You can take any meat for hedgehogs, but I prefer to cook minced pork with beef, it seems to me the most delicious. I do not advise you to take ready minced meat. Firstly, it cannot be compared in taste with homemade, and, secondly, it is not known what was put into it. So do not be lazy, cook the minced meat yourself, your efforts will be rewarded with great taste.

First, boil the rice in salted water until half cooked, that is, after boiling, let it boil for 7-8 minutes. In water, instead of salt, I crumble a chicken bouillon cube. Then drain the water through a colander.

We scroll the meat in a meat grinder.

Together with the meat, you can scroll the peeled onions and carrots, but I like it better if the vegetables are fried a little first.

So, finely chop the onion and fry in vegetable oil until soft, until the onion just starts to turn golden.

Three carrots on a fine grater, add to the onion and continue to fry, stirring, until the carrots are soft.

Mix minced meat, rice, onion with carrots, beaten egg and 1-2 cloves of garlic passed through a press in a cup. Salt, pepper to taste and add any dry herbs that you like.

Now we roll up round hedgehog meatballs with a diameter of about 5 cm with our hands and put them in a saucepan or deep frying pan. From this amount of products, 11-12 hedgehogs are obtained.

Pour hot water from the kettle up to about half the meatballs, salt to taste, close the lid, bring to a boil and simmer over low heat for about 30 minutes.

And while the hedgehogs are stewing, prepare the sour cream sauce. To do this, add 1 tbsp to sour cream. l. tomato paste or 2 grated tomatoes without skins and 2 chopped garlic cloves.

Stir, add salt to taste, 1 tbsp. l. flour without a slide and mix well again so that there are no lumps.

Add 1/2 cup hot water from the kettle and stir until smooth. The sauce is ready.

When the hedgehogs have been stewed in water for half an hour, add sour cream sauce to the pan.

Along with the sauce, you can also add some dry seasonings, such as basil, oregano, nutmeg, etc.

We continue to simmer on low heat for another 20-30 minutes until fully cooked.

Serve the hedgehogs to the table, pouring sauce and sprinkling with chopped herbs.
