion of red caviar should be laid on top.

Here's what happens in the end.

pancake baskets

Make pancakes with cream and fry them until crispy so they hold their shape better. For the test, beat 4 eggs, 1 tsp. salt and 55 g of powdered sugar, add 1 cup of milk and beat again. Mix 230 g of sifted flour with the egg mixture and rub thoroughly so that there are no lumps. Pour in ½ liter of heavy cream 33% and 1 tbsp. l. vegetable oil.

Fry the pancakes, cover upside-down ovenproof glasses or rigid muffin pans, and then place in the oven, microwave, or airfryer to dry and harden. Turn the finished baskets over and fill them with any filling - meat with vegetables, pieces of fish, vinaigrette, Russian salad, mushroom appetizer, curd mass, vegetables or fruits. The filling should not be too juicy, otherwise the pancakes will get wet and the baskets will fall apart. If you are filling a pancake basket with fruit, do so just before serving.

"Scrambled eggs" from pancakes

For these pancakes, the dough is usually made with sour cream to make them more dense and fluffy. However, according to other recipes, pancakes should be thin and lacy, so the dish turns out to be very tender. Mix 250 g sour cream with ½ tsp. salt, stir in the yolks of 2 eggs and beat the mass well. Add 160 g of flour, mix well, carefully fold in the beaten egg whites and bake pancakes in a hot pan.

When the slide of pancakes is ready, you can do the “scrambled eggs”. Put the pancake on a greased pan, warm it up slightly and break the egg in the middle, trying to keep the yolk intact. As soon as the egg "grabs", bend the edges of the pancake so that you get a square. Pancake fried eggs are ready!

pancake rolls

Pancake rolls can be prepared with meat, fish, vegetable or sweet fillings. The main thing is that it should be dense enough, otherwise it will fall out of the rolls. Cheese toppings, pates, caviar, lightly salted red fish fillets, cottage cheese, chocolate or peanut butter are ideal. Many people like pancake rolls, which are prepared in the form of rolls with red fish, cucumber and soft cheese.

Put the stuffing on the pancake, flatten and roll the pancake into a tube. Rolls can be cut into pieces or served whole, garnished with herbs and vegetables (if the filling is not sweet) or fruits, nuts, cream.

You can wrap the rolls in a more reliable way. Put the stuffing along the edge of the pancake on one side, then cover it with the free edge of the pancake, tuck the side parts slightly towards the middle and twist the pancake into a tube. The filling in such a roll will be completely safe!

"Snails" from pancakes

This is a very beautiful serving of pancakes, especially if you decorate them with red caviar. For pancake "snails" it is better to bake real royal pancakes, which in the old days were prepared from the best products. Put a dough of 30 g of fresh yeast, 2 cups of warm milk and 2 cups of sifted flour. When the dough has risen twice, add 4 yolks, mashed with 100 g of butter. Mix 2 cups flour with 3 tbsp. l. sugar and 1 tsp. salt and add to the dough, and then leave to rise again for an hour. Combine 200 ml of cream with 4 whipped egg whites, stir into the dough and let it stand for 15 minutes.

If you plan to make stuffed "snails", lay out 2 tbsp. l. fillings on the edge of the pancake, then wrap them with a tube and twist into a snail. Meat, fish, vegetable and curd fillings are suitable for this serving, you can also fill the “snails” with dried fruits and nuts.

Pancakes without filling are cooked differently - wrap the two edges of the pancake to the center, and then wrap it again. As a result, you will get a four-layer strip, which must be tightly twisted with a snail.

Bags of stuffed pancakes

This is one of the most beautiful and easiest ways to serve pancakes, and pancakes can be made in two types - sweet and regular. For sweet pancakes, you can cook sweet dough with milk or chocolate dough. Melt in a water bath 80 g of dark chocolate and 4 tbsp. l. butter, add 250 ml of warm milk. Separately, combine a glass of flour, 4 tbsp. l. powdered sugar, 1 tsp. cocoa powder, a pinch of salt and 3 beaten eggs. Pour 250 ml of cold milk into the mass, mix with the chocolate-butter mixture, beat well and leave for 2 hours so that the dough thickens a little. For white pancakes, any dough with milk, kefir, sour cream or cream is suitable.

