Strawberry jam - delicious recipes for thick strawberry jam for the winter. Delicious, thick strawberry jam

Ah, summer, summer cottage, fresh air and fragrant strawberries ... How tasty and healthy it is to enjoy it on a hot day. However, at the end of the harvest season, it becomes a little sad that the time for berries is coming to an end. And so you want to pick up a piece of hot summer on snowy winter days. And, you know, it's quite possible to do this.

Try making strawberry jam for the winter and you will have the opportunity to enjoy your favorite dessert all year round. It is not difficult to cook it, almost the same as A, if you have your own crop, and it is also quite inexpensive. You can eat it with tea or use it as a filling for baking.

Such a delicacy is not only very tasty, but also extremely healthy. After all, strawberries are a real storehouse of vitamins. However, do not forget that the sugar included in the composition is completely unhealthy for the body, so you should not overeat either.

I make strawberry jam every year, otherwise my relatives will not forgive me for his absence - we love him very much. From year to year I try more and more new recipes. Now I will share with you proven ways to make strawberry jam for the winter. Be sure to try!

This recipe is one of my favorites. The name speaks for itself and the jam can be prepared in 5 minutes. Here I use gelling sugar. I really like its effect. The dessert turns out to be very strong, jelly-like, and the pieces of berries do not boil soft and keep their shape.

Children are simply crazy about this delicacy, and adults cannot be pulled away from it. The blank can be stored all winter in a cold room. But, in my case, no matter how much jam I prepare, only a small number of jars survive until spring.

For cooking you only need:

  1. Half a kilo of fresh strawberries;
  2. 170 grams of gelling sugar.

If you are going to cook more or, conversely, less, then the number of ingredients must be changed in a certain order. In this case, it is important to remember that the ratio of sugar and berries should be approximately 1:3.

Cooking:

1. Wash the strawberries thoroughly and remove the green caps. After the "shower" put the berries on a napkin to remove water. Now they need to be cut first along in half, and then cut each piece into small sticks.

2. Transfer the pieces of berries to a saucepan or saucepan, add sugar and stir until the grains of sand are completely dissolved. It turns out a very bright and brilliant picture, which I already want to try. But keep yourself in hand - it will be more delicious!

3. Put on a strong fire until boiling. At this stage, it is very important to be near the stove, because such jam has the ability to grow and run away from the dishes.

Therefore, if you do not want to wash the stove and kitchen from fragrant brew, then be extremely careful. You need to constantly stir the jam so that it does not burn and run away.

4. After boiling, leave the saucepan on the stove over low heat and cook for 5 minutes. During this time, a pink foam will form, it must be removed. But do not rush to throw it away. It is also very tasty and you can safely eat it with tea. It's just that if such foam gets into the jar, the workpiece will quickly deteriorate.

Did you know that the foam on the jam is the result of the folding of protein elements, which, as a result of cooking, are converted into a light scum over the jam? It is safe to eat it, but it is absolutely not worth it to roll it into jars with jam.

5. Sterilize the jar for dessert in a convenient way and pour the contents of the stewpan into it while hot. Roll up the lid and set aside to cool. Then it must be removed in the cold. You can eat such a yummy both immediately after cooling, and store it for a cozy winter tea party.

It turns out very beautiful and extremely tasty. Try it too!

How to make strawberry jam with pectin?

Pectin is a purified polysaccharide that, when cooking jam, has a gelling mission. In small quantities, it is beneficial for health, because its gel-like formula envelops the gastric mucosa, thereby improving its functioning.

In addition, dishes with the addition of pectin are considered low-calorie and can be consumed while on a diet. This substance can significantly reduce the cooking time of the product, because the contents thicken immediately as they heat up.

Jam with pectin can be cooked without regular sugar, but sweet tooth can also add it. Such a dessert turns out to be very light, elastic and unusually tasty. It can be given without anxiety to small children, without thinking about the dangers to the teeth and the health of babies.

Having cooked without sugar, you will get a sour and very light product. We will cook sweeter, and what will be your dessert - decide for yourself.

Ingredients:

  1. Half a kilo of fresh strawberries;
  2. a full glass of sugar (250 grams);
  3. 15 grams of pectin.

If you want to make the dessert even sweeter by adding not 1, but 2 cups of granulated sugar, then in that case you need no more than 10 grams of pectin. If you cook without sugar at all, then for 1 kilogram of berries you need 20 grams of pectin.

Cooking:

1. Pour sugar into a saucepan and mix it with pectin. This is necessary so that unnecessary lumps do not form during the boiling process, which, by the way, are very difficult to get rid of. In addition, the presence of unpleasant lumps will also interfere with the qualitative thickening of the mass.

2. Mash strawberries, remove green leaves and beat with a blender until a homogeneous mass is reached. Add it to the saucepan, to the sugar. Mix everything thoroughly so that the grains of sand dissolve as much as possible. Now you can move on to cooking.

