  • sugar - 0.5 kg;
  • 1 pack of pectin;
  • 100 grams of dark chocolate with a high cocoa content (86%);
  • cognac - 50 ml;
  • pure water - 3 tablespoons (tablespoons);
  • to give the jam a special zest, additional spices can be used - vanilla, hot chili pepper, ginger root.

Dessert step by step:

  1. Thoroughly wash the plum fruits, separate from the stone and, depending on the size, cut in half or into four parts.
  2. Pour the berries with sugar, leave overnight to infuse.
  3. In the morning, put the plums in a heat-resistant container on fire and boil, but you should first add pectin - a substance without which it is impossible to make jam, and it contains very little in plums.
  4. Boil jam until thickened. Checking the consistency is very simple - you need to drop a little dessert on a saucer and check: if the drop does not spread, but retains its shape, this stage of preparation is over.
  5. Break the chocolate bar into small pieces, melt in the microwave or in a water bath.
  6. Add melted chocolate to the almost ready jam and pour cognac at the very end of cooking (you should not add it before, otherwise the alcohol will evaporate and will not add sophistication to the taste).
  7. For a more unusual taste, add spices or seasonings to your taste. Despite the seeming incompatibility of sweet chocolate and hot pepper or ginger, this combination will give the dish a unique aftertaste. It will be remembered for a long time by the people who taste it.

I would like not only to prepare for the future as many vitamins as possible, but also to find something “something” among the sea of recipes to surprise and please loved ones. Benefits and possible contraindications

Plums and chocolate… Sounds appetizing? Let's say more: a fragrant dessert will easily win the hearts of all family members, so you will definitely have to cook it for more than one year. "Chocolate" jam can be served to guests during a festive feast to make a splash and be known as an unsurpassed culinary. You can use it as a filling for baking - fragrant and with a slight sourness. And you can no doubt offer children for breakfast with pancakes or tea, because there are a lot of benefits in it, and there are very few contraindications.

  • Antioxidants are eternal and tireless fighters for our youth and blooming appearance.
  • Pectin regulates the work of the stomach. Stagnant processes in the digestive tract stop as if by magic, toxins disappear, and constipation, if any, ceases to be a problem.
  • A wide variety of vitamins and minerals, among which potassium is especially prominent, which is necessary for the normal functioning of the nervous system. Some scientists claim: 3-4 plums a day relieve tension, relieve stress and kill incipient depression in the bud. So in the autumn gloomy slush for a miracle jam, it's time!

Cocoa gives strength and uplifts mood

And chocolate (in this case, cocoa) is energy, a good mood, the happiness vitamin serotonin, and a thousand and one other elements that are indispensable for health. Well, who hasn’t heard about the benefits of chocolate cocoa beans these days?!

Sweetness is truly contraindicated:

  • People who have severe problems with the digestive system. In this case, excess jam can cause severe upset, gas or diarrhea.
  • The diuretic and choleretic effect of plums will do a disservice to those who suffer from various diseases of the joints, kidneys and have gallstones.
  • And of course, it is not recommended to use jam for diabetes and the presence of a lot of excess weight (for obvious reasons).

Recipes

So, stock up on a couple of kilograms of ripe, soft plums, connect inspiration and good mood and start creating. And it's not about recipes.

Plum jam with chocolate

You will need:

  • 1 kg plums;
  • 500 g of granulated sugar;
  • 200 g chocolate (the proportion of cocoa beans must be at least 70%) or cocoa powder.

Plum halves or plum puree can be used depending on your preference.

  • Free the pre-treated (washed and dried) plums from the pits. Grind the fruits with a blender or cut them into halves.

Wait for the fruit to give juice

  • If you decide to make jam with pieces of plums, sprinkle with sugar for a couple of hours. If you opted for mashed potatoes, skip this step and immediately proceed to cooking. Fold the juiced fruit mass into a saucepan, mix with granulated sugar and cook over medium heat for 20-25 minutes.

