  • Twine - as needed,
  • Water - 3 liters.

Cooking process:

Rinse cooked pork casings.

Twist the meat in a meat grinder, adding lard, onion, garlic. Pour the cream into the prepared minced meat, break the eggs, pour the starch, pepper and salt.

Mix the contents well. Put the container with minced meat in the freezer for 20 minutes to cool.

Attach a cone to the meat grinder to fill the shells with minced meat. Tie the end of the shell with a thin twine, put on a cone and fill with minced meat, tying the sausages with a thread after 8 - 10 cm. Leave the pork sausages ready for cooking on a dish.


Pour onion peel into a cauldron, add 3 bay leaves, a little salt and pour water. When the water (after about 25 minutes) becomes a pronounced orange color, you can cook sausages.

Vegetable casserole with sausages
1 kg of potatoes, 1 liter jar of peas, 4 onions, 0.5 kg of sausages, 2-3 tomatoes and peppers, herbs to taste. For the sauce: 200 ml of sour cream, 200 g of cheese, 1 egg, 1 glass of water, 2 tablespoons of flour, salt, pepper to taste.

First you need to fry the potatoes cut into thin strips in vegetable oil.
Fry milk veal sausages.

In a separate pan, fry the onion until half cooked, add green peas and simmer for five minutes over low heat.

On a baking sheet, greased with oil, put a layer of fried potatoes, then a layer of peas with onions and sausages. Top with chopped tomatoes and green (red) bell pepper. Put in the oven for 10 minutes.

Separately, prepare the sauce by mixing sour cream, an egg, grated fatty cheese and flour diluted in a glass of water. Pour the sauce over the casserole and return to the oven for a couple of minutes until the sauce thickens.

Ingredients: 2 tbsp. round-grain rice, 4 eggs, 2 large onions, 1 bunch of dill, 8 pcs. sausages (I have sausages with cheese), 3 tbsp sour cream, 50g. hard cheese, salt, pepper, favorite spices to taste.

Boil rice, let cool.
Cut the onion into cubes and fry in vegetable oil until transparent. Leave to cool.
Divide the eggs into whites and yolks. Whisk the egg whites into a fluffy foam and mix with the cooled rice.
Add finely chopped dill to the rice. Stir gently from bottom to top. Salt, pepper. Add your favorite spices.
Mix the yolks with the cooled fried onions.
Cut sausages in half lengthwise.
Put half of the cooked rice into a greased pan.
Top with a mixture of onions and yolks.
Then lay out the sausage halves.
Spread out the rest of the rice, spread evenly.
Lubricate with sour cream, sprinkle with grated cheese.
Bake in an oven preheated to 180C ~ 35 min.

125 g pasta
2 onions

2-3 sausages
250 g cheese
30 g butter

Cooking method:
Boil pasta. You can do this in advance. Then prepare the sauce. Saute finely chopped onion in butter. When lightly browned, add 1 tbsp. a spoonful of tomato puree, diluted in 3 tbsp. spoons of boiled water. Separately, boil the sausages, finely chop them and stew with the sauce. Salt and pepper to taste. Grate hard cheese, such as Dutch or Swiss, on a coarse grater. Grease a baking dish or an ordinary frying pan with high sides with butter (so that the casserole does not burn, you can sprinkle the breadcrumbs on the form for reliability) and put pasta, sauce with sausages, a lot of grated cheese in it, alternating these products until they won't end. Sprinkle the top of the casserole with cheese. Preheat the oven to 180 degrees and bake the pasta in it for about 15 minutes. Serve the dish on the table, pre-garnished with fresh herbs. With such a pasta casserole, a salad of fresh cucumbers and tomatoes with onions goes well. Tip: you can pour mayonnaise mixed with tomato ketchup on top of the casserole, it will become more juicy and appetizing.

