1. Preheat oven to 180 degrees. Sprinkle the almonds on a baking sheet and place in the oven for 5 minutes. When the almonds have cooled, mix them with ½ cup of sugar and beat in a blender until fine crumbs.

2. Then combine flour, cinnamon, salt and lemon zest. Mix well.

3. In the next step, mash softened butter, ½ cup sugar and egg yolks. Then add the almond crumbs with sugar, vanilla and flour mixture. We mix everything thoroughly. The resulting dough is divided into two parts, wrapped in cling film and sent to the freezer for 30 minutes.

4. When the dough has cooled, we take out one part, and let the second one remain in the refrigerator while we work with the first. Dust your work surface with flour and roll out the dough thinly to about 0.5 cm.


5. Cut out hearts using cutters. We do the same with the second part of the test. You need a couple of hearts. We leave half of the hearts whole, and cut out the inscription from the rest. It can be done with special molds as in the photo, or you can use a paper stencil. Initially, we draw letters on paper, then cut them out. Then we apply to the hearts and circle with a sharp knife.

6. And so, when everything is ready, we line a baking sheet with parchment paper, carefully shift the hearts and send them to the oven for 15 minutes. The readiness of cookies can be determined by the golden crust. Take out and let the cookies cool.

  2. Next, we prepare the cottage cheese for the filling: it must be thoroughly rubbed through a sieve, and then mixed with sugar and eggs. Add one bag of vanilla sugar and mix everything with flour and sour cream and send the mixture to the refrigerator.
