Master class of New Year's gingerbread with icing

I won’t show you how to cook delicious gingerbread at home, as I have done it many times already. I’ll tell you briefly, I cut out special blanks from the dough, this is the Christmas tree itself, a snowflake ball and a round stand. Maybe you don’t understand why I need both a snowflake and a ball, but I decided to do both one and the second option, because I couldn’t decide what I liked the most. Therefore, if you like it with a snowflake, leave it, and if you like it with a ball, then take it. Immediately after baking, I make a hole in the ball with an ordinary cocktail tube, and cut the desired hole in the stand. And in order to get a beautiful New Year's gingerbread tree, you need to fill it immediately with white icing. For glaze, I mix powder, protein and lemon juice, then beat everything with a mixer at low speed for 3 minutes. Now look at the density, if the glaze is thick, then add a few drops of water, mix and check again.

I make glaze of one medium consistency, if you run a fork over it, a trace should remain, which disappears in 6 - 8 seconds. Then I transfer a small amount of it to another container, add blue dye and mix until smooth, I also transfer the resulting color to a pastry bag. With white icing I outline the contours of the Christmas tree and fill it. Gently shake the gingerbread several times so that the filling evenly lies. I do the same with a stand and a ball. After I leave them for a few hours to dry completely, but it is better to wait 12 - 24 hours. Next, I draw a wavy line in blue.

With the help of a brush, I carefully shade the line and immediately attach the beads there.

I do exactly the same throughout the Christmas tree to get beautiful snow-covered branches. As you can see, gingerbread for the new year is not hard to do with your own hands and this is quite an interesting activity.

While it dries, I cover the snowflake in blue, drawing its lines. By the way, to make such a snowflake, I used special plungers that are squeezed out of the dough, different figures. I also make a dotted contour on the Christmas tree, the ball and the stand in white.

These gingerbread cookies can be stored for a long time, and in our family we bake these to hang on the Christmas tree. To do this, in each gingerbread, you need to make a hole with a straw for a cocktail and only then put it in the oven.

Rules for working with dough for gingerbread:

  • do not forget to cool the milk-honey mixture;
  • let the dough lie down so that it is well saturated with the aroma of spices;
  • be sure to lay baking paper on a baking sheet;
  • since the gingerbread cookies are dark, you may not notice that they are browned, so watch the baking especially carefully.

  • 1 teaspoon baking powder

Glaze:

  • 1 egg white
  • 220 g powdered sugar

Previously, gingerbread dough was specially kept for several months in the cold so that it acquired the necessary aroma and ductility. Some gingerbreads could also be stored for a very long time - they, of course, stale, but did not deteriorate.

  1. Take the dough out of the fridge and let it rest for half an hour so that it warms up and is easier to work with. Roll out the finished dough on a lightly floured table to a thickness of 2-3 mm and cut out the cookies.

  1. Transfer the cookies to a baking sheet, brushing off excess flour with a soft brush. Use a cocktail straw to make holes for the ribbons.
  2. The remaining pieces of dough can be collected and rolled out again.
  3. If you want to bake printed gingerbread cookies, butter a gingerbread board and stuff the dough as tightly as possible. Run a rolling pin over the top and turn it over onto a floured table. Carefully remove the cookies and place on a baking sheet.

  1. Bake the cut gingerbread for 8 minutes at 200°C, and the printed ones for 15 minutes at 180°C.
  2. For the icing, beat the protein into a dense foam (as for meringue), add half the powdered sugar and beat again, the mass will be fluid. Add the rest of the powder and stir. Transfer the mixture to a bag, cut off the end to make a very small hole, and decorate the gingerbread. Let the glaze dry for a couple of hours.

Gingerbread cookies can also be decorated with melted chocolate. But painting gingerbread cookies with chocolate or icing beautifully and neatly is a difficult task! Even an experienced pastry chef requires concentration and attention, so I advise you to practice on a simple sheet of baking paper first. Make sure that the glaze is thick enough, in this case it is much more convenient to draw with it.

Cooking process

For high-quality gingerbread, cooking takes very little time. The only thing is that you have to tinker with painting in order to get really beautiful holiday products. Let's start by kneading the dough:

  1. Pour liquid honey into a large bowl, where further kneading will take place. It is also acceptable to use frozen honey, only it must first be melted in a water bath or in a microwave oven, and then cooled to room temperature.
  2. Also melt the butter and cool to room temperature, mix it with sugar while it is hot, until all the crystals have dissolved. Combine honey and butter with sugar using a whisk.
  3. Break the eggs into a separate bowl, stir with a mixer until smooth. Lush proteins in this recipe are not required, but you need to connect the eggs. Pour the beaten eggs into the honey mixture.
  4. Mix well, add vanilla sugar and spices to this mixture. Usually, dry ground spices are used in recipes, but if you use fresh ginger root, it must be finely grated or crushed in a mortar.

  1. Enter cocoa. If the cocoa is a little lumpy, add one tablespoon of powdered sugar to it and stir, and only then add to the honey mixture.

  3. Now attach the stencils to the dough so that they do not overlap each other. Cut out the outlines with a very thin sharp knife. You can use various improvised means. For example, cocktail tubes are quite suitable for creating small holes.
  4. Now we cover the baking sheet with parchment, grease it with a small amount of melted butter. Carefully, using a wide spatula, transfer all the blanks to the parchment. You can not leave gaps between them, since the gingerbread dough does not increase much in volume.
  5. Preheat the oven at 180 degrees, then place a baking sheet with gingerbread in it, bake for about 5 minutes, depending on the thickness of the product. Ready gingerbread will darken, at first it will seem very dry to you, but when they cool, the dough will become softer and juicier.

Put all the gingerbread cookies on a dish in 1 layer and cool to room temperature. Before decorating such products, the dough must be completely cool, otherwise the glaze will not stick to the surface.

For the decoration of New Year's gingerbread, a special icing is required. We offer the simplest and most affordable glaze recipe for painting:

  1. Separate one chilled egg white and pour it into a clean bowl without any traces of fat. In this recipe, you do not need to beat the protein until fluffy foam with a mixer, just lightly stir it with a fork or whisk.
  2. Then carefully add 200 grams of finely ground powdered sugar to the protein through a sieve, remembering to constantly stir the mass. Mix everything until a homogeneous consistency. The mass should resemble cream for a cake.
  3. Now squeeze one tablespoon of juice from the lemon, be sure to strain it so that no seeds or pulp get into it. Pour the lemon juice into the glaze and knead for about 3 minutes with a silicone or wooden spatula.
  4. To get colored glaze, you need liquid dyes. It is best to use gel ones, they are thicker, better combined with icing and creams. Add dyes very carefully so that the color is natural.

Now let's start decorating:

  1. The most difficult thing is to make a voluminous gingerbread Christmas tree. To do this, while the dough is still hot, make an incision from top to bottom about 2/3 of the length of one piece. After that, insert a second flat workpiece into the groove so that both of them are at right angles to each other.
  2. To cover the Christmas tree, you will need green and brown icing. Using a pastry bag with a narrow nozzle, apply brown icing to the trunk, paint the branches of the Christmas tree with green icing.
