Hot Redgrass is made from clarified apple juice and thick berry jam - blueberry or currant. Jam adds color and sweetness, so no sugar is added. The ideal combination of spices for such mulled wine is cloves and 2-3 cinnamon sticks. If desired, you can use ground seasonings, but then the drink will need to be filtered.

Ordinary mulled wines are made by adding spices and fruits to warmed but not boiled wine (usually red). If the use of alcoholic beverages is undesirable for some reason, you can prepare non-alcoholic mulled wine according to one of the proposed recipes, replacing wine with juice: grape, apple or cherry. It will turn out a fragrant, warming drink that is suitable even for children.

General advice. It is advisable to use fresh homemade or canned juice, but if you don’t have your own supplies, a store-bought one will do. If you do not like any of the spices or spices, you can not add it. Clove and cinnamon are considered “branded”, that is, forming a characteristic taste and aroma. The stores sell ready-made sets of spices for ordinary mulled wine, which are also suitable for non-alcoholic.

Never bring the juice to a boil (heat no higher than 70-75°C), otherwise the taste will turn out "boiled". Sweeten the drink to taste with sugar or honey after preparation and pouring into cups or glasses, as not everyone likes sweet mulled wine. Reheating is possible, but undesirable, as some of the flavor is lost. Soak store-bought fruits and citrus fruits for 3-5 minutes in warm water to remove the preservative that has been treated on the surface of the fruit to increase shelf life.

Mulled wine is a drink that can be attributed to the "autumn-winter" category. In fact, what could be better - upon returning home after a forced walk in the piercing autumn rain, after a hard frost that “grabbed” your face, fingers and toes, cook yourself hot mulled wine, which will not only instantly warm your whole body, but also raise mood.

In contact with

The history of the drink

The hot drink mulled wine began its journey around the world from Central Europe. The Russian transcription of this name comes from the German phrase "glühender Wein", which literally means "flaming wine". The Rhine Valley has always been famous for its vineyards, and the winters there are quite damp and cold, so such a drink could not fail to appear. Over time, it even acquired a cult significance, it is an indispensable attribute of the celebration of Christmas not only in Germany, but also in Austria, the Czech Republic, Denmark, and the Scandinavian countries.

The classic composition of mulled wine is a warmed red wine with the addition of honey or sugar, spices, fruits.

Due to its composition and temperature, the drink has a warming effect, so it is very useful for the prevention and treatment of colds.

In addition, it, with its reasonable consumption, has good tonic and restorative properties, which is very important for people with reduced immunity, after mental or physical exhaustion.

Similar experiments with grape wine were carried out back in the days of Ancient Rome, which can be confirmed in ancient manuscripts, for example, in one of the earliest “cooking books” known to mankind - a collection of recipes from the 1st century BC. The hot climate of Italy did not require additional heating of the drink, only cardamom, cinnamon, cloves, coriander and other available spices were added to the wine. It is clear that at that time it was the lot of the patricians - the plebs and slaves would not have had enough money to purchase expensive spices and spices.

However, let's leave alone the ancients, there are more important questions. For example, is it possible to make such mulled wine so that, without practically differing in taste and warming qualities from the classic, did not have the negative sides of an alcoholic drink- did not interfere with driving a car, did not create problems at work, did not force them to violate the vow to drink alcohol, so that they, after all, could be treated to children? Of course, it is quite possible to cook this, and there are many similar recipes. However, when cooking, certain rules must be observed.

Regardless of whether the basis of the prepared mulled wine is wine or fruit juice, some rules should be followed.

Dishes
For the preparation of mulled wine, you should not use aluminum utensils - it will lose a lot from this.

Cooking
The drink is never brought to a boil. If it is possible to measure the temperature, then this indicator should not exceed 70 degrees. If we have to do without a thermometer, we rely on vision and intuition. As soon as the foam that appeared on the surface of the drink heated over low heat begins to disappear, the pan is immediately removed from the burner. If the moment is missed, and bubbles begin to appear, and even more so, if it comes to a boil, we can assume that the drink is spoiled.

  1. First, water is poured into a saucepan prepared for a future drink, at the rate of about one quarter of the amount of juice (wine). All the spices planned for use are added there, the water is brought to a boil and kept in this state for several minutes.
  2. Then the required amount of honey or sugar is put into this fragrant water until it is completely dissolved, and only then the mulled wine base is poured.

The simplified method will, of course, take less time - all components are diluted and heated in one container at once. But believe me, the first option is not much longer, but the drink turns out to be much richer and tastier. In addition, the risk of "blinking" the boil will be much lower.

Spices and fruit additives
You should not use finely ground seasonings and spices for mulled wine - they form such a suspension that will be very difficult to filter, the process of drinking the drink will not be very pleasant. It is better to use fresh fruits - now at any time of the year there is no shortage of them.

Last note.
The recipes given are by no means dogma. Everyone is free to experiment with spices and fruits due to their taste preferences or vice versa, possible rejections of certain components. Also with sugar or honey - you can add them exactly to taste.

After trying several options, it will not be difficult to identify the most suitable one, which will take its rightful place in the individual householder cookbook.

Glasses for mulled wine

Serving mulled wine to the table is a separate tradition. As a rule, heavy glass goblets with a handle are used. Clay mugs are also good for these purposes., however, in transparent containers, the drink will look much more picturesque. Often, mugs for mulled wine are pre-decorated with a sugar rim, and after pouring the drink, slices of orange or lemon can be placed around the edge.

However, there are supporters of simple large porcelain cups. And one of the lovers of mulled wine insists that nothing has been invented better than a metal enameled mug, especially since it can be put on fire to slightly warm up the cooled drink.

Video on how to make non-alcoholic mulled wine:

Bon appetit!

getting ready

cook non-alcoholic mulled wine very simple, but there are a couple of important points.

List of products and spices:

  • 100% grape juice (1 liter)
  • orange or grapefruit (1/2 fruit)
  • Lemon (1 slice)
  • Cardamom (preferably whole or a pinch of ground)
  • Carnation (pinch)
  • Cinnamon (1 stick or small pinch)

You can also use if you wish:

  • Granulated sugar (1 tablespoon)
  • Ginger (better if it is a dried piece of ginger root)
  • Anise (1-2 stars)
  • Raisin (pinch)
  • Dried citrus peel (pinch)

Mulled wine is not just a drink. This is a whole ritual, so it will take some paraphernalia:

  • Warm blanket
  • Wool socks (optional)
  • Disc of Frank Sinatra or Louis Armstrong
  • A dry vantage point from which you can watch the bad weather while laughing :)

A few words about spices

The most delicate moment in the preparation of mulled wine, of course, concerns spices. Their choice and ratio determines how the drink will turn out and what strings it will touch in your soul. Raisins and sugar will make it seem thicker, grapefruit instead of orange will make the taste more complex and multifaceted, cinnamon - rich, ginger will enhance the warming effect. Don't be afraid to experiment!

But there is one spice that I would call the most important in the preparation of mulled wine. Meet this - cardamom:

Many associate mulled wine with cinnamon, but in vain. Mulled wine is primarily cardamom. It's great to find whole cardamom, it's like these boxes with grains inside. Half of the boxes I open before adding to mulled wine, and half I fall asleep whole. Ground cardamom is not as good, but it will do. But with ground cinnamon you need to be careful - it can make the drink too "glamourous". Do not overdo it with cinnamon and use cinnamon sticks instead!

Let's get started!
