Trout is a very tasty and tender fish, even just fried trout has an exquisite taste. But if the usual fish fried in a pan is already a little boring, then I recommend cooking this tender trout with cheese and garlic sauce. Don't let the word "garlic" scare you, a barely audible garlic accent only emphasizes and complements the extraordinary taste and aroma of trout. Ingredients:

  • 1 kg. trout fillet
  • 150 gr. hard cheese
  • 4 tbsp mayonnaise
  • 2 eggs
  • 2 garlic cloves
  • dill or herbes de provence
  • vegetable oil
  • lemon (optional)
  • For this recipe, we need trout fillet. In order not to bother with cleaning the fish, the easiest way is to buy pre-packaged fresh fillets. Cheaper, of course, to clean and gut yourself. We wash the gutted trout in cold water, remove the head, fins, spine and ribs.
  • Before frying the trout, prepare the sauce. To do this, take two eggs, add mayonnaise and finely chopped garlic, a little salt.
  • We beat everything with a blender.
  • Also pre-three cheese on a coarse grater.
  • And now we take a clean frying pan. Pour in some vegetable oil. Once the pan is hot, add the fish. If the whole fillet does not fit in the pan, like mine, then cut into two or more pieces.
  • Fry the trout on a high enough heat to quickly form a golden crust. Fry on one side for literally one minute, if the fish is large, and therefore thick, then fry for a maximum of two minutes.
  • Turn the trout over to the other side, fry for no more than a minute, otherwise the fish will dry out. At this stage, salt the pieces of fish.
  • Fry all pieces of trout. Then we put the fried trout on a hot pan, arrange the pieces tightly to each other. Sprinkle trout with cheese and garlic sauce.
  • Cover the pan with a lid and simmer the trout over low heat until the sauce thickens. This only takes a few minutes. We control the process so as not to miss the moment. As soon as the egg in the sauce begins to curl (thicken), turn off the heat.
  • We carefully transfer a very beautiful and fragrant dish to plates, sprinkle with Provence herbs or finely chopped dill and serve. rainbow trout- very tasty, delicious fish of the salmon family. I'm just sure that this will be delicious in any form: fried, boiled or baked in the oven. Of course, it is advisable to cook it exclusively chilled, or when it has just been caught and it is still moving in your hands, and so that it is not less than a kilogram apiece. But, to my regret, such fish is simply impossible to find if you live in the center of Russia, where even in large supermarkets like Auchan you can’t always find such delicious food.

Therefore, at my disposal was a frozen Rainbow trout which has already been gutted and cleaned.

For cooking you will need:

  • Rainbow trout -1 pack.
  • Bulb x 1
  • Lemon ½ pc.
  • Mayonnaise - 50 gr.
  • Cheese -50 gr.
  • Salt, pepper and spices to taste.

Trout must be thawed, preferably in natural conditions, without a microwave oven. Put in a baking dish, I put foil on the bottom, I really like to use it lately, the form stays clean and it's much easier to take out the food.

Sprinkle the trout with salt, pepper and your favorite seasonings. I use sucoria for fish.

Cut lemon and onion into half rings.
Onion, put inside the fish, and the lemon must be placed in the cuts made in the fish, it looks more appetizing.

Top the fish with mayonnaise and grate the cheese on a fine grater.

We send the rainbow trout to the oven for 20-25 minutes at 180 degrees no more, during which time the fish will have time to fry, and an appetizing cheese crust will form on top.

You can cook trout in various ways, for example, bake it in the oven and serve it under cheese - it will turn out very tasty, such a dish is wonderful for a light festive lunch or a romantic dinner.

When choosing trout, pay attention to its freshness, because for fish this is the main indicator of product quality. The fish should have a fresh look and a normal fishy smell, the color of the gills is bright red, whole skin, shiny scales and clear eyes. The color of a trout can vary considerably even within the same species, so the color in this case is not an indicator.

Trout baked with cheese

Ingredients:

  • trout - 1 pc.;
  • hard cheese (for example, Dutch) - 100 g;
  • lemon;
  • different greens (coriander, parsley, basil) - a thick bunch;
  • vegetable oil (odorless).

