  1. Rinse and boil the rice in milk for 15 minutes. Cook over low heat. Turn off the rice and wait for the porridge to cool completely.
  2. Rinse, dry the raisins and pour over the brandy.
  3. Separate the yolks and whites. Mix yolks with lemon zest. Whisk egg whites with salt until foamy.
  4. Add sugar, vanilla and butter to the yolks. Stir the mixture with a fork until smooth.
  5. Add rice porridge and raisins to the yolks. Stir so that the raisins are evenly distributed in the dough.
  6. Add beaten egg whites and stir.
  7. Grease a baking dish with butter. Pour in the rice batter and spread evenly in the pan.
  8. Cut the apples in half and remove the core.
  9. Arrange the apples, core side up, on the dough, press lightly and drizzle with lemon juice.
  10. Heat the oven to 200 degrees and bake the dish for 35 minutes.
  11. Take out the form and put raspberry jam into the cores of apples.