And now the most important thing - how to make bags of pancakes? Pancakes should be tender and warm, so tie them up as soon as they are removed from the pan. Put the filling in the middle of the pancake, then lift the edges up, squeeze the place above the filling with your fingers and tie the bag with thin strips of lemon or orange peel, green onion feather, herbs and cheese pigtail. Unsweetened pancake bags can be stuffed with fried mushrooms, vegetables, minced meat and fish, and chocolate pancakes go perfectly with jam, sweet cottage cheese, chocolate, fruits and dried fruits.

How to wrap pancakes in a triangle

All housewives know how to fold pancakes into a simple triangle - you need to put the filling on a quarter of a pancake, then fold it in half and in half again. But there is another interesting way of folding pancakes into a double triangle, thanks to which even a liquid filling, such as jam, will remain inside. For this dish, pancakes need very thin and elastic, for example, from starch. You will need 4 tbsp. l. flour, the same amount of starch, 2 tbsp. l. sugar and a pinch of salt. Add 4 eggs to this mixture and beat, gradually pouring in ½ liter of milk and 2 tbsp. l. vegetable oil. Let the dough brew for half an hour and bake thin pancakes.

To roll the pancake into a triangle, put the filling on its middle, wrap one edge so that it reaches the middle, then do the same with the other two edges. You have formed a triangle, one of the corners of which you must bend to the base - you get a trapezoid. Gently bend the second corner to the previous corner - and you get a rhombus. And finally, insert the second corner of the trapezoid into the gap formed as a result of all these complex manipulations. Pancakes folded in a double triangle with filling look neat and beautiful.

How to wrap pancakes with an envelope

Pancake wrappers are the easiest way to serve if you want to fill them with a crumbly or dense filling and are confident that the pancake will hold its shape well. How to fold pancakes into an envelope so that they look appetizing?

For this dish you need thin pancakes, the dough for which can be prepared with mineral water. Separate the protein from the yolk, beat the protein and yolk separately with a blender until a thick foam, and then combine them together and beat again. Add 1½ tsp to the egg. sugar and a pinch of salt, pour in 250 ml of mineral water, while the mass will foam. Continuing to beat, gradually add 150 g of flour and at the very end - 2 tbsp. l. vegetable oil. Pancakes are very thin and quite strong.

Put the filling (minced meat, mashed potatoes, rice, cottage cheese) in the middle - now you just have to roll the pancake into an envelope. Bend the right and left edges of the pancake to the middle, then do the same with the top edge and wrap the pancake down. It turns out beautiful pancakes with an envelope, as in the photo, although there are a lot of ways to wrap an envelope.

Tube pancakes: different ways of serving

For tubules, they should be tender, thin and elastic. Custard pancakes on kefir are perfect for this recipe. If you are making open tubes, take a thick filling, and even condensed milk is suitable for closed tubes. The filling never leaks out of such a tube, and the pancake looks very aesthetically pleasing. So, how to wrap pancakes with a tube correctly? Lay the filling over the top edge of the crepe in a long line, then fold over the right edge of the crepe to lightly cover the filling. Do the same with the left edge, and then bend the top and twist the tube.

Multilayer tubes with different fillings look very nice, which, of course, should be combined with each other. For example, prepare three open tubes, stuff one of them with cottage cheese, the second with banana puree, and the third with berries. Lay the tubes on the fourth pancake with a pyramid, wrap it so that the joint is at the bottom, and nicely align the edges with a sharp knife.

pancake cake

The layered pancake cake looks spectacular and cooks very quickly, so if you want to surprise your guests, prepare this unusual and versatile dish. And whether the cake will be an appetizer or a dessert depends on the filling. Add spices and seasonings to the dough for a snack pancake cake, increase the amount of sugar or add cocoa to the dough for a sweet cake. This cake is good because you don't have to follow a strict recipe, so you have a lot of room for creativity. Put the pancake on a plate, cover it with the filling, put the second pancake with the filling on top and so on - the height of the cake can be different. For a snack cake, a filling of meat, chicken, minced fish with vegetables, mushrooms and cheese is suitable, and you can decorate it with herbs, chopped hard-boiled eggs, olives, fresh vegetables and grated cheese. Sweet dessert cake is delicious with fruits, nuts, jam, curd mass, mascarpone, chocolate, whipped cream and cream.

