Option 1: Classic cupcakes in silicone molds

Homemade cake cannot be compared with a purchased analogue. It always turns out tastier, and it is prepared very simply and even quickly. In the traditional recipe, the dough is made exclusively with butter. Although, in order to save money, you can take a little margarine or even make a complete replacement. Food grade silicone molds do not require lubrication. These ingredients are enough to make 6 mini cupcakes.

Ingredients

  • pack of butter;
  • 7 tablespoons of granulated sugar;
  • 4 eggs;
  • 7 g baking powder;
  • 175 g flour.

Measure flour. If there are no scales, then we simply take one full glass and a third of the second. Mix with ripper, sift. Measure out the rest of the recipe ingredients.

Butter cut into pieces, put in a bowl. It is desirable that it be thawed, in which case the whipping process will take no more than seven minutes. Immediately add sugar and start working with a mixer until it is completely dissolved.

After the signal, do not rush to open the door. We wait at least three minutes, and it is better to leave for five. We take out the cupcakes and shake them out of the molds. Decorate with powder.

There are similar recipes for muffins with the addition of eggs, sour cream or kefir instead of milk, and various other additives. It is undesirable to try to replace the ingredients in this version on your own, the cake simply may not be baked.

Option 3: Flavored kefir cupcakes in silicone molds

Kefir dough is difficult to fail. Baking from it is always light and fluffy, if you do not forget about soda. By the way, since there is a lot of acid in the product, you can not extinguish it with lemon or vinegar.

Ingredients

  • a cup of kefir;
  • two eggs;
  • 11 g of soda;
  • a couple of pinches of cinnamon;
  • half a spoonful of zest;
  • 0.29 kg of flour (preferably sifted);
  • 50 g candied fruits;
  • 140 g refined sugar;
  • 35 g butter.

How to cook

Mix sugar, eggs, pour kefir and butter. Beat lightly, leave for a few minutes to dissolve. Then shake again, throw soda.

We add aromatic substances to the flour, zest with cinnamon is indicated here. Also great for Christmas gingerbread. Vanilla will not be superfluous here either. Pour everything into the stirred kefir.

Knead and add candied fruits. If they are large, then you can cut them. Then immediately distribute the dough into silicone molds, filling them to two-thirds of the height.

We place the molds in the oven, it is better to immediately put them on a baking sheet, bake for 22 minutes. Planting and cooking at 180 degrees. Let the cupcakes cool for fifteen minutes, then take them out of the molds.

Vegetable oil in this recipe can be replaced with melted margarine, cooking oil. If necessary, put raisins instead of candied fruits.

Option 4: Raisin cupcakes in silicone molds

Raisins can be poured into absolutely any dough. This ingredient will not spoil it. But cupcakes made with butter and sour cream are especially successful. Vegetable oil is also added, but in small quantities for softness.

Ingredients

  • eggs - 4 pcs.;
  • 160 g of sugar;
  • sour cream - 2 tbsp. l.;
  • 2 tablespoons of oil;
  • 12 g of soda;
  • raisins - 90 g;
  • 1.5 st. flour;
  • 0.5 packs of butter.

Step by step recipe

Sour cream with melted butter, raw eggs and sand just grind well. Mix until smooth, throw a pinch of salt and then add vegetable oil.

Raisins should be washed well and mixed with half a glass of flour. Pour the rest of the flour into the dough, mix. Then we introduce slaked soda, at the end flour with raisins. The dough should be homogeneous, it is important to carefully dissolve the soda in it.

Pour the dough with raisins into silicone molds, filling from just above half. We put in the oven at 210 degrees, after which we reduce it to 170. We bake for half an hour.

Dry raisins are not tasty, it is advisable to soak them in warm water before use, then squeeze them out, you can dry them on a paper towel.

Option 5: Cupcakes on sour cream in silicone molds

Sour cream in baking perfectly replaces both liquids and partially fats. It's great for cupcakes. And you don't have to look for the freshest product. Sour cream stagnant in the refrigerator is also good. The fatter it is, the better.

  • sour cream - 120 g;
  • 220 g flour;
  • oil - 50 ml;
  • 150 g of sugar;
  • 6 g of ripper;
  • salt, vanilla.

How to cook

In a convenient bowl we place eggs, sand, salt, vanillin can also be filled up. With a whisk, beat it all up a little. We do not need lush foam, so the mixer can be left out.

We introduce sour cream into the dough, stir again, the sugar should dissolve, and then pour the refined oil.

It remains only to fill in the flour, ripper. Vanillin optional. With cinnamon and zest, they also make excellent muffins. We knead the dough with the same whisk, lay it out in silicone molds.

We send the half-filled forms to the oven. There cupcakes will cook 25 minutes. Planting and baking at 180 degrees.

If the sour cream is liquid, then it is advisable to immediately add a little more flour to the dough, otherwise it may fall off in the oven. When using a thick product, you can pour a couple of tablespoons of milk. A tough dough in the oven will not fall off, but you will get a dry cake, it may crumble.

Option 6: Easter cupcakes in silicone molds

Easter cake is a great alternative to Easter cakes. Miniature products made of silicone molds look especially interesting. They can also be decorated with icing, multi-colored dragees. If you don’t like the fudge option below, you can choose another recipe.

Ingredients

  • 130 g of sugar;
  • four eggs;
  • 280 grams of flour (be sure to sift);
  • 70 grams of raisins;
  • 1 protein;
  • 4 spoons of powder;
  • 5 ml of lemon juice;
  • 85 ml of oil;
  • 6 grams of ripper (incomplete spoon);
  • 1 tsp grated zest;
  • dragee for decoration.

How to cook

Rinse the raisins and let stand in warm water for five minutes. Squeeze, dry, often it is rolled in flour for even distribution, which can also be done.

Simply mix flour, zest and ripper, vanilla at will. Beat eggs and sand until stiff foam leads to refined oil. And then lemon juice. Mix all this with flour, add prepared raisins.

We lay out the Easter dough in small molds and bake. To make a small hat, fill a little more than 2/3 of the height. Planting temperature 180, readiness is checked with a splinter.

Beat the protein until a steep foam, only after that we add powder to it and at the very end we drip a little lemon juice. Lubricate the cooled cupcakes, sprinkle with colored dragees. Or we prepare fudge and decorate Easter cupcakes in a different way.

You can use non-raisins to fill Easter cupcakes in silicone molds. And multi-colored candied fruits, a mixture of dried fruits, but be sure to adhere to the specified amount.

