How to make a pie:

  • butter - 0.5 tbsp. spoons

Cooking:

For baking, I use a silicone mold 22 cm in diameter. But you can use a detachable form and a frying pan.

1. Wash the pears and, if desired, peel them. This time I have them with a thin skin, and I did not clean them. If the skin is rough, then it is better to peel it, so the baking will turn out to be more tender.


2. Cut the pears first into two halves, and then into small slices no more than 1 cm thick. This will make them easier to shape.

3. Lubricate the mold with butter, grab both the bottom and the sides. In principle, the cake turns out to be “non-capricious”, and even without oil it can be easily taken out after baking. But I still lubricate a little, it seems to me in this case more tasty.

4. Lay the slices overlapping, sharp end down. You can post in any order. But still, you need to try to do it as carefully as possible. We will turn the finished pastry, so that the picture pleases us, we will try to make it beautiful.


5. Rub half a lemon on a fine grater, removing only its yellow part - the zest. Sprinkle the pear slices with the remaining peeled lemon, squeezing it straight with your hands. We use a medium sized lemon.

6. We will immediately prepare all the necessary ingredients for the dough so that everything is at hand. Let's make the dough quickly.

7. Break the eggs into a bowl and beat with a mixer into foam.


8. Add the sugar and vanilla sugar and continue beating until the sugar is completely dissolved, about 2 minutes.


9. Add sour cream and lemon zest, and continue beating until smooth.

10. Sift flour and baking powder in advance. Start gradually introducing them into the mixture, continuing to whisk. The dough should turn out without lumps, a homogeneous consistency, moderately liquid and viscous.


11. Pour the dough over the pears, let stand for 2-3 minutes so that it is distributed in the form.


12. Put in an oven preheated to 180 degrees and bake for 10 minutes.

13. Then reduce the temperature to 150 degrees and bake for another 50 minutes. During the entire baking process, try not to open the oven so that the dough does not fall off. The cake in this case will turn out high and airy.


14. Remove the finished cake and let it cool slightly. Then turn it over onto a large flat plate. Cut into triangles and serve with tea or coffee.

1. Knead the dough. To do this, beat the egg with sugar, you can use a mixer, or you can beat it with a whisk. There is only one egg, and it will be done quickly enough.


2. Continuing to beat, add sour cream, soft butter, which must be obtained in advance and let it lie down at room temperature.

3. Then slowly stir in the sifted flour. We put the flour on the eye, 1.5 or 2 cups, depending on the size of the egg and the density of the sour cream. Knead the dough, it should be quite soft and elastic.


4. Roll it into a ball, then cover with a napkin and let it lie down for 10-15 minutes. You can also keep it in the refrigerator. But then it will be more difficult to roll it out. So I leave it on the table.


5. In the meantime, let's deal with the filling. Pears wash, peel and cut into small pieces. If their skin is rough, then it is better to peel it. It is not necessary to cut very finely so that there are pieces in the pie, and not pear puree. Cut only 4 pieces first. Then we'll see if we need another one.


6. Grind the nuts by rolling them with a rolling pin, but not very finely, the pieces should remain tangible. If there were no nuts, then you can do without them, pastries will also be very tasty. But with nuts, it will be just tastier.

Nuts, by the way, you can use any.

7. Now it's the turn of the test. We need a lot of free space on the kitchen table. We will roll out the dough in a very large layer and very thin.

8. So that it does not stick to the table and to the rolling pin, grease the table with vegetable oil. Knead the dough again, and then begin to roll out in the form of a wide long oval.


The dough will roll out easily enough. It's okay if the oval is not the perfect shape. But do not forget that you need to roll out thinly.

9. Now lay out the chopped pears on the rolled out layer of dough. Now look here. If the toppings, in your opinion, is not enough, cut more.


10. Then sprinkle evenly with nuts, then with sugar and finally dice the butter. It is better to cut it after taking it out of the refrigerator. I missed this moment. And I left the butter on the table, so it melted for me, and I had to cut it a little large.


Oils can be added and 100 gr, and 80 - depending on how much dietary option you choose. I add 80 gr, this is quite enough for us.

11. Roll up the dough with the filling. Try to do it carefully so that it does not tear. But even if this happens by chance, do not despair, it's okay. Everything will work out!


12. Roll up the roll and carefully move it into shape. I use a large silicone mold with low sides. I spread the roll into it in such a way that its edges do not fit snugly against the walls. There must be free access from all sides. Do not pinch the edges so that the filling is also accessible.


13. Preheat the oven to 180 degrees and put our workpiece into it.

1. Sift the flour into a bowl, add chopped butter and grind the mass into crumbs, I do it with my hands, but you can also use a blender.



2. Add an egg, mix. Then add 2-3 tbsp. spoons of ice water. Knead the dough. Roll into a ball, wrap in cling film and refrigerate for 1 hour.



3. Let's make the cream. Grind almonds or nuts into flour.


4. Continuing to beat, add butter, sugar, egg, protein, cognac or rum in turn.

5. Beat well until smooth and creamy.


6. Peel two pears, cut out the core and the inner core turning into a stick, it is hard and it is better to cut it off. Cut them lengthwise into long layers. Sprinkle them with lemon juice to keep them from turning brown.

So that they do not “float” during cooking, choose them when buying so that they are firm.

7. Roll out the finished dough into a thin layer according to the size of the mold so that it is enough for both the bottom and the sides.

8. Lubricate the mold with oil, just a little bit. We have oil in the test. And put the dough into the form, distributing evenly along the bottom and sides.


9. Put the walnut cream into the dough form.


Lay out the pear slices, overlapping them. You can lightly press them into the cream.


10. Without peeling and removing the tail, cut the remaining pear into thin layers, without cutting a little to the end and without removing the stick. Arrange on top of the cream and pears in the form of a fan.


11. Preheat the oven to 180 degrees. Bake 50-55 minutes. The pears will turn golden and the dough will brown as well. So the cake is ready.

12. Allow the cake to cool slightly and carefully transfer it from the mold to the dish. You can use a wide spatula for this.


1. Separate the whites from the yolks. Try to separate them in such a way that not a single drop of yolks gets into the whites.

2. Beat egg whites until foamy. With the help of a mixer, this can be done easily and quickly. The readiness of proteins is determined by the fact that when the cup is tilted to the side, the proteins remain motionless.


3. In a separate bowl, beat the yolks with sugar. Add vanilla sugar, butter at room temperature, continuing to beat.

9. Pour the mass with poppy seeds in the first layer.

10. Cut two pears in half and then cut into long slices, removing the core. If their skin is rough, it is also better to peel it off. Put the slices on the bottom in the form of a fan.

12. Put the oven on preheat and heat it up to 185 degrees.

13. Bake for 55 minutes until done. The finished cake will become a beautiful ruddy color, and when you pierce it with a toothpick, there should be no batter left on it.
