Tip: In some recipes, to save time, it is recommended to use not regular sugar, but its cane counterpart. In fact, the approach to preparing dessert in this case is no different from the usual one, and it is undesirable to reduce the duration of processing berries.

  • "Five Minute". For a kilogram of blackberries, we take three cups of sugar and half a teaspoon of citric acid. We wash the berries, clean them from the stalks and lay them out on paper towels to remove excess moisture. Then we spread the product in layers in a cooking container, while sprinkling with sugar. Leave for 5 hours to stand out the juice. Then bring the mass to a boil, constantly removing the foam and cook it for no more than 5 minutes. Before turning off the composition, add citric acid to it. This dessert is stored in glass jars under plastic lids.

  • Jam in a slow cooker. We take blackberries and sugar in equal proportions. We sort the berries, wash and dry. We put it in a multicooker bowl, sprinkling with sugar. We leave the product for one hour, without heating, so that it gives juice. Then we set the "Extinguishing" mode and start the device for 20 minutes. Open the lid and let it cool for half an hour. To finally weld the workpiece, we keep it in the same mode for another 40 minutes. During this time, you need to stir the jam several times.

In addition, blackberry delicacy can be cooked without seeds. In this case, the berries should be slightly heated (in water or in a water bath) for 3 minutes. After that, the mass is ground through a sieve, sprinkled with the same amount of sugar and simmered until thick.

What is the best way to combine berries with other ingredients?

Fans of more complex flavors and rich aromas may like the following options for preparations for the winter:

  • Blackberry and raspberry jam. We take blackberries and raspberries in equal proportions, and we need as much sugar as berries. The fruits are sorted, washed and laid out in separate bowls.   • Dessert with orange. For 1 kg of blackberries we take 1 kg of sugar, three large oranges, lemon. Remove the zest from the oranges and squeeze out the juice. We mix the resulting components with sugar and cook a thick syrup from the mass, which we leave to cool. We sort out the blackberries and wash them, put them in the cooled liquid and insist for 2 hours. Bring everything to a boil, stirring regularly, cook for 30 minutes. 10 minutes before the end of this period, pour lemon juice into the jam. We lay out the workpiece only after it has completely cooled down.

If the resulting products seem to lack acidity, you can add a little citric acid or citrus juice to them. Despite the fact that spices in blackberry preparations are not used too often, they can transform the usual taste of desserts. Particular attention should be paid to vanilla pods, cinnamon sticks and rosemary sprigs.