Option 7: Chocolate cupcakes in silicone molds

The number of ingredients listed below makes approximately twelve cupcakes. If there are fewer silicone molds, then you can separate the ingredients. Just do not forget to do it proportionally so that the cupcakes turn out.

Ingredients

  • 180 g of sugar;
  • cocoa - 3 tablespoons;
  • 110 g of oil;
  • 150 ml of milk;
  • eggs - 3 pcs.;
  • 50 g of chocolate;
  • 230 g flour;
  • a little salt;
  • ripper (bag).

How to cook

We send the oil to the microwave or heat it on the stove until hot. We introduce sugar and cocoa, pour milk, salt. After adding these ingredients, the oil will cool.

Pour the chocolate dough with pieces into molds and immediately bake at 180 degrees. On average, it will take from 17 to 22 minutes.

You can also use Nesquik cocoa for this recipe, but in this case we take 6 tablespoons, and reduce the amount of sand a little so that we don’t get sugary pastries.

Option 8: Milk muffins in silicone molds

On milk, not heavy, but light and fluffy muffins are obtained. They are somewhat reminiscent of buns or cakes. If desired, they can even be covered with icing or simply pour a little filler into the dough: nuts, seeds, dried fruits.

Ingredients

  • 190 g of sugar;
  • milk - 190 ml;
  • a couple of eggs;
  • 11 g of soda;
  • 95 ml of oil;
  • 390 g flour.

Step by step recipe

Mix sand with eggs. We immediately take a large bowl. We beat the duet to pomp.

We take vegetable oil, but only without smell. Pour over the eggs and mix lightly. We pour milk. It is desirable to use the product at approximately the same temperature. Sift flour on top. We make dough.

Extinguish the specified amount of baking soda with vinegar, pour and stir. Immediately lay out the mass in the forms, place in the oven. It is undesirable to stand such a test for a long time, it loses splendor.

Planting and baking cupcakes in milk is done at 180. If they are in small silicone molds, then after 20 minutes you need to check the readiness. If the forms are not the smallest, then the time increases to half an hour.

The recipe does not indicate the amount of vinegar, but a full spoon is enough to extinguish the soda, or we take about the same amount of lemon juice. It also perfectly neutralizes the unpleasant taste of the ripper.

Option 9: Mini cheesecakes in silicone molds

Incredibly convenient to make mini-cakes with cheese in silicone molds. They bake well, do not stick, and will be a wonderful snack, breakfast or snack. Here is an Italian recipe.

  • ripper - 10 g;
  • 0.24 l of milk;
  • egg;
  • sugar - 30 g;
  • 120 g butter.

How to cook

If the butter is soft, then you can not melt it. We introduce eggs and milk to it so that the muffins are browned, pour sugar. Be careful with salt. If there is a lot of it in the cheese, then a couple of pinches are enough. We rub everything. Pour in dry ingredients.

We rub the cheese finely. We add parts to the dough so that the chips do not stick together, stir, transfer to silicone molds.

We fill silicone molds to ¾ of the height, put them in the oven and cook for 25 minutes at 175 degrees.

Italian cheese muffins are unrealistically delicious with the addition of various hot and fragrant spices; Provencal herbs will fit perfectly into such a dough.

Option 10: Cupcakes in silicone molds with filling

In silicone molds, it is very convenient and easy to prepare cupcakes with filling. For filling, you can take thick jam, jam, chocolate or pasta, here is a recipe with boiled condensed milk. Affordable and loved by all.

Ingredients

  • a glass of oil;
  • one glass of milk;
  • 80 g of sugar;
  • 0.5 cans of boiled condensed milk;
  • egg;
  • 1.5 tsp ripper;
  • 240 grams of flour (almost two glasses).

How to cook

In a bowl, mix one large egg with sand and milk, add oil to them, add salt and shake well. Pour flour together with the ripper, after which the dough is almost ready.

We collect the mass with a spoon and lay it out in silicone molds, filling them by a third. Half of the cake batter should be gone. Next, lay out the boiled condensed milk. Just pick up with a spoon and place in the center. Cover with a new batch of dough. We bake muffins with filling for half an hour at 180 degrees.

Cupcakes do not need to be taken out of the molds immediately, they can wrinkle and fall. But you can’t leave them in silicone for a long time. The bottom can become wet, damp.

Now no one is surprised by muffins. Recently, they are simply at the peak of popularity with us. And I think that this is not happening at all by chance - they are prepared so easily and simply that even children cook them.

Moreover, this unpretentious pastry always turns out to be very tasty. Which by the way encourages them to further culinary experiments. I have a guy friend who started his acquaintance with baking confectionery from these cupcakes, and now he bakes delicious complex cakes.

And indeed, if you have never baked before, and you want to start somewhere, then this delicious pastry is just what you need. By following just a few simple rules and having very little free time, you can have delicious homemade cakes every day. Sweet or not sweet!

Yes Yes! These delicious little items can be prepared just for breakfast, serving them instead of bread, or you can bake them for tea! And what is important, you can cook them so often, and not repeat at all - after all, with what kind of filling they are cooked. I will not even list them, because it will probably be easier to name the toppings with which they are not prepared!

I will tell you about all the basic rules and various fillings when I share recipes with you. But what needs to be said at the beginning is that these small cupcake-like confections come in English and American.

And just what we are used to cooking under this name is American samples. And the difference from their English counterparts, which are baked from yeast dough, is that they are prepared from flour with the addition of baking powder or soda, or both.

But do not confuse them with cupcakes, which have a different form of the finished product and a different cooking technology. In addition, muffins are fatter, although they are more “light - airy”, and if they are fatty, then they are more high-calorie, and their close American relatives have fewer calories.

And if you replace part of the oil in the recipe with low-fat kefir or yogurt, and part of the flour with oatmeal, they can even be practically dietary. But, more on that later.

Now let's move on to the recipes. There are a lot of them today, as they say, for every taste.

A classic American muffin can be prepared with bran, and usually without filling at all, or with candied fruits, nuts, dried fruits.

However, the recipe is basic. Knowing it, you can add various additional ingredients, change the taste and cook many different options. It will no longer be called classic, but its essence will not change from this.

We will need:

  • flour - 200 gr
  • sugar - 100 gr
  • butter - 100 gr
  • milk - 100 ml
  • egg - 1 pc.
  • baking powder - 1 teaspoon
  • vanillin - a pinch
  • salt - a pinch

Cooking:

1. Remove the butter from the refrigerator and cut it into small pieces.

2. Using a whisk, beat the egg into foam. Continuing to beat, add butter and vanilla.

3. Pour in slightly warm milk and mix everything well again until smooth.

4. Sift flour and baking powder into a separate bowl. It is best to use flour of the highest grade. As you know, these cupcakes get stale pretty quickly. Premium flour will slow down this process somewhat. Add sugar and a pinch of salt. Mix everything.