Combine cocoa powder with sugar in advance

  • Mix cocoa with sugar, grate chocolate on a coarse grater and add to jam. Wait for the mixture to boil, reduce the heat a little and cook it for another quarter of an hour, without stopping stirring.

If using fruit pieces, be especially careful when stirring.

  • Pour thick jam into sterilized jars, close the lids and leave upside down under a warm blanket for a day.

Add to the list of ingredients for jam to your liking

If desired, you can add cinnamon, vanillin, cloves along with cocoa. The most daring housewives experiment with ginger and chili peppers or set off the taste of chocolate with a couple of spoons of cognac. The last ingredient, by the way, will not prevent children from enjoying this sweetness, as high temperatures will cause the alcohol to evaporate, leaving behind an additional rich and interesting flavor note.

Such jam can be stored until next year and even longer, but an open jar should be eaten within a month. However, this delicacy in your refrigerator is not stale.

Jam with nuts

If you want to try a complicated recipe, add a new pleasant shade to it by slightly changing the list of ingredients. You will need:

  • 1 kg plums;
  • 500 g of granulated sugar;
  • 150 g chocolate or cocoa powder;
  • 100 g nuts of your choice;
  • cinnamon or vanilla.

Replace nuts with dried fruits or add their delicious mixture to jam

  1. Sort the plums, wash, cut into halves. Remove the bones, and put the pulp in a deep bowl and sprinkle with sugar. Leave until the sugar begins to dissolve in the released juice.
  2. Clean the nuts. Ignite the nucleoli in a pan or in the oven (3-5 minutes) and chop finely. By the way, it is easier and more convenient to use a mortar or grind nuts with a powerful blender for the same purpose, since too large pieces will crunch on your teeth, which not everyone will like. But do not get carried away, trying to grind the kernels into powder: all the same, when cooking in small pieces, the pieces will soften.
  3. Place the container with plums on fire. If juice is low, add volume with any other fruit juice or water.
  4. Bring the mixture to a boil, remove from the stove and let cool. No need to stir the jam!
  5. Repeat the last step as many times as needed so that all the juice evaporates and the fruit mass boils down.
  6. Before putting the pan on the stove for the last time, add the nut crumbs, chocolate or cocoa to it.
  7. Roll the jam into sterilized jars, turn upside down and hold under the covers until completely cool.

The most patient and persistent housewives can change the cooking technology and “stuff” plums with cut tops with whole nut kernels. Further, the cooking process is no different from the one already described, except that it will require you to be even more careful when it comes time to mix the plums with chocolate. But what an impression the dessert will make on loved ones!

Chocolate plum jam

Jam must be well boiled

If you prefer a denser jam over jam, which is so convenient to spread on a morning sandwich, you will have to tinker a little longer. But it's definitely worth it!

You will need:

  • 2 kg plums (washed and pitted);
  • 1 kg of granulated sugar;
  • 150 gr butter;
  • A 100-gram bar of good chocolate or the same amount of cocoa powder.
  1. Pour plums with sugar overnight or chop with a blender and combine with sugar already in a saucepan.
  2. Without stopping stirring the plum pulp for a minute, bring it to a boil over high heat, and then reduce it to medium and cook for about an hour. Do not forget to remove the sweet foam that appears on the surface of the brew from time to time and keep an eye on the overall liquid level! Your future jam should be reduced by about a quarter.
  3. Add butter and cocoa to the mixture. (Some experienced cooks advise to knock down the powder with butter in advance or leave some of the sugar for this purpose, otherwise you will have to grind cocoa lumps in a saucepan for a long time and hard).
  4. Wait 10 minutes.
  5. Pour the jam into sterilized jars, close the lid, turn upside down and leave under the covers for a day.

For the next recipe, stock up on a bag of gelfix (20 g), pectin (10 g) or other gelling agent. Marmalade you will get very elastic, tender and amazingly tasty.

