Cooking bagels does not take much time and effort, so you can make them for morning tea, even on a weekday. And to add a touch of variety, bake bagels from puff pastry or shortcrust pastry. As a filling, it is absolutely not necessary to use jam.

Experiment, cook them with walnuts, poppy seeds, or chocolate. Surely you will like such experiments and will delight your family.

Ingredients:

1. Premium wheat flour - 0.3 kg;

2. Butter - 0.15 kg;

3. Cottage cheese - 0.4 kg;

4. Egg - 1 pc.;

5. Sugar - 0.15 kg;

6. Salt - ½ tsp;

7. Food baking powder - 1 sachet (10 g);

8. Jam - 0.4 kg;

9. Powdered sugar - 0.05 kg.

Cooking method:

1. Soften the butter at room temperature. Add cottage cheese and granulated sugar.

If you don’t want the dough of ready-made bagels to be interspersed with cottage cheese pieces, grind the cottage cheese through a metal sieve with a fine mesh or interrupt with a blender.

2. Enter the egg and carefully rub with a fork or mixer.

3. Sift flour through a sieve. Set aside 50 g of flour on the dust of the table, and add salt + food baking powder to the rest.

4. Combine the dry ingredients with the curd mass, and knead a soft dough. Cover the dough with cling film and leave for 20-30 minutes.

During this time, the gluten contained in the flour will be saturated with moisture, the dough will become much more plastic and pliable, and you will not have the slightest difficulty in rolling out the layer.

5. Divide the dough into 2 equal parts.

6. Roll each of them into a layer about 5 - 10 mm thick. Try to make the rolled layer have the shape of a regular circle, then all products will turn out neat, the same and at the same time reach readiness.

If you make bagels of different sizes, there is a risk that some of them will be baked, and some will remain damp inside.

7. Cut the layer into identical triangular fragments. You can make 16 small or 8 large bagels with jam from each part of the dough.

8. Put jam on the wide part of the workpiece, and wrap it in a roll. Start forming the product from the wide edge to the narrow one.

Do not take too much filling, just one teaspoon for each unit is enough, then for sure the jam will not leak out during frying and will not start to burn.

9. Line a baking sheet with parchment paper. Lay out the formed classic bagels. You should not place them very close to each other, because during frying the dough will increase in volume. Try to leave at least 3 cm between products.

10. To form a golden, glossy crust on the surface of the bagels, brush the top with egg yolk.

Preheat the oven to 200 degrees and bake the curd rolls for 20-25 minutes.

11. When the finished baking has cooled slightly, sprinkle with powdered sugar and serve.

  • sugar - 5-7 tbsp. l. (for rolling bagels);
  • filling - nuts with sugar, raisins, marmalade, thick jam, etc.

How to cook cottage cheese dough for crispy bagels (step by step recipe):

  1. The filling is up to you. One condition - it should not be too liquid, otherwise it will flow onto the baking sheet during baking and burn. I usually take sheet marmalade, very thick jam or dried fruit. This time I decided to wrap ground walnuts with sugar in bagels. It turned out very tasty and not cloying. To prepare the same filler, peel the walnuts from the membranes and shell particles. Transfer to a blender or food processor. Add 1-2 tbsp. l. sugar or powdered sugar. Chop into crumbs. The filling is ready.
  2. Now the dough. Its preparation takes a matter of minutes. Take the butter out of the fridge ahead of time to soften it. Instead, you can take margarine, but I basically don’t buy it and don’t advise you. But it's a business. Cut the butter into cubes and place in a deep bowl. When it becomes soft, add cottage cheese. Fatness, in principle, does not really matter.
  3. Mix cottage cheese with butter. You should get an almost homogeneous curd mass. It is fashionable to mix by hand or use a mixer (food processor).

  4. Mix flour with baking powder. Sift. Add to dough. Don't add all the flour at once. If you overdo it, the bagels will turn out harsh.

    Please note: The amount of flour may differ from what I indicated in the list of ingredients, because it depends on the moisture content of the curd.

    To begin with, put 250 g, and if the mass is too sticky and liquid, add more.

  5. Knead the dough. It will turn out smooth and almost non-sticky to the hands. Don't knead for a long time. As soon as the mass acquires a uniform consistency, you can begin to form bagels.
  6. Roll out the curd dough into a layer 2-3 mm thick so that it is convenient to roll the bagels. Cut it into segments as shown in the photo.
  7. Put the stuffing on the wide end.
  8. Roll up towards the sharp end of the workpiece.
  9. Roll each bagel in sugar. No sweetener was added to the dough itself, as you noticed. Therefore, baking will not turn out too sweet.
  10. Lay the rolls out on a baking sheet lined with paper. You can slightly bend them with a crescent. Bake at 200-220 degrees. Approximate cooking time - 20-25 minutes (until browning).
  11. Cool the finished cottage cheese pastry a little. Serve. The dough turns out crispy, crumbly, literally melting in your mouth.

  • filling - raisins, thick jam, boiled condensed milk, etc.;

  1. Warm up the kefir a little. Pour into a deep bowl suitable for kneading dough. Instead, by the way, you can use curdled milk or ayran. Add cottage cheese to it. If it is grainy, it is better to rub it through a metal sieve, then the bagels will turn out to be more airy.
  2. Pour in vegetable oil. Thanks to him, the dough will not be stale for a long time.
  3. Pour in the sugar. If the filling is sweet, then 3 tablespoons will be enough. If unsweetened, add more.
  4. Beat with a mixer until the sugar dissolves.
  5. Mix flour with soda. Sift. Pour into the rest of the dough ingredients. Soda does not need to be extinguished, it will react with sour kefir and cottage cheese. Due to this, bagels will turn out airy.
  6. Stir the ingredients. Flour may need a little more or less than indicated in the recipe. Focus on the consistency of the dough. It should be non-sticky, smooth, pliable.
  7. Cut it in half. Roll out into a rectangular layer or circle, as described in the previous cooking method. Cut into triangular blanks or segments.

    Tip: If you use dried fruits, they must first be steamed to make them softer. Pour boiling water over them and wait 7-10 minutes.

  9. Roll the dough into a bagel, moving from the wide end to the narrow end. Lay the rolls out on a baking sheet. They will expand noticeably when baking, so back off 3-4 cm between the blanks. If desired, grease the surface with egg yolk mixed with a tablespoon of water or milk.