There is one simple rule, you need to add a pinch of salt to sweet pastries, and a pinch of sugar to non-sweet ones. This allows you to make pastries even tastier.

5. Add the liquid component to the dry mixture and mix with a spoon. In this case, the dough is no longer mixed with a mixer.

It is believed that to prepare classic muffins, it is necessary to separately mix the dry and liquid components, and then pour the liquid component into the flour and mix thoroughly with a spoon.

However, this rule does not always apply. And there may be recipes where the sequence of adding the ingredients may be slightly different! But not in the classic version, that's why its name is to do everything strictly according to the rules!

6. Spread the resulting mixture into silicone molds, filling them into 2/3 parts. They must first be lubricated with vegetable oil. Often, special paper inserts are also inserted into the forms, and the dough is already laid out in them.

When serving pastries in paper molds, it looks much more aesthetic, and besides, it is much easier to take them in a paper cup than just by hand.

7. Preheat the oven to 180 degrees.

8. Bake for 25 minutes until done. Readiness is determined in a way known to all. If you pierce the pastry with a toothpick and there is no batter left on it, then the pastry is completely ready.

9. Allow them to cool slightly and put on a dish. You can decorate with icing, grated chocolate or just sprinkle with powdered sugar.

To give a fresh taste to the dough, you can add the zest of half a lemon. And it should be remembered that you need to rub only the yellow part of the lemon, since the white part is bitter. It will give baked goods a bitter taste.

The next recipes for which muffins are most often prepared are recipes with chocolate. They are prepared both with pieces of chocolate, and simply with the addition of cocoa. Let's look at both recipes.

Recipe with chocolate and cocoa

We will need:

  • flour - 250 gr
  • sugar - 150 gr
  • butter - 150 gr
  • milk - 100 ml
  • egg - 2 pcs
  • cocoa powder - 5 tbsp. spoons
  • baking powder - 2 tsp
  • salt - a pinch

Cooking:

1. Melt the butter over very low heat. Add cocoa to it, mix. Then gradually pour in the milk, continuing to stir so that the mixture does not stick to the bottom.

2. Pour in sugar and stir until it is completely dissolved. Bring to a boil, then turn off the mixture and let stand to cool completely.

3. In the cooled mixture, beat one egg at a time and mix until the mixture is soft, elastic and uniform.

4. Sift flour with baking powder, add salt and add everything to the resulting chocolate mixture. Stir with a spoon; a mixer is not recommended. It should not be a very thick dough.

5. Lubricate the molds and put the chocolate dough into them, filling the mold into 2/3 parts. The dough will rise well during the baking process and the pastry will turn out beautiful and lush!

6. Preheat the oven to 180 degrees and bake for 25 minutes until fully cooked.

7. Remove the finished pastries from the oven, let cool and put on a dish. You can eat it as it is, or you can decorate with icing, cream or just sprinkle with powdered sugar.

Optionally, you can add any nuts or raisins to the dough. Or both together. Chocolate products with such an additive will only benefit. Remember which chocolate is tastier, regular or with nuts and raisins? However, someone prefers regular chocolate without any additives. Therefore, it's up to you to decide!

And now for the next chocolate recipe.

With chocolate chips

This is essentially the same recipe as the previous one, except that it is prepared not with cocoa powder, but with chocolate. I love to cook such pastries with dark bitter chocolate. In this case, sweetish products are obtained with a slight bitterness. But this recipe is likely to appeal to lovers of dark chocolate. And those with a sweet tooth will like this cake with milk chocolate.

We will need:

  • flour - 250 gr
  • sugar - 150 gr
  • butter - 125 gr
  • chocolate - 100 gr
  • milk - 150 ml
  • egg - 2 pcs
  • baking powder - 2 tsp
  • salt - a pinch

Cooking:

1. Melt the butter over low heat. Add about 1/3 of the chocolate to it. Break the remaining chocolate or cut into small pieces with a knife.

2. Constantly stirring. pour milk and add sugar. Bring to a boil and turn off the heat. Allow to cool.

3. Stir the eggs one at a time into the cooled mixture.

4. Sift flour with baking powder, add salt. Combine both mixtures and mix until smooth. The dough should be of such a consistency that the prepared pieces of chocolate can be placed in it.

5. Grease the molds with oil. If there are special paper inserts, put them in the forms. Fill them 2/3 of the way with the dough and stick in the chocolate pieces.

6. Preheat the oven to 200 degrees. Bake for 20-25 minutes until fully cooked.

7. Remove from the oven, let cool, then remove from the molds.

In this recipe, you can also add any nuts and raisins as additional ingredients. If you add nuts, carefully sort them out and peel them, otherwise troubles in the form of a broken tooth may arise!

With chocolate pieces according to the classic recipe

According to this recipe, we also prepare pastries with chocolate pieces, but we do it according to the classic version. And it is fundamentally different from the two already proposed chocolate recipes. Let's take note of that too.

We will need:

  • flour - 200 gr
  • sugar - 100 gr
  • vanilla sugar - 10 gr (bag)
  • butter - 100 gr
  • milk - 150 ml
  • dark chocolate - 80 gr
  • eggs - 2 pcs (large)
  • cocoa powder - 3 teaspoons
  • baking powder - 2 tsp
  • salt - a pinch

Cooking:

Since we have a classic recipe, we remember that according to it, all dry and all liquid components are mixed separately. And only then do they join.

1. Sift flour and baking powder into a bowl, add sugar, vanilla sugar, salt and cocoa.

2. In a separate bowl, beat the eggs with a whisk. Continuing to beat, gradually add milk, melted butter. Whisk everything well until smooth.

3. Pour the liquid mixture into the dry mixture and mix with a spoon. We do not use a mixer so that the dough does not fall off during baking. Mix quickly but thoroughly. The dough should not be very thick and may even be slightly lumpy.

4. Cut the chocolate with a knife into small pieces and add to the dough. You can leave a little chocolate, then stick them into the dough.

5. Lubricate the baking molds with oil, if there are paper liners, use them.

6. We spread the dough, filling the form into 2/3 parts. If you left chocolate, then press it on top of the dough.

7. Heat the oven to 175 degrees and put a baking sheet in it.

8. After 20-25 minutes, the baking should be checked with a toothpick. If they are ready, then the oven must be turned off, and the baking should be kept in it for another 5 minutes. Then take it out, cool a little and pull it out of the molds.

