Celery Root Dishes

Cream soup.

For 4 servings

  • 1 root celery
  • 1 potato
  • 1 large stalk leek
  • 25 g butter
  • 1 l vegetable broth
  • salt, black pepper
  • 4 tbsp. spoons of single cream (fat content 10-18%)
  • 2 tbsp. tablespoons chopped fresh chives

Clean the celery and potatoes. Cut off the green part of the leek. Cut all the vegetables and fry for 5 minutes in oil in a deep frying pan with a lid.

Add vegetable broth, salt and pepper, bring to a boil and simmer for 25 minutes. Cool slightly, pour into a blender and beat until smooth. Pour into a saucepan, heat and put cream into the soup.

Serve the celery root dish, garnishing the soup with chopped chives.

This root vegetable goes well with grilled lamb, chicken and pork.

  • 1 root celery
  • 1 small onion
  • 2 tbsp. spoons of olive oil
  • 2 cloves of garlic
  • 1 st. tablespoon fresh chopped parsley leaves
  • 1 teaspoon fresh chopped rosemary
  • salt, black pepper
  • 100 ml vegetable broth

Celery root soup is very easy to make. Peel the celery and cut into 1 cm cubes. Fry over medium heat in olive oil in a large deep frying pan with a lid, along with finely chopped onions until soft and brown. Put the chopped garlic, herbs, salt and pepper, fry and stir for another minute.

Pour in the broth, lower the heat, cover and simmer for 20 minutes, until the celery and onion are quite soft and there is some liquid left in the pan.

Gratin casserole with potatoes.

Recipes from celery root are very diverse - this root crop can not only be boiled or stewed. It makes excellent pickles and snacks. A simple dish that can be cooked along with fried or stewed meat is gratin casserole with potatoes. To make it more nutritious, replace 50 ml of milk with cream.

For 4-6 servings

  • 75 g butter
  • 3 potatoes (mealy)
  • 1 root celery
  • 1/2 teaspoon ground nutmeg
  • 1 large clove of garlic
  • salt, black pepper
  • 250 ml vegetable broth
  • 200 ml milk
  • 2 tbsp. tablespoons grated parmesan cheese

Grease a shallow baking dish with butter. Peel the celery and potatoes and cut into thin slices (no thicker than a coin). Put potato slices, celery slices in turn in the dish, spread pieces of butter on top, sprinkle with nutmeg, finely chopped garlic, salt and pepper.

Mix the broth with the milk and carefully pour over the vegetables, then sprinkle with the cheese. Roast at 200°C for an hour until the vegetables are soft enough to be pierced with a sharp knife.

Lamb chops.

Oven Celery Root Recipe is a delicious alternative to grilled lamb chops. Serve chops with kale or greens.

For 4 servings

  • 8 lamb chops
  • 2 tbsp. spoons of olive oil
  • 1 bulb
  • 1/2 celery root
  • 2 cloves of garlic
  • 1 teaspoon paprika
  • 1 st. teaspoon fresh thyme leaves
  • salt, black pepper
  • 200 ml lamb broth

Fry the chops in a heat-resistant dish over high heat in olive oil until brown; remove from fire and set aside. Slice the onion and chop the peeled celery root into 1cm cubes, fry in the remaining oil until soft and browned on both sides. Stir fried dishes from root celery from time to time - do not allow burning.

Add chopped garlic, paprika, thyme, salt and pepper and stir for a minute. Return the lamb chops and pour in the broth. Cover the dish with a lid and bake in the oven at 170°C for an hour.