You will need:

  • any gelling agent.
  1. Wash the plums, remove the pits, cut the pulp into slices.
  2. Sprinkle fruit with sugar and leave for 4 hours, preferably overnight. Before cooking, the sugar must be completely dissolved in the plum juice.
  3. Put the mixture on medium heat and cook until it boils, stirring the mass from time to time.
  4. Prepare gelatin or other means according to the instructions on the package.
  5. Meanwhile, plums should boil. Remove the foam, add cocoa and grated chocolate to the pan and cook for another 20 minutes.
  6. Remove jam from heat, let cool slightly. Stir in the gelatin, pour the almost ready marmalade into sterilized jars, close the lids and refrigerate.

Dessert "Plums in chocolate"

Adding some milk to chocolate will make it less thick.

And finally, a very simple recipe.

You will need:

  • a few plums;
  • dried apricots, prunes, nuts;
  • 100 g chocolate.

Melt the chocolate in a water bath. Very carefully remove the stone from the plums and replace it with dried fruits or a nut kernel. Prick the fruit on a toothpick and dip in chocolate. Stick the free end of the toothpick into a suitable support: an apple, a watermelon rind, a strip of Styrofoam - as long as it is stable. Let the chocolate cool and the dessert is ready.

Jam “Plum in chocolate” RECIPE 2

Magazine "Spark" No. 38 (5147) dated 09/27/2010

The chocolate-covered plum is my legacy, as is the old-fashioned habit of coming to visit with a box of chocolates.

Plums cut into quarters or halves, depending on the size, and, as expected, fall asleep with sugar at night. In the morning they are already bathed in a syrup the color of melted jewels. There is obviously carnelian, some gold and green color... But it turns out that I didn't read Fersman's Entertaining Mineralogy carefully enough and my knowledge is not enough for comparison. Here it is better to just stop and take a picture, because this color will soon dissolve in chocolate, and only a single piece, once in a spoon, suddenly flashes tourmaline into the light. In the morning I start cooking, at first as the most common jam,

Old fashioned. I just add pectin, there is almost no pectin in the plum, and without it, the jam is not in a hurry to gel and thicken. Previously, I always added apples or quince to the plum, but now the stores are full of ready-made pectin, there is even sugar already mixed with it, with which you don’t even need to think about proportions. Now I know for sure that each piece will remain a piece, and around it there will be a fragrant, not too thick and not too liquid syrup. Who tries readiness on a knife, who on a plate, I drip onto the tile on the kitchen counter. Probably because the author of the world's first jam-making textbook, Nostradamus, advised checking it on the marble surface of the kitchen table, and I used to follow his instructions verbatim. If there is a drop, the jam is ready.

But this is where the fun begins. I take a bar of chocolate, the darkest and bitterest, break it into pieces, put it in a bowl and add a couple of tablespoons of water. Now in the microwave to melt everything. I pour this lava into an almost ready-made jam. From a transparent and so cozy (where are these country rosettes with roses?) Jam turns into a mysterious and unfamiliar brew even to Nostradamus. It would have frozen around the plum with a chocolate crust, but at the last moment it decided to remain a jam and spread with pleasure. I begin to look differently at children's plum-chocolate happiness. What if adults saw in him completely different pleasures and their gifts to each other hinted at other pleasures?

In any case, a spoonful of cognac fits very well here. Or even two. Or not cognac, but rum, both will do. This is not only for the spice of enjoyment, but also for complete deja vu, because the plums in chocolate were also filled with some kind of liquor.

Now it turned out quite the old way, I recognize this forgotten taste well. It remains to understand which spice is most suitable here. That spices are needed - I definitely feel that. Plum and chocolate are well suited to each other, it is sour, it is bitter, but together, by some kind of Nostradamus sorcery, they begin to promise a sweet life. And yet, in their mixture, some kind of zest is needed, a pepper grain. It is the hot chili that I put in this jam. Quite a crumb, just so that the one who gets it suddenly thinks: what is it there? Although I will probably put ginger in the next portion, it also has a burning sensation, but icy. For calmer temperaments, I'll ditch both and just add vanilla for a light, flying dream.

