We mix all the products - you can use your hand or a fork (as you like). When the flour is moistened, absorbing moisture, add 2 tablespoons of odorless vegetable oil. I use refined sunflower.


You need to knead this yeast dough for a rather long time (at least 10, and preferably 15 minutes) and intensively. As a result, it will become smooth, uniform, soft enough and not sticky. We round the dough into a ball and put it in a bowl, which we grease with literally a teaspoon of vegetable oil (I did not indicate it in the ingredients) so that it does not stick to the dishes during the fermentation process. We send the yeast dough to heat for 1 hour. Where is it better to ferment the dough and what does a warm place mean? There are several options. First of all, in the oven with the light on (it turns out about 28-30 degrees - the ideal temperature for fermenting yeast dough). Then we tighten the bowl with the dough with cling film or cover it with a towel made of natural fabric (linen is best) so that the surface does not wind up and become crusty. You can also let the dough ferment in the microwave, in which we first bring a glass of water to a boil. The dough will rise with the door closed, and the glass will stand there. Then you don’t need to close the bowl with anything, as the water will evaporate, thereby maintaining the necessary humidity. Just make sure that no one accidentally turns on the microwave, otherwise the dough will disappear and there will be no baking.

Pour the flour into a mixing bowl, pour the kefir-oil mixture into it. We knead the dough. You can not knead for a long time. As soon as you have a uniform, shiny ball, you can bet on the rise. Be sure to cover only with a lid or cellophane so that it does not wind. The warmer the place where you put the container with the dough, the faster it rises. For example, at a temperature of 40 degrees, half an hour is enough. You do not need to crush anything, you can immediately cut the pies. You can take any filling - both savory and sweet - the pies are equally tasty. The only point is that before baking, the pies should be allowed to stand on the baking sheet for another 15 minutes. This process is called "proofing" and thanks to it the pastries are the most airy. Bake in a preheated oven for 20 minutes.

Yeast dough products always turn out soft and fluffy. But if the dough is mixed only with water, flour and yeast, then the finished baking will look like ordinary bread.