9. Pour tea into cups for everyone and eat your favorite pastries with pleasure!

But such a recipe offers us Julia Vysotskaya.

This recipe involves adding white and dark chocolate to the dough.

With cottage cheese according to the classic recipe

We will need:

  • flour - 160 gr (1 cup)
  • cottage cheese - 200 gr
  • sour cream - 50 gr
  • eggs - 2 pcs (large)
  • sugar - 200 gr
  • butter - 70 gr
  • baking powder - 1 teaspoon
  • soda - 0.5 tsp
  • salt - a pinch

Cooking:

1. Beat the eggs into foam with a whisk, add sugar and beat the mixture until the sugar is completely dissolved.

2. Not very fatty cottage cheese, you can take 9%, grind through a sieve and add to the resulting mixture along with vanilla sugar. Mix.

3. Add sour cream and melted butter, mix everything.

4. Sift flour and baking powder through a sieve, put a pinch of salt and soda into the mixture.

5. Pour the liquid component into the flour mixture and knead the dough without lumps of a uniform consistency.

6. Grease the molds with oil and put the dough in them, filling them into 2-3 parts.

7. Bake at a temperature of 180 degrees a little longer than usual for 30-35 minutes. The dough with cottage cheese is denser and therefore it takes more time to bake.

8. Remove the finished pastry from the oven, let it cool slightly. Sprinkle with powdered sugar and serve with hot tea or coffee.

With cottage cheese, as you know, raisins go very well. Therefore, if you wish, you can add it to the dough and bake pastries with an even more enriched taste!

If you add raisins, then it must be thoroughly washed and then dried. And only after that add to the dough, otherwise the water will not allow the dough to rise well in the molds.

orange muffins

I cook this recipe with oranges, but you can cook according to it by adding any fruits or berries. According to the same recipe, you can cook by adding lemons, tangerines, kiwi, apples, pears, or whatever you want. The recipe is just as simple. like everyone else, but the pastry itself is simply delicious.

We will need (for 12 pieces):

  • flour - 200-250 gr
  • sugar - 120 gr
  • vanilla sugar - 10 gr (sachet)
  • butter - 100 gr
  • egg - 3 pcs
  • baking powder - 1 hour. spoon with slide
  • orange - 1 pc.
  • walnuts - 12 halves
  • salt - a pinch

Cooking:

1. Remove the oil from the refrigerator in advance and let it stand for a while. Add sugar to it and beat with a whisk.

2. Add sugar and vanilla sugar, continue beating. Then add the eggs one by one.

3. Wash the orange and wipe it with paper towels. Grate the zest on a fine grater, using only the orange part. We do not touch the white part, it is bitter and will give the baking a bitter taste.

4. When all the zest is rubbed, squeeze the juice out of the orange. You can squeeze it straight with your hands, it's not difficult to do it. Juice will turn out about 100 ml, this will be enough.

5. Sift flour and baking powder through a sieve, stir in salt.

6. Add the liquid component to the flour mixture along with the juice, and mix thoroughly with a spoon. The dough should not be very thick. The recipe says that we need 200-250 grams of flour, it depends on how much orange juice you get.

7. Lubricate the molds with oil, if any, then place paper molds in them as well. Then fill them with dough for 2/3 parts. Put half a walnut on top. It will be delicious and beautiful.

8. Preheat the oven to 180 degrees. Bake for 30-35 minutes until fully cooked.

9. Eat with pleasure!

This recipe is one of my very favorites. Finished products are so delicate and refined that everyone is simply amazed. In addition, their taste is perfectly combined with the aroma of orange and gives an amazing note that evokes the most positive emotions!

Video on how to make Orange Carrot Muffins

And here is another recipe for orange cupcakes, but it also has carrots as an additive. Due to it, baking is incredibly tender and airy.

Even those who have never cooked can cook them according to this recipe. The only difficulty is not to forget to put anything into the dough from the ingredients. And for its kneading, we do not even need a mixer.

Look how handsome! And you know how delicious! Freshly squeezed orange juice gives them freshness and unforgettable taste. And also a light fudge that can be prepared in 10 seconds.

Be sure to cook this yummy. The recipe is just great!

banana muffins

It is also the favorite type of baking for millions of people. And they are prepared both with bananas alone and with additional additives. Since the banana is practically not felt in the baked product, I like to add nuts and pieces of chocolate to the dough, or one or the other.

Therefore, if you want to cook pastries only with bananas, then do not add any chocolate or nuts. All other ingredients are laid in the same proportions as in the recipe. And I, perhaps, will prepare them with additives.

We will need (for 20 pieces):

  • flour - 350 gr
  • milk - 300 ml
  • butter - 115 gr
  • sugar - 100 - 150 gr
  • egg - 2 pcs
  • baking powder - 2.5 tsp
  • baking soda - a pinch
  • vanillin - 10 gr (sachet)
  • salt - a pinch
  • banana - 2 pieces
  • dark chocolate - 80 gr

Cooking:

1. Mix all dry ingredients, namely sifted flour and baking powder, soda, sugar and salt. Add sugar to your taste, either 100 or 150 gr, depending on how sweet you are.

2. Now let's prepare the liquid component. To do this, beat the slightly melted butter together with the eggs until a smooth, homogeneous mass. We use a whisk for this.

3. Continuing to whisk, gradually pour in the milk.

4. Peel bananas and crush with a fork in mashed potatoes. It's okay if there are small pieces left. It's always nice when tangible pieces of fruit come across in baking. Although in this case, the entire banana will completely dissolve in the dough.

5. Chop or roll nuts with a rolling pin on a cutting board or towel. Sort the nuts beforehand, remove the partitions and the shell. It is not necessary to roll the nuts strongly, the pieces should remain quite tangible.

6. Chop the chocolate into pieces about 0.5 cm in size.

7. Combine the liquid component with the flour, add banana puree, nuts and chocolate. Leave some of the chocolate to press it into the products already directly in the mold. Mix the contents only with a spoon.

8. Lubricate the molds with oil, line them with paper blanks, if any, and fill 2/3 with the prepared dough.

9. Preheat the oven to 200 degrees and bake for 25 minutes until done. Readiness is determined with a toothpick.

10. We take out the finished products and let them cool slightly. Then we take it out of the molds and serve with hot tea or coffee. And someone likes to taste such hot pastries with cold milk!

