Traditional tiramisu, a recipe at home, has long been simplified by our resourceful hostesses by replacing hard-to-find ingredients with everyday products. Instead of mascarpone cream, the basis of cottage cheese tiramisu, a recipe at home with jam, is tender cottage cheese, creamy in texture, slightly sweet in taste. And cream can be replaced with good homemade sour cream, thick and tasty. The main thing is that there is no sourness in the taste of cottage cheese and sour cream, and then you get a delicious dessert that is not much different from the original. It is very easy to diversify it: make different sauces (coffee, chocolate, caramel, berry), add fillers to the curd cream, use impregnations based on fruit or berry juices for cookies. If you have a large family or you want to cook tiramisu for some kind of holiday, then we advise you to cook.
In this cottage cheese tiramisu recipe, the layers are made up of soft cottage cheese cream, coffee-soaked Savoyardi biscuits, and apple jam made from fresh apples, sugar, and cinnamon. Apple jam is prepared in 15-20 minutes, but you can use ready-made applesauce (for example, for baby food) or take thick apple jam. In addition to apple, apricot or peach jam is suitable, but not sugary-sweet. Make your own for this very simple dessert.

Ingredients:

- Cottage cheese (homemade in the recipe) - 300 gr;
- thick homemade sour cream - 3-4 tbsp. spoons;
- sugar - 4-5 tbsp. spoons (to taste);
- freshly brewed coffee - 100 ml;
- Savoiardi cookies - 4-6 pcs. per serving;
- grated chocolate, cocoa powder - for serving dessert.

For apple jam:

- Sweet and sour apples - 3-4 pcs;
- cinnamon - 0.5 tsp;
- sugar - to taste;
- water - 2-3 tbsp. spoons.

For apple jam, take juicy apples, sweet and sour or sour in taste. Peel off the skin, remove the middle, cut into thin plates or a small cube.





Transfer to a small saucepan, add two or three tablespoons of sugar and ground cinnamon (or half a cinnamon stick). So that the apples do not stick to the bottom until the juice begins to stand out, pour a little water into the bottom of the saucepan. Put on a small fire, bring to a boil.





Cook the apples, stirring occasionally, until they are soft, almost translucent.





Grind the stewed apples with a blender into a homogeneous thick puree. We taste, if necessary, add sugar (jam should be sweet and sour). It is not necessary to boil the jam, it should be like regular applesauce in consistency, but not watery.







While the jam is cooling, prepare the curd cream for tiramisu and brew strong aromatic coffee. Mix cottage cheese with sour cream. The amount of sour cream is indicated for not very soft cottage cheese, if you use creamy cottage cheese, put less sour cream.




Add sugar to taste, you can put a little vanilla sugar for flavor.




With a blender we turn everything into a thick curd cream, homogeneous. According to the consistency, it should be such that it does not spread.




Let's brew coffee according to your favorite recipe (you can use both beans, freshly ground, and high-quality instant coffee). Cool down to room temperature. If you are preparing a dessert exclusively for an adult company, you can add a little cognac or brandy to your coffee (optional). Let's prepare the Savoiardi cookies, the sticks need to be made so long that they fit into the dishes.







At the bottom of a portioned bowl or other dishes that you have chosen for making tiramisu, spread the curd cream, about two or three tablespoons.





We dip the cookie sticks in fragrant coffee, hold for a few seconds and immediately spread on the curd cream with the side that was dipped in coffee.





We close the cookies with the next layer of cream, put two or three tablespoons of apple jam on it.





Make another layer of cookies. The remaining curd cream can be mixed with apple jam or make another layer of jam, and put the rest of the cream on it (with a spoon or using a pastry syringe with an asterisk nozzle).

1. Mix cottage cheese, sour cream, sugar and vanilla in a blender until smooth. We're making coffee. Soluble will even be better.
2. Dip each cookie for 5 seconds in coffee. Then, alternately laying out layers of cookies and cream, we form a dessert. It is better to do it in glass glasses. It will be very beautiful. From this amount of products you will get 2 large servings or 3 smaller ones.
3. Sprinkle cocoa on top through a strainer. We put in the refrigerator for the night.

Tiramisu with cottage cheese at home is not much more difficult to prepare than the traditional version of this delicate Italian dessert. The recipe was sent by our regular reader Guzel Maharram.