I was already interested in painting copyright labels and was about to patent the idea of edible gifts and homemade boxes, but I looked on the Internet and it turned out that the idea had been walking around the world for a long time! Even programs have already been created for designing boxes and jars of their own design. People, it turns out, again give each other food. Late as usual! But my plum in chocolate will fall into good company and will look not old-fashioned, but vintage. But what is it to be called? Jam "Visit of the old lady"? Or "Entertaining Confiturology?" Probably the best name is “Chocolate Plum”.

Jam “Plum in chocolate” RECIPE 3

For the preparation of this jam with chocolate, it is better to choose hard plums. You can even use unripe fruits. Instead of cocoa powder and butter, you can use dark chocolate (54-72%). You can also add spices to the jam: cinnamon stick or cloves. Spices will give your jam a pleasant aroma and a richer taste.

Ingredients for making plum jam with chocolate
plum variety "eel" or "Hungarian" 1 kilogram
cocoa powder 2 tablespoons with a mountain or a bar of chocolate (100 grams)
vanilla sugar 10 grams
granulated sugar 900-1200 depending on your taste
rum 2 tablespoons (can be replaced with cognac or vodka)
walnuts or raisins 50 grams (optional)
butter 100 grams

Free the plum from the pits, cover with half the sugar, mix and leave for 4 hours

Put the pan on the fire, add the remaining sugar and cook, stirring for 10 minutes until it dissolves:

Then add cocoa and butter, and cook for another hour, stirring often, over low heat.

Grind walnuts into crumbs, do not grind on a blender. It is better to put the nuts in a bag and crush with a rolling pin.
Add chopped nuts to the boiling mass, boil for another 5 minutes, then pour the hot jam into dry, clean jars.

At the end of cooking, add vanilla sugar and rum:

Jars and lids for chocolate jam need to be sterilized and dried.

Hot pour the jam into sterilized jars and roll up

Step 1: Prepare plums.

Rinse the drains thoroughly, removing all debris. Cut each in half and remove the pit. If desired, you can cut the plums even smaller to make the consistency of the jam more homogeneous, and whoever wants hotel pieces of fruit to float in thick chocolate syrup should cut the plums only into halves.

Step 2: Cook plum jam with chocolate.

First, prepare the syrup, for this, pour the right amount of water into the pan, pour sugar into it and bring everything to a boil. Sugar should be completely dissolved.
When the syrup is ready, dip the previously prepared plums into it. Bring to a boil, and then reduce the heat to the lowest possible. Boil the plums, stirring occasionally, for 20 minutes.

After the specified time, send the chocolate, broken into slices, to the plums in syrup. Keep cooking some more 10 minutes. And to make sure that the chocolate has dissolved, stir your jam 2-3 times in the process.
When the plum jam with chocolate is ready, pour it into heated glass jars, tightly close the lids and wrap them in kitchen towels or a blanket. When the jars with blanks have cooled, it will be possible to put them in a kitchen cabinet or pantry.
Attention: you should not eat jam right away, let it brew for at least one week.

Step 3: Serve plum jam with chocolate.

Plum jam with chocolate turns out thick enough to cook various pastries with it or add it to cake cream. But in itself, it has a bright taste and aroma, so you can not be especially smart, but simply serve it along with croissants or just slices of bread for tea.
Bon appetit!

Also, to taste, you can add 1 teaspoon of cognac or 50 grams of crushed walnuts, almonds or hazelnuts to the jam. All this should be added at the same time as the chocolate.

To enhance the flavor, you can add vanilla or chocolate flavor to the jam.

From this amount of ingredients, 500 milliliters of ready-made plum jam with chocolate is obtained.