11. Eat with pleasure!

The products turned out to be not at all sweet, only slightly sweetened, which my family really liked. Pieces of dark dark chocolate really appealed to me, since this is the kind of chocolate that I love the most.

And of course, the taste of the finished products was completely different than if we cooked them with only bananas. It turned out to be richer and more saturated.

Banana with carrots

If you do not use chocolate and nuts in the previous version, then you can cook pastries with the addition of carrots. And believe me, they turn out to be no less tasty and are eaten just in one breath. Here is the prescription.

We will need:

  • flour - 2 cups
  • butter - 125 gr
  • sugar - 100-150 gr
  • egg - 2 pcs (large)
  • baking powder - 1 teaspoon
  • soda - 1/2 teaspoon
  • vanilla sugar - 10 gr (sachet)
  • salt - a pinch
  • bananas - 2-3 pieces
  • grated carrots - 0.5 cups (1 piece)

Cooking:

1. Sift flour and baking powder, add sugar, vanilla sugar, soda and salt, mix.

2. Peel bananas and mash with a fork to puree or chop with a blender.

3. Grate carrots on a fine grater.

4. Remove the butter from the refrigerator in advance and let it stand for a while so that it becomes soft.

5. Beat the eggs with a whisk and then mix with the butter.

6. Combine dry and liquid mixture, add banana puree and grated carrots. Use a spoon to knead the dough.

7. Lubricate the molds with oil and bake for 25-30 minutes at a temperature of 180 degrees.

And here is another recipe with carrots.

From pumpkin with carrots

I began to cook such pastries quite recently, which is called the case helped! Not so long ago I cooked, and I had pumpkin puree left. It, of course, was very tasty in itself, and you could just feast on it.

But I had an unclaimed recipe that I had long wanted to cook. So I put the puree in the fridge until the cake was eaten. And finally, after a couple of days, I started making muffins.

We will need (for 20 pieces):

  • flour - 2 cups
  • butter - 125 gr
  • granulated sugar - 200 gr
  • eggs - 2 pcs (large)
  • sour cream - 3 tbsp. heaped spoons
  • pumpkin puree - 1 cup
  • shredded carrots - 1 cup (about 2 carrots)
  • vanilla sugar - 10 gr (sachet), or vanilla extract - 1 teaspoon
  • soda - 1 teaspoon
  • baking powder - 1 teaspoon
  • ground cinnamon - 1/2 teaspoon
  • salt - a pinch
  • nuts - optional (handful)

Cooking:

1. Slightly melted butter at room temperature with sugar using a whisk. Beat in the eggs one at a time and mix until smooth.

2. Add grated pumpkin puree. Mix with a spoon. To make the pie, I baked the pumpkin in the oven, then pulled out the pulp with a spoon and mashed it.

I think you can also use fresh pumpkin, just rub it on a fine grater. You can bake the pumpkin in the microwave or oven, and then mash it, or you can stew it in a small amount of water with the addition of honey and only then grind it into a puree.

In my opinion, all methods are good. Of course, this somewhat lengthens the quick way to prepare the muffins themselves, but you know, it's worth it. Their taste is simply amazing and unlike anything else!

3. Sift flour and baking powder into a separate bowl, add salt, soda and cinnamon, mix.

4. Mix both masses with a spoon and add carrots grated on a fine grater. The dough turns out to be a pleasant orange color, not very thick, well, not liquid, of such an average consistency.

5. Grease the molds with oil and line them with paper liners, if you have them. If not, then only molds will suffice. Fill molds 2/3 full with batter.

6. Preheat the oven to 180 degrees and place the baking sheet with molds in the oven for 10 minutes. Then reduce the temperature to 170 degrees and bake for another 10-15 minutes until done.

7. Take out the finished baking, let it cool slightly and eat with pleasure.

I must tell you that the pastries are very tasty, I would even say the most delicious. In addition, they turned out to be a beautiful sunny color, and this is very uplifting!

And now let's move on to another category of this pastry, which is baked with berries. So, for example, they are traditionally baked with blueberries in America in the state of Minnesota.

With American blueberries

Such pastries can be prepared with any berry, but I want to show them to you using the most popular ones in America (Minnesota), that is, with blueberries, although it can be replaced with blueberries.

  • eggs - 2 pcs (large)
  • baking powder - 1 teaspoon
  • salt - a pinch
  • blueberries - 175 - 185 gr

2. Sift flour and baking powder. Mix them with sugar and a pinch of salt.

3. Combine both mixtures, mix with a spoon. Add washed and dried blueberries. Stir so that it is evenly distributed in the dough.

Or you can not mix the berry with the dough, but simply put it in the middle, already in the mold itself.

4. Grease the molds with oil, insert paper liners, if any, and fill them 2/3 with dough. Try to evenly distribute the berries in them.

5. Warm the oven to 200 degrees and bake the products for 25 minutes, until fully cooked.

6. Get it out, let it cool down a little and eat with pleasure!

Exactly the same recipe can bake pastries with blueberries, or with blueberries and blackberries together. They turn out very tasty with strawberries, and in season, of course, it is better to cook with this tasty and fragrant berry. You can cook with raspberries and currants, both red and black. The principle is the same!

And you can't stop at berries. Cook with any fruit, and every time your pastries will be different and certainly delicious!

You can cook muffins not only with milk, but also with sour cream and kefir. I already had a recipe with sour cream, let's now look at how to cook this delicious pastry on kefir.

It turns out that I have accumulated so many muffin recipes. To be honest, I didn't even know that I had so many of them. However, this is not all.

After all, there are still English recipes and they can not be ignored. After all, it is believed that it was in England that they began to cook them the earliest. But I want to remind you that they are made from yeast dough, and when ready, they look like small lush cakes that are cut lengthwise into two halves and smeared with some kind of jam or butter.

Classic English muffin recipe

We will need:

  • flour - 500 gr
  • butter - 200 gr
  • milk - 200 ml
  • sugar - 100 gr
  • egg - 4 pcs
  • dry yeast - 0.5 - 1 sachet
  • salt - a pinch

Cooking:

Read the instructions for dry yeast carefully. It should be written on it how many grams are in the bag and how much flour it is designed for. Proceed according to the instructions.

1. Sift flour into a bowl, add yeast and mix. Then add sugar and salt.

2. Warm the milk slightly in a water bath, add the butter, cut into pieces, to it. So it will disperse faster. Stir so that the butter is completely dispersed, while it is important that the milk does not become too hot. The optimum temperature for oil dissolution is 30-35 degrees.

