So, to prepare 100 kg of apples you need:

  • fresh fruits of medium size - 107 kg;
  • granulated sugar - 2 kg;
  • table salt - 1 kg;
  • rye flour - 1 kg;
  • mustard powder - 200 g;
  • fresh wheat or rye straw.

If possible, use half the amount of malt instead of rye flour. If the wooden barrel has a small capacity, the amount of starting products must be proportionally reduced.

Procedure:

This is an old reliable recipe, all sorts of improvements are unlikely to improve the taste. However, you can:

  • sugar - 200 g;
  • salt - 1 tbsp. spoon;
  • water - about 5 liters.

You can add spicy leaves or herbs, it is only important to remember that vegetable and fruit greens cannot be used at the same time.

Step-by-step instruction:

  1. Wash, sterilize and dry 5-6 3L jars.
  2. Boil water with sugar and salt, cool.
  3. Place jars in deep bowls.
  4. Put washed apples in them, pour brine so that it overflows.
  5. Cover the jars with clean gauze.
  6. Add brine as needed.
  7. At a temperature of about 20 degrees, fermentation takes about 2 weeks. When it is over, wash the bottom and sides of the jars with cool water, close with ordinary (leaky) nylon lids.
  8. Store in a cool place.
