Ingredients

  • 250 gr. yeast-free puff pastry
  • 2 pcs. pear
  • 50 gr. walnuts
  • 50 gr. Dor Blue cheese
  • 50 ml. rum
  • 50 gr. brown sugar
  • 50 gr. butter
  • 1 PC. egg yolk
  • 1/2 orange orange juice

Cooking method

    Remove puff pastry half an hour before cooking. Peel the pears, cut out the core, cut into slices about 0.5 cm thick. Heat the butter in a pan with a thick bottom, add the pears, orange juice, Cointreau (or rum) and sugar, simmer for 10-15 minutes until the pears are soft and the liquid evaporates.

    Roll out the dough quite thinly (about 0.5 cm), on a sheet of parchment, make a cut along the edge of the dough with a sharp knife at a distance of 1 cm, without cutting through the dough. Next, the dough can be transferred on parchment immediately to the oven grate, or you can put it in a suitable size mold.

    Grind the nuts with a knife into medium pieces, crumble the cheese into medium-sized cubes. Fill the middle of the dough with pears, walnuts and cheese. Smear the cut "frame" with egg yolk.

    Bake pear pie in the oven at 180 degrees for about 20 minutes, until the dough is browned and the “frame” rises.

Pear and cheese- a classic combination. Cheeses change, but the pear remains. Pear and gorgonzola are already on the site in the form and. It's pear and goat cheese time! This recipe pirogue, which combined not only these products created for each other, but also honey, rosemary and black pepper, I found on the Ali blog. It was impossible to pass by such an appetizing combination.

This pie is a snack and goes well with white wine. And given the price of goat cheese, it also becomes a festive dish. But this cake can pleasantly surprise guests.

It is prepared very simply and easily, you will only need to defrost the dough, put the ingredients on it and then just serve the cake to the table. In our Russian stores, puff pastry is sold either in two square sheets per pack, or in one long sheet. I had the last option.

For 1 large pie or 2 smaller ones:

  • 1 sheet rectangular puff pastry sheet (or 2 square sheets, then you will have two pies)
  • 2-3 medium pears (may need a little more)
  • 200 gr goat cheese
  • 2 tbsp lemon juice
  • about 1 tbsp. Sahara
  • fresh rosemary leaves (I only needed the top)
  • liquid honey
  • freshly ground black pepper

Defrost the dough and place on a baking sheet lined with parchment paper. Slightly wrap the edges around the entire perimeter, literally by 1-1.5 cm, and gently press them with a fork towards the center (as in the photo).

Pears cut in half lengthwise, remove the core and cut into thin slices also lengthwise. Drizzle with lemon juice to keep them from browning. Lay the pear slices on top of the pie. It really doesn't matter how you put them. For example, like Ali, I have two rows of slices laid out in opposite directions.

Send pie in the oven, preheated to 220 degrees, for 20 minutes, until the dough is golden brown.

Remove the cake from the pan and let it cool for 5 minutes. Then pour honey on top of it (it took me 3 teaspoons). The amount of honey is entirely up to your taste, you can add it quite a bit or, on the contrary, pour honey over the cake. Leaves rosemary separate from the stem and finely chop. Sprinkle crushed pie rosemary and freshly ground black pepper.

Keep in mind that fresh rosemary it has a pronounced smell and it is needed here quite a bit, literally 5-6 of these small leaves, otherwise it will kill all other tastes and aromas.

Serve this pie It's best when warm, but it's still delicious when cold.

In addition to taste, this pear pie has another undoubted advantage: to cook it, you need to spend as much as five minutes of your time, the most difficult manipulation is to cut the fruit thinly. It's great to serve such a luxury for breakfast: woke up, got up, in a half-asleep state, laid out all the ingredients on puff pastry that had thawed overnight, and hid in the oven. Ingredients:

1 pack of puff pastry without yeast (450 g);

3 large pears;

sprig of fresh rosemary;

2 tbsp. l. sour cream;


We unfold the puff pastry, put it immediately on a baking sheet covered with parchment paper or a silicone mat.


Spread evenly with sour cream.


Separate the rosemary needles from the stem.


Finely chop.

We get cheese. If there is no brie at home, you can replace it with camembert and even other blue cheese.

Not so long ago I tried to make a pear pie with Dor Blue cheese on puff pastry and just fell in love with it! Preparing the pie is very simple, it turns out beautiful, with a delicate fragrant filling and crispy ruddy dough.

Let's prepare all the products and cook this wonderful cake.

Defrost puff pastry without yeast. Spread the dough in one layer on a baking sheet, pre-covering it with baking paper.

Wash the pears, remove the core and cut the pulp of the pears into slices. If the peel of the pears is very rough, it is better to remove it.

We spread the slices of pears overlapping on the dough in two rows, slightly retreating from the edges of the dough.

We pinch the edges of the dough, forming the sides.

Cheese "Dor Blue" crumble hands. Spread the cheese evenly over the pears. Also add brown sugar.

My sister has a very comfortable home: a soft sofa, a fat cat lounging lazily by the radiator, hot tea with bergamot and seductive confectionery aromas that seep from the kitchen in a thin stream.

Here is the recipe for this pear-cheese miracle.

We will need:

Puff pastry (the easiest way is to take ready-made frozen dough)

Pears (preferably not too soft)

Blue cheese (Dor Blu is great)

A little cream (10% fat)

A few raspberries (for garnish)

First of all, we take the dough out of the package and leave it to defrost at room temperature.

Now you need to cut the cheese into small pieces.

Put the chopped cheese in a bowl, and add a little cream.

Now mix thoroughly to get a homogeneous mass. If small lumps remain, no big deal.

Cut the pear into small slices about 0.5 cm thick

Now roll out the dough, but not too thin.

Carefully transfer the dough to a baking sheet, after spreading a sheet of special baking paper on it.

On the dough, first spread an even layer of pears.

Then evenly distribute the cream cheese mass on top. And carefully tuck the free edges of the dough, forming the sides of the pie.

We put the cake in a preheated oven to 180 degrees. Bake for 20-25 minutes until golden brown.