3. Remove and let the milk cool slightly.

4. Beat the eggs into foam with a whisk. And gently mix them into the milk with butter.

5. Mix the dry and liquid ingredients and put in a warm place for 10-15 minutes to revive the dough. At the same time, it will begin to bubble slightly. The dough should be a little thicker than the pancakes.

6. Put the oven on heating, we need a temperature of 180 degrees.

7. If you use molds, then put the dough in them. And you can put the dough with a tablespoon on a baking sheet greased with vegetable oil and bake them in this form. In this case, they will turn out in the form of small cakes, which will be convenient to cut and smear with jam.

8. Bake for 15 minutes, give or take a little, it depends on the characteristics of the oven.

Sometimes they are also fried in a pan using oil.

9. Get it out, let it cool down a bit. You can lightly sprinkle with powdered sugar.

Serve for breakfast with jam and butter. Agree that few people would refuse such a breakfast!

Well, these are all sweet pastry recipes. But at the beginning of the article, I said that you can cook them and not sweet. And it's worth doing, as there is nothing better for breakfast than savory muffins. And you can cook them with just about anything. The test recipe allows you to do this with a clear conscience.

I will now offer you a couple of recipes for such baking, and then, in order not to repeat myself, I will just give you ideas on how to cook them again. After all, a lot of recipes have already been given, and according to any of them, you can cook unsweetened pastries with absolutely any fillings.

Recipe with cheese and bacon

I specially picked up a video that shows very clearly how appetizing and tasty unsweetened cupcakes are. And having prepared these for breakfast, you will surely please your whole family on a Saturday or Sunday afternoon.

As you can see, the recipe is very simple and bakes very quickly. Bacon can be safely replaced with any other type of meat or chicken, or you can use sausages, sausages, or regular sausage.

Recipe with cottage cheese and zucchini

Another non-traditional unsweetened recipe for making pastries for breakfast.

We will need:

  • flour - 200 gr
  • cottage cheese - 200 gr
  • butter - 100 gr
  • egg - 3 pcs (large)
  • zucchini - 1 small
  • dill - 5-6 sprigs
  • baking powder - 1 teaspoon with a slide
  • salt - 1/4 teaspoon
  • sugar - a pinch

Cooking:

The dough for such baking should be prepared without delay. Zucchini will give juice, but we do not need it. Therefore, we do everything quickly, and for this, everything should be at hand.

1. Immediately prepare the baking molds. Lubricate them with oil, or put special paper liners in them.

2. Remove the butter in advance so that it melts slightly.

3. Beat eggs with a whisk and mix with cottage cheese. Cottage cheese can be used with medium fat content and any consistency, even coarse-grained, even fine-grained.

4. Use medium-sized zucchini so that there are practically no seeds in it. Such a zucchini will not give a lot of juice and pastries will rise better.

Grate the zucchini on a medium grater, squeeze the juice from it if necessary and add to the egg-curd mass.

5. Add soft butter, chopped dill, sugar and salt to the resulting mixture, mix with a spoon.

6. Sift flour and baking powder there, mix.

7. Fill the molds to 2/3 of the volume.

8. Put in an oven preheated to 180 degrees and bake for 25-30 minutes until fully cooked.

9. Let it cool down a bit and eat with pleasure.

  • with black olives or olives

And all these ingredients can also be combined with each other.

As you already understood, there are simply a huge number of recipes for preparing this simple and unpretentious pastry. It is due to the fact that the dough for them is prepared the simplest, you can add the most diverse fillings to it.

In order for your cupcakes to always turn out risen and tasty, let's take a closer look at the basic rules for their preparation. In this case, you will not be tied to any of the recipes, but you can always cook pastries to your liking.

1. It is believed that the correct proportions for baking should be 2 parts flour, 2 parts liquid, 1 part butter and 1 part eggs. That is, if you use 200 grams of flour, then you will need 200 grams of milk, 100 grams of butter and 1 egg. Sugar can be added to your taste, someone likes sweet pastries more, someone less sweet. Usually 100 grams of sugar is added to this amount of flour.

2. A pinch of salt is always added to sweet pastries, and a pinch of sugar to unsweetened ones.

3. If fermented milk products are used, then a little soda should be added along with the baking powder.

4. A feature of the preparation is that all dry components are mixed separately, and liquid components - separately. After that, the liquid components are poured into the dry ones.

5. When mixing the liquid and dry parts, use only a spoon. The dough should not be kneaded for long, just mix and that's it. It is allowed that the dough may remain slightly lumpy.

When kneading with a spoon, the dough is less porous. And when kneading with a mixer, on the contrary, it becomes too airy.

6. Simple dough can make baked goods go stale quickly. To prevent this from happening, the molds must be lubricated with either butter or sunflower oil.

If we also use special paper liners, then it is not necessary to lubricate the form,

7. Molds can be used silicone or any other. There are special paper ribbed liners. You can mix them into basic shapes. They also keep baked goods from drying out quickly. In addition, such pastries are more convenient to eat and store.

8. If you did not find molds, then you can make homemade ones from baking paper, tie them with twine and bake in this form. It will be not only tasty, but also beautiful. The presentation method will surprise and delight everyone present.

9. When the pastries are ready, they must be allowed to cool slightly. Then put on a plate and cover with a towel. So it will retain its softness longer.

10. Cupcakes are baked at a temperature of 180 to 200 degrees. Depending on the recipe, sometimes the temperature is initially set alone, and after a short amount of time, it decreases.

11. The readiness of baking is determined with a toothpick; when pierced, no batter should remain on it. And when pressed - baking should be elastic.

12. Readiness can also be determined visually. Ready-made pastries should rise well, brown and easily move away from the walls of the mold.

13. If, for some reason, you couldn’t eat everything at once, then the pastries can be frozen. To do this, wrap it in cling film, release all the air and place it in the freezer. You can take it out anytime and heat it up in the microwave.

These are the basic rules for preparation and storage.

You can also focus on how to cook your favorite pastries with fewer calories. For this you can:

  • reduce the amount of butter. Add more kefir, yogurt or milk with a small percentage of fat.
  • sugar can be replaced with honey or fruit and berry purees
  • dairy products can also be replaced with fruit juices or fruit purees.
  • flour can be partially replaced with oatmeal, or flour with bran can be used, or even fiber, which can be purchased at any pharmacy.
  • by the way, you can cook pastries from cornmeal, this is how they prepare this pastry in America.

What is the difference between muffins and cupcakes?

The closest relative of our today's hero is a cupcake. Sometimes these two concepts are confused and do not see much difference in them. Now let me tell you how they differ.