Compound:

Biscuit for tiramisu:

form - 18 × 25 cm

  • 100 ml ryazhenka
  • 100 ml
  • 2 tbsp. tablespoons of vegetable oil
  • 75 g sugar
  • a pinch of salt
  • 150-200 g flour
  • 1/3 teaspoon of soda

Cream for tiramisu:

  • 450 ml milk
  • 2.5 st. spoons of starch
  • 75 g sugar
  • 250 g fresh cottage cheese
  • 1 teaspoon vanilla sugar

And:

  • 300 ml barley coffee
  • 1-2 tbsp. teaspoon cocoa (carob)

Recipe for tiramisu with cottage cheese at home:

  1. First, prepare a biscuit as for. Mix together the liquid ingredients for the dough, sugar and salt. Add flour and soda, stir.

  2. We shift the dough into the prepared form and put in a preheated oven (180 ºС) for 25 minutes. Readiness is determined by a match.

  3. We take out the finished biscuit from the oven (we do not turn off the oven) and cut it into rectangular pieces.

  5. We boil and chill. Pour it into a deep bowl.

  7. To prepare custard with cottage cheese for tiramisu, mix 100 ml of milk with starch. Pour the remaining milk into a saucepan and put on fire. Add sugar to it and bring to a boil. Then add milk with starch and mix thoroughly. Cook over low heat until thickened, stirring constantly.

  8. Add cottage cheese and vanilla sugar, stir. Bring the mass with cottage cheese to a boil and turn off the heat.

  9. After that, beat it with a blender so that there are no lumps of cottage cheese left and the cream is homogeneous.
  10. Now fill the biscuit pieces with cream. Let cool until warm.

I draw your attention to this, because the classic Italian tiramisu recipe requires products that are very difficult to find even in a large city and, admittedly, they are very expensive. This is a special Savoyardi cookie, and mascarpone cheese, and Marsala liqueur. Let's not dwell on this - our homemade Tiramisu recipe will allow you to cook a dish no worse than Italian, from which you will lick your fingers, so let's cook already ...

Savoiardi cookies are usually used for dessert tiramisu, but I wanted to see how tiramisu would taste using the usual more “casual” shortbread cookies.

Shortbread cookies - 250 g
Cream 10% - 200 ml
Cream 35% - 200 g
Fine-grained cottage cheese - 200 g
Powdered sugar - 3 tablespoons
Semi-sweet wine - 3 tablespoons
Chopped chocolate - 30 g
Walnuts - to taste
Gelatin - 1 tablespoon

For cookie soaking:

Instant coffee - 3 tsp
Sugar - 3 teaspoons
Boiled hot water - 100 ml
Orange liqueur (or any) - 3 tbsp

For glaze:

Chocolate - 100 g
Milk (or water) - 4 tablespoons

My cookies were 6x10 cm in size, I needed 9 cookies for my silicone mold, I “shortened” 3 cookies by 0.5 cm on one side and cut one in half for the narrow sides of the mold.
Cottage cheese should be used fine-grained, dietary (wet) is very suitable. I want to pay attention to the form. It should be elastic, resistant and not bent (I realized this in the course of work and had to somehow get out of the situation). It is better to use a disposable stable form of foil.

1. First, let's prepare the impregnation for cookies: pour coffee, sand into a wide bowl and pour boiling water steeply, mix until the sugar is completely dissolved, cool and pour the liquor.

2. Whip liquid and heavy cream until thick foam,

Add cottage cheese, mix until smooth and finally wine. Beat it all together again.

3. Add nuts and ground chocolate to the curd mass if desired, mix.

4. Pour 6-7 tablespoons of warm water into the gelatin, leave until it swells, then put the bowl with gelatin on the stove and heat, stirring, until it is completely dissolved, without boiling

5. Cool the gelatin to a warm state and pour into the curd-creamy mass. Mix.

6. Dip the cookies in instant coffee with liquor, soak well (but do not overdo it so that the cookies do not crumble).

7. Place a plastic bag on the bottom and sides of the mold. Lay the soaked biscuits on all sides of the form.

8. Pour the curd-gelatin mass into a mold with cookies (This is how the dessert will be deformed in a soft silicone mold).

Place two more cookies on top of the curd mixture.

Here's how I had to get out of the situation: I used stationery clothespins.

And this is what it looks like after cooling.

9. Forms with cookies to put on 6-8 hours (preferably at night). Turn the dessert over from the mold, carefully remove the plastic wrap.

10. Melt chocolate with milk, stirring until smooth over low heat.

Coat the surface and sides of the homemade tiramisu with melted chocolate using a brush.

Decorate the dessert with strawberries. Or at will.

Well, I made tiramisu from ordinary cookies and I can say with confidence that it was a success and you can cook it too.