3. Put the pot with the future jam on the stove at maximum heat until boiling. As the berry mass heats up, it begins to thicken. After it boils, you need to boil it for another 3-4 minutes. It is very important to constantly stir the contents of the saucepan so that the jam thickens evenly, without lumps.

4. Pour hot jam into prepared and sterile jars, then immediately roll up the lids.

5. Jam is very tasty and strong. After cooling, you can already take the first sample.

Even after spreading on bread, it practically does not drain. So quickly, with minimal cost, you can cook a delicious strawberry dessert for the winter. Relatives will demand it again and again. Checked!

Cooking jam for the winter with gelatin:

Strawberries are one of the earliest berries that appear in the summer in the country. Therefore, every housewife is in a hurry to roll up a few cans of strawberry jam or jam in order to enjoy this divine taste in winter.

The advantage of adding gelatin to jam in the first place is that the jars keep for a long time and do not swell. Gelatin speeds up the process of preparing berry treats.

Such a blank keeps its shape perfectly, it is ideal to spread it on bread or use it as a filling in pastries. Even eating such a dessert with a spoon, drinking tea is a great option.

Ingredients:

  1. 600 grams of ripe strawberries;
  2. 1 teaspoon dry gelatin;
  3. half a kilo of granulated sugar;
  4. 50 grams of water.

Cooking:

1. Rinse the berries thoroughly and remove the green caps. Transfer to a dry, clean bowl and cover with sugar. Mash with a masher until pureed. You can also use a blender.

2. Put on fire and turn on the maximum fire. At the same time, do not forget to stir occasionally, because the berry mass has the harmful property of running away and burning. While the contents of the saucepan are boiling, you need to soak the gelatin.

3. Dilute the instant product in warm water. The mixture should be homogeneous, so you need to mix very carefully. It is better to pour water in small portions.

4. After boiling, boil the jam for 20 minutes. During this time, you will have time to notice that the color has changed to a more saturated one.

In addition, during the cooking process, as a result of folding unsuitable for storage elements, foam may appear. It definitely needs to be cleaned up. But don't throw it in the trash. It can also be used for tea.

5. Pour the gelatin mixture into the jam in a thin stream, while stirring constantly. Cook for another 5 minutes without stopping stirring. Pour gelatin into sterilized jars and immediately roll up the lids.

Remove jars after cooling in a cool room. It can also be stored in the refrigerator all winter.

The jam is very dense and elastic. Holds its shape well on toast. And the taste is simply indescribably wonderful. It's impossible to break away!

Strawberry jam with whole berries

This recipe is called "Summer in a jar" in my family. It turns out such beauty that it is impossible to resist. Kids just love this dessert, and adults gobble it up on both cheeks. It is very easy to cook it, we will even save time on chopping berries.

Gelatin can be used as a thickener, as we will do. The recipe is quite long, but the result will meet all expectations.

Ingredients:

  1. 1.5 kilograms of sugar;
  2. 1.5 kilograms of fresh Victoria berries;
  3. 3 teaspoons gelatin (optional)

Cooking:

The saucepan for cooking jam should be chosen taking into account the fact that the resulting volume of ingredients should not exceed a third of the dishes. Berries and sand must be laid in layers so that the entire volume of Victoria is fully saturated with sand.

1. I divide the berries and sugar into three parts. I spread the first part of the strawberries to the bottom, covered with sand. I also do it 2 more times. Thus, I get 3 layers of sprinkled berries.

2. Clean in a warm place for 12 hours. During this time, the strawberries will make friends with the sand and release fragrant juice, which will serve as syrup during the cooking process.

3. Gently mix the mass so as not to damage the integrity of the berries. After 12 hours, catch the berries with a slotted spoon and transfer to a separate bowl. Only the syrup remains in the pan. We will boil it.

Put the syrup on the stove at maximum heat until boiling. After that, reduce the power to the minimum. You need to stir constantly so that the sugar does not burn. Cook for another 10 minutes and remove from the stove. Berries pour hot syrup.

4. Put in the cold for 12 hours. After another half a day, repeat the procedure. That is, remove the berries from the syrup again, boil it in the same way and put the Victoria back there. The berries have already noticeably reduced in size, because each time they give a certain amount of juice.

5. After 12 hours, boil the syrup again separately from the strawberries. This time, you do not need to immediately remove from the stove. Dip the berries into the boiling syrup and boil with them for another 5 minutes.

During this time, gelatin can be diluted in a separate bowl. 3 tablespoons will require 150 grams of warm water. Pour the resulting mixture into a saucepan with jam and, stirring constantly, boil for another 3 minutes.

Gelatin may or may not be added. Jam and without it turns out to be thick due to the boiling of the syrup in several stages.

6. Remove from the stove and immediately roll into jars.

You can taste after cooling! It turns out a very tasty delicacy with whole and strong berries.