How to cook pancakes with red caviar and wrap them beautifully

To prepare the dough, take a suitable container with a capacity of at least 1.5 liters, so that the ingredients are more convenient and easier to mix. Break eggs into it, add sugar and salt.

To make pancakes porous and tender, add half a teaspoon of soda (you can replace 1 teaspoon of baking powder).

Preheat the milk to room temperature, combine it with the eggs and mix thoroughly.

Introduce flour in small portions, kneading the dough well. Make sure no lumps form. If, nevertheless, the dough turned out to be not smooth and homogeneous enough, beat it for a minute with a mixer.

Then add vegetable oil, thanks to which the pancakes will not stick to the pan, even if you do not grease it. And finally, pour a glass of boiling water into the dough and mix quickly. Hot water has two functions here. First, it extinguishes the soda in the dough. And the second - pancakes are incredibly soft.

Let the dough stand for 10 minutes, and then fry the pancakes in a skillet over high heat for one to two minutes on each side.

How to wrap beautifully pancakes with caviar?
The easiest and most commonly used method is to roll pancakes into rolls or tubes.

The filling in the form of red caviar in this case is laid out in an even layer on the surface of the pancake.

Then the pancake is folded into a roll and cut obliquely into three parts (photo). Pancakes with red caviar are neatly laid out on a plate.

For a beautiful presentation on the festive table, try serving red caviar in bags of thin pancakes. And making them is quite easy.

To do this, fold the pancake in half.

Then alternately bend to the center, first the right edge, and then the left.

Turn the top edge of the bag outward.

Fill pancakes with caviar, decorate with herbs and serve, it turns out original and beautiful.

A simple, but very beautiful and elegant design of the dish: grease the surface of the pancake with a thin layer of melted butter (you can use sour cream or mayonnaise), wrap the opposite edges of the pancake to the center.

Then fold it in half.

Next, roll the pancake into a roll and fix it securely with a toothpick so that it does not fall apart.

On top of each roll prepared in this way, lay out a spoonful of caviar. Hard cheese and fresh herbs will be a good addition to the dish. It turns out a nice appetizer in the form of a canapé.

There are a huge number of ways to wrap pancakes, and it's up to you to decide which one to choose.

Pancakes with caviar are not just ordinary pancakes topped with a salty delicacy. This is a special solemn dish that attracts the eye.

So, when preparing it, you need to take into account all the subtleties and tricks, of which there are many. After all, the pancake should not be too thick and thin at the same time.

It should hold its shape well when folded, while not tearing at the fold. In addition to the pancakes themselves, you need to know how to properly and effectively wrap the filling and serve this dish on the table.

Rolls of pancakes in milk with red caviar

In order to roll rolls and use caviar as a filling, thin, but at the same time not tearing pancakes are needed. These are the test recipes I suggest using.

After folding, each pancake is cut into small portioned pieces. And so that the eggs do not get enough sleep, pancakes are lubricated from the inside with oil.

To make such pancakes, you need to take the following set of products:

flour - 1 cup; egg - 3 pcs.; milk - 2 cups; sunflower oil - 1 tbsp; a pack of butter; bank of red caviar.

  1. I beat the eggs with granulated sugar (1 tbsp) with a mixer, add salt.
  2. I pour milk at room temperature.
  3. I sift the flour and add in small portions.
  4. I add vegetable oil and knead the dough.
  5. I fry pancakes in a hot frying pan, slightly lubricating the surface.
