    Stages of creating a dish

    First, marinate the pork ribs for the oven. We are preparing the marinade. In a bowl, mix the oil and vinegar, seasonings, squeeze the garlic. Add a spoonful of mustard and stir well until completely dissolved.

    Wash the ribs and pat dry. We cut into portioned pieces so that there is enough meat left on each and there is a fatty layer.

    We put the ribs in the marinade, so that all the pieces are covered with the mixture. If its volume is not enough, you can add 50-70 ml of water. Cover with a lid and put in the refrigerator overnight.

    Lay the pieces fat side down in a baking dish. We do not pre-lubricate the form - pork fat will be enough so that nothing burns.

    Many people think that when we marinate pork ribs for the oven, we make them tastier. Undoubtedly, the need to marinate meat before heat treatment is dictated not only by the need to improve the taste of the meal, but also by the need to maintain one's own health.

    During heat treatment of meat products, carcinogenic substances are always formed in them, the main of which are advanced glycation end products and heterocyclic amines. The higher the cooking temperature, and the fatter the meat, the more carcinogens are formed.

    When baking in the oven, the cooking temperature is not as high as when roasting. However, pork ribs are always fatty. Therefore, they form a lot of carcinogens.

    Fortunately, the amount of these hazardous compounds can be reduced by up to 90%. To do this, it is enough just to properly marinate pork ribs before frying or cooking in the oven.

    A proper marinade should include at least one of the following:

    • potatoes - 10 medium-sized pieces;
    • onion - 1 large head;