Well, first of all, they have different shapes. Cupcakes are usually baked large, round or rectangular. And our products are baked in small molds.

You will say that there are also small cupcakes baked in small molds. I agree with you. To distinguish them, there are other differences.

Secondly, sweet dough is used in muffins, they are more fatty and therefore more high-calorie. In cupcakes, the oil can be partially vegetable, and when consumed, it is more noticeable. In muffins that used a good 82.5% oil, it is not felt at all.

Thirdly, a significant difference is in the method of kneading the dough. When preparing dough for cupcakes, all components are carefully knocked down with a mixer, and this makes the dough more airy. And for their fellows, the dough is kneaded with a spoon, and even then quickly enough. Therefore, it can turn out to be somewhat lumpy and heterogeneous.

Fourthly, when preparing our pastries, dry and liquid components are first mixed separately, and only after that they are combined. For cupcakes, sugar is mixed with butter, and then other ingredients are added.

Somehow I came across an interesting comparison, and I remember it, but the meaning is that muffins are a cross between a cupcake and a mini-cake or cupcake. If you add more sugar to the dough, and decorate the finished pastry with cream, you get a mini-cake. And if, on the contrary, reduce the amount of sugar, and add milk and eggs, you get a cupcake.

And so another relative appeared - this is a cupcake. What is it, and how does it differ from its counterparts.

Cupcake "cupcake", as you probably already understood, is a mini-cake. In past centuries, it was baked in small ceramic cups, hence the name.

It is very easy to distinguish them from their relatives - they are decorated with cream, icing, whipped cream and other decorations that are used to decorate all large cakes.

Well, now that we have dealt with all the nuances and secrets of cooking, found out how they differ from their closest relatives, and also got acquainted with many recipes, we can safely start baking.

Sour cream cake recipe

Instead of milk, I suggest putting sour cream in the dough for a cupcake. This product helps to increase the porosity of the dough, so the cake is more airy.

Delicate cupcakes are prepared from:

one egg; one and a half glasses of flour; 2 tbsp. spoons of sour cream; 0.250 kg of sugar; 0.130 kg sl. butter and ½ teaspoon baking powder.

How to make cupcake batter:

  1. Take a mixer and beat the eggs with granulated sugar at high speed. Try to get a stable foam (as in the photo), thanks to which the cupcakes will be airy and tender.
  2. Pour the baking powder and flour into the dough after adding the softened butter and sour cream.
  3. Lubricate a metal mold with a hole in the middle with any fat (this technique is not necessary with a silicone mold).
  4. Load the dough into it and put it to bake, literally after 40 minutes the cupcakes can be taken out of the oven.

Choose the decoration method of your choice. Fudge or powdered sugar will work either way, just one recipe will take you a little longer. See my other recipes.

Baking dish

Depending on the cake recipe, completely different forms are used. So for the preparation of muffins and cupcakes, paper, silicone or metal forms are used. When baking small cupcakes, the risk that they will not bake inside is minimal, but they can burn or dry out. Therefore, it is better to use paper or silicone molds for their preparation.

Classic cupcakes are made in rectangular or round shapes with a hole inside, so they bake better. Most of the questions are related to the choice of mold material: silicone or metal?

Silicone molds are practical and convenient: they are easy to clean, take up little space in the kitchen, do not interact with food, easily withstand high temperatures in the oven, microwave, and low temperatures in the freezer. It is easy and convenient to get pastries from the silicone mold.

However, as many who have ever cooked in such forms have noted, cupcakes often remain raw on the inside, even though it may burn on the outside. Silicone has a significantly lower thermal conductivity (almost 40 times!) than metal, as a result, that part of the cake that is in the container is baked more slowly. And raising the cooking temperature does not always help, as the open part can burn.

When choosing a silicone mold, it is better to be guided by the following tips:

  • It is better if the form is with low sides and a large base diameter. In a form with high sides and a small base, it is very likely that the pastries will remain raw inside.
  • Choose pans with the thinnest walls as possible, so it will take less time for the cake to fully bake.
  • Thin silicone molds can be very unstable, so it's best to use kits consisting of a mold and a metal stand.
  • It is very easy to get a finished dish from a silicone container, but difficulties can arise if there is a pattern with small details.
  • You can solve the problem with baking in a silicone container if you increase the baking time by about ¼ and bake the cake for an additional 10 minutes, turning on the oven only for heating from below. All of course strongly depends on the form itself and on the oven.
  • Metal molds are known to all lovers of baking. The most common material is steel. Various non-stick coatings are applied to modern steel molds, thanks to which the pastry does not burn and is relatively easy to pull out. The most convenient metal forms are those in which the side is removable and the bottom is replaceable. In this form, you can cook pastries according to the cake recipe and according to the pie recipe.

Mixing container

Almost any kneading dish for a cake recipe will do. The main thing is that there are high sides, which will prevent splashing of the dough.

Mixer

Making the dough for the cake recipe calls for both egg beaters and kneading beaters.

Eggs

You need a lot of eggs for baking, as well as for meringue and always fresh. Before breaking eggs into a bowl, it is advisable to wash them well with soap and water, since it is on the surface of the shell that a large number of pathogenic bacteria can be found.

Flour

According to the classic cake recipe, wheat flour must be taken, of the highest grade. However, buckwheat, rye or corn flour can also be used. The rules for choosing flour are obligatory for everyone: the flour must be fresh, without foreign impurities and sifted immediately before kneading the dough.

The freshness of wheat flour can be determined by tasting it. Fresh flour should not be bitter, and it should not have a salty taste.

Baking powder

Baking powder for dough, it is also baking powder, and it is also soda mixed with citric acid, is used to give splendor and softness to baking. The substances that make up the baking powder, getting into a humid environment, enter into a chemical reaction, as a result of which carbon dioxide is released. It is the gas bubbles that create small cavities in the dough and make it swell before our eyes.

In industrial baking powder, the proportions of soda and acid are calculated in such a way that the reaction proceeds without residue. At home, getting a baking powder is very simple; this will require soda and citric acid in a 5: 3 ratio.

Housewives usually mix soda and vinegar separately from the dough, which is wrong, since carbon dioxide almost completely evaporates before it enters the dough. It's best to knead the baking soda and acid separately directly into the cake batter, as it will rise significantly more.

Vanilla sugar

Vanilla sugar is added to the dough to give it a vanilla flavor. Making excellent vanilla sugar at home is very easy. It is necessary to take a small glass or tin jar that closes tightly, fill it with fine sugar and carefully place a vanilla pod in the very center. After 2 weeks, the vanilla flavor has soaked into the sugar that it is perfect for making any baked goods, including muffins.

chocolate bar

Nuts and fruits have traditionally been used as filling in the cake. Quite often, cupcakes are prepared with chocolate and berries. There are recipes for cupcakes with pumpkin, melon and honey.