Cooking

We preheat the oven. We clean the fish, remove the gills, gut and rinse. You can cut the fish into steaks or fillet (without removing the skin) and cut portions from the fillet (head fins tail and the rest will go to the ear or fish soup). will bake for 5 minutes longer.

In any case, sprinkle pieces of fish with lemon juice. Lubricate the bottom of the refractory mold with oil and evenly, but not too often, spread the sprigs of greenery along the bottom - this will be the substrate. Lay the steaks or pieces of fish on top (then skin side down). By this time, our oven had just warmed up sufficiently. We place the form with the fish on the wire rack, you can close the form with a lid or foil if you want a well-steamed fish. If you want a ruddy crust, you do not need to close it. We bake the trout at a temperature of about 180 degrees C for about 20 minutes, the steaks a little longer.

We rub the cheese on a medium or large grater. Remove the mold from the oven and turn off the fire. Sprinkle generously on each piece. fish with cheese and return to the cooling working chamber for 5-8 minutes (depending on the characteristics of this oven). In no case should the cheese flow, but only slightly melt. Guess this moment (this is visually easy to determine) and quickly remove the form from the oven. Delicious trout with cheese in the oven is ready. We spread portioned pieces of fish on plates and decorate with green leaves.

It is good to serve baked trout with cheese, stewed young beans, pickled asparagus, fresh vegetable salads, fresh fruits, light wines.

If you need a full dinner, you still need to prepare the potatoes. It is added to the fish in the middle of cooking so that it is saturated with the taste and smell of trout.

Cooking process:

  1. Cut the trout into pieces 2 cm wide. Dry with a paper towel, sprinkle with salt, pepper and sprinkle with lemon juice.
  2. Cut the onion into thin rings. Chop greens. Cut the tomatoes into circles.
  3. Put greens, onions and fish in a dry baking dish. Sprinkle the rest of the onion and tomato slices on top.
  4. Put the trout in a preheated oven for 10 minutes.
  5. Take out the container and put the pieces of cheese on top. If the dish is prepared with potatoes, at this stage it must be added, having previously boiled until half cooked. Potatoes need to be salted and greased with oil so that it browns.

Cook for 25 minutes until golden brown. The dish is best served immediately from the oven while it is hot.

Recipes for trout with cheese and carrots

This simple dish is easy to prepare. Ingredients:

  • trout - 800 g;
  • large onion;
  • carrots - 1 pc.;
  • hard cheese - 100 g;
  • lemon juice - from 0.5 lemon;
  • seasoning for fish - to taste.

Cooking:

  1. Sprinkle the fish with seasoning, sprinkle with lemon juice and leave for half an hour. In the meantime, coarsely grate the carrots, cut the onion into rings.
  2. Lightly fry vegetables, coarsely grate hard cheese.
  3. Put the roast and fish in a baking dish and place in a preheated oven.
  4. In 20 minutes. take out the dish and sprinkle it with cheese.

Cook for 15 minutes until crusty.

Trout with cheese in foil

It is better to take ready-made steaks - 4 pcs. Prepare from the rest of the ingredients:

  • soft cheese - 150 g;
  • tomatoes - 4 pcs.;
  • half a lemon;
  • a bunch of dill;
  • mayonnaise - 100 ml;
  • sunflower oil - 2 tbsp. l.
  • salt, pepper or seasonings for fish - to taste.

Cooking:

  1. Sprinkle the fish with lemon juice and sprinkle with seasonings.
  2. Finely chop the greens, cut the tomatoes into slices, grate the cheese.
  3. Make 4 pockets out of foil and grease them inside with oil. Lay out the steaks, add greens, tomato slices and cheese. Grease the cheese with mayonnaise.
  4. Close the pockets tightly and place in the oven for 30 minutes.

For 10 min. before the end of cooking, the foil must be slightly opened so that the cheese acquires a golden crust. Serve with new potatoes and lightly salted cucumbers.

Trout prepared according to these recipes is not a shame to put on the festive table.