We will cook a completely non-dietary, tasty and sweet cupcake, the recipe of which involves the use of a chocolate bar. Children especially love this cake. Adults with a sweet tooth also never refuse a Snickers cupcake, especially since, if you count, one serving of the cupcake contains only 25 grams of a sweet bar.

Varieties of cake recipes

The most powerful impetus for the emergence of a great variety of cupcake recipes was the discovery of sugar. Sugar made them sweeter, reduced the amount of fruit in the composition and focused on the dough.

With the advent of chocolate in Europe, bakeries have become realms of bliss. In Barcelona, where the first European buyers tasted chocolate, there is a magnificent chocolate museum. Several exhibits are dedicated, including chocolate muffins.

The cake recipe has become a hallmark of many cities and countries. Traditional English muffins, cupcakes, German stollens, Swiss birnenbrots are just the most common cupcake recipes in Europe. All of them have much in common with the classic sweet bread recipe.

English muffin

Great Britain is a country that is famous for its rich history and traditions of tea drinking, dating back to the 17th century. One of the obligatory dishes accompanying 5 o’clock tea (five o’clock tea) was a muffin, although in Foggy Albion it appeared much earlier than tea itself.

A muffin is a small, portioned cupcake with a base 5 to 10 centimeters in diameter. It is assumed that the name "muffin" came to Britain with the coming to power of Duke William of Normandy from France, where "moufflet" means sweet bread. Some historians claim that the name comes from the German "muffe" (a type of German roll).

Muffins were made from wheat, oat, and later corn flour. The ease and speed of preparation of miniature sweets allow you to bake them every day. The cake recipe began to be supplemented with various components, and by the 17th century it was already impossible to imagine an English tea party without muffins with jam or chocolate inside.

Today, special silicone or metal molds can be used to make muffins. Muffin dough is prepared according to the classic cupcake recipe.

As the name suggests, a cupcake is a mug cake. Like a muffin, a cupcake is a fluffy cupcake made according to a classic recipe. A cupcake is distinguished by the presence of cream, roses, nuts, chocolate chips or icing on the surface of the cupcake.

Mentions of cupcakes have been found in cookbooks from the 18th century. The English and French nobility paid great attention to confectionery on their table. Each nobleman wanted to impress the guests with delicious treats. Cupcake recipes were bought and sold for a lot of money.

german stollen

The first mention of stollen in German sources dates back to 1329. For Christmas, the bishop of one of the cities in Saxony was presented with a snow-white oval-shaped sweet bread as a gift.

At the beginning of the 14th century in Germany, the cake recipe provided for the use of only lean products, which the local aristocracy did not like very much. The Elector of Saxony appealed to the Pope several times asking for permission to add butter to the stollen. Permission was obtained only in 1491.

From now on, butter could be used in the cake recipe, but only with obligatory repentance in the form of a monetary donation for the construction of the cathedral. The next step in improving the stollen recipe was the addition of nuts and dried fruits, and then the use of yeast dough.

Dresden Stollen is the most famous cake recipe baked in Germany to this day. In Dresden, the townspeople celebrate Stollen Day on a grand scale. Every year bakers compete to bake the biggest, sweetest and most unusual stollen. In 2005, the giant cupcake was listed in the Guinness Book of Records, as its weight was more than 4 tons.

kulich

In Orthodox countries, Easter cakes have been one of the symbols of the celebration of Easter for more than a thousand years. To prepare a yeast dough recipe for Easter cake, a large amount of eggs, butter and dried fruits are required.

The recipe for Easter cake has not changed much since the 13th century, when chronicles mentioned the production of special bread in honor of the holiday. Easter cake, along with colored eggs and Easter, is the main dish at the Easter meal.

Due to the complexity, sometimes Easter cakes are prepared according to the classic cake recipe and decorated not only with powdered sugar, but also with icing, chocolate, marzipan and nuts.

In Italy, panettone is baked for Christmas according to a recipe that came from Milan. According to the most romantic legend, a student of a Milanese baker came up with a cake recipe for his beloved. The main feature of panettone is that it is not baked to the end. In the very center, the panettone remains slightly moist, sticky and undercooked in appearance.

Pannetone is served with tea or coffee, and only hot. It is important to try the core before it cools down and dries out. The pannetone recipe involves the addition of candied fruits, nuts and spices.

Cake Recipe History

The cake recipe is one of the earliest inventions of confectioners. As a sweet pastry, cupcakes began to be prepared in ancient Rome and Egypt. They appeared not so much because of cravings for sweets, but because of the need to preserve the fruit crop for as long as possible.

The ancient Romans mixed pomegranate seeds, nuts, raisins with barley flour and got sweet soft cakes. The ancient Egyptians used dates, lemons, and oranges to make cakes. As historians suggest, it was from Egypt that the recipe for a cake came to Rome, cooked not in the form of a cake, but in the form of lush bread.

As the story goes, at the beginning of the first millennium, cupcakes became very popular in the Middle East. Here, nuts and honey were the main ingredients in the cake recipe. After the collapse of the Roman Empire and as Christianity spread, ancient cultures began to decline, and with them culinary traditions.

The era of the early Middle Ages was marked by a great migration of peoples, wars and a food crisis. Sweet pastries with fruits and nuts were banned, and then the cake recipe was completely forgotten.

And only with the flourishing of European states in the late Middle Ages did the culinary arts begin to revive. Knights and conquerors began to gradually turn into rich noble nobles, who were no longer building defensive fortresses, but luxurious houses. Art began to flourish. A rich villa could not be imagined without paintings and frescoes.

Rich meals became an obligatory event in the social and political life of the nobility. The art of cooks and confectioners has become worth its weight in gold. The best cupcake recipes instantly became the subject of a culinary hunt.

The cupcake recipe is based on biscuit dough and a sweet filling. Easter cakes, which are usually cooked on yeast dough, have become a variety of cupcakes. If in the early Middle Ages the church did not approve of the use of sweet pastries, calling for modesty, then by the 13th century everything changed and luxurious cupcakes became an attribute of the Christmas holidays.

Cake recipes may include the use of cottage cheese, kefir and sour cream. Dairy products make it more tender and juicy. Cottage cheese cake recipes are lower in calories and can be included in the diet even of people seeking to lose extra pounds.