Royal chicken with sausages
Ingredients:
large chicken about 3 kg
garlic 2 cloves
medium sized zucchini
onion 80 g
eggplant 200 g
sausages in natural casing 200 g
cream 80 g
olive oil 10 tbsp. l.
bread 8 slices
eggs 2 pcs.
thyme, salt, pepper to taste

for onion marmalade:
butter 80 g
onion 60 g
sherry 1/4 cup

Cooking method:
Wash the gutted chicken thoroughly. From eggplant and half a zucchini we cook sauté, that is, we stew them over low heat. Meanwhile, in the second frying pan, stew the finely chopped heart, stomach and liver of the chicken with the second half of the zucchini, onions, salt and pepper. Finely cut the sausages, mix them with the contents of both pans, add bread, thyme, chopped garlic, eggs. We mix the whole mass and stuff the chicken with it, which we then sew up. We spread it on a baking sheet, bake at a temperature of 140 degrees, after pouring it with olive oil. After 10 minutes, we take out the chicken and carefully pour the resulting juice. Put back in the oven and bake for another two hours. During this time, prepare marmalade from onions. To do this, put the chopped onion in the pan and pour 20 g of water. When all the water has evaporated, add butter and sherry. Boil this whole mixture properly. We cut the finished chicken into slices, each of which is abundantly poured with a thick sauce. Serve the king chicken hot.

Roast with bacon and sausages
Ingredients:
800 g new potatoes
75 g bacon
2 onions
4 tomatoes
2 tbsp. l. vegetable oil
sausages 300 g

Cooking method: Peel the potatoes, cut into slices and boil for 10 minutes in salted water. Cut bacon into thin strips, onion into slices, sausages into circles. Cut the tomatoes into 4 pieces. In a large frying pan, heat the vegetable oil, fry the bacon and sausages in it until golden brown and remove from the pan. Put the onion slices and potatoes into the pan. Roast for about 5 minutes. Salt and pepper. Add tomatoes and fry for 5 more minutes. Rinse the greens with water, pluck the leaves and, together with fried bacon and sausages, put on potatoes.

1/4 cup olive oil
1 large onion, finely chopped

Ingredients:
1 small onion

salt, ground black pepper
1 teaspoon mustard
dried thyme on the tip of a knife
1 pork neck steak (approx. 150 g)
smoked sausages 3 pcs.
1/2 apple
1/2 package frozen broccoli mix

Cooking method: Peel the onion, cut into thin half rings and sauté in 1/2 teaspoon of vegetable oil. Salt and pepper, stir in mustard and thyme.
Rinse the steak with cold water, dry and cut into a pocket. Fill it with onion mixture, chop off the edges. Apple, cut through the core, cut into rings. Fry the meat in the remaining vegetable oil (4 minutes on each side) along with the apple rings. Salt and pepper. As a garnish, prepare the frozen broccoli mixture as directed on the package. Vienna sausages with vegetables and millet
Ingredients:
500 g potatoes
200 g celery root
2 large carrots
2 stalks of leeks
1 teaspoon a spoonful of marjoram
4 tbsp. butter spoons
2 tbsp. spoons of millet
1 pinch of cumin
1.5 l broth
4 Vienna sausages

Method of preparation: Wash potatoes, celery and carrots, peel and cut into small cubes. In a large, wide-bottomed saucepan, heat the oil and fry the chopped vegetables in it. Rinse millet and mix with cumin and marjoram to vegetables. Pour in the broth and cook for 25-30 minutes over low heat. Wash the leek, dry it, cut into thin rings and add to the soup. Bring to a boil once, put the Viennese sausages (whole or cut into pieces) and leave on the fire for another 5 minutes. Salt and pepper to taste before serving the finished soup. Arrange the sausages on plates first, then pour the soup and, if desired, decorate the dish with a sprig of fresh herbs.

Bavarian sausages
Ingredients:
1 kg white cabbage
salt
3 art. tablespoons of vegetable oil
400 ml stock
360 g grilled sausages
1 bay leaf
2 teaspoons cumin
200 ml beer
2-3 tbsp. tablespoons of wine vinegar
2 tbsp. spoons of starch
ground black pepper
sugar

Method of preparation: Prepare and chop the cabbage. Sprinkle with salt and crush. In a saucepan heat up 2 tbsp. tablespoons of vegetable oil and fry the cabbage. Pour in 100 ml of broth and simmer covered for 20 minutes. Fry the sausages in the remaining oil, adding the bay leaf. Lay out the sausages and place in a warm oven. Pour the remaining broth into the fat from frying sausages. Add cumin, beer and vinegar. Thicken the sauce with starch. Season with salt, pepper and a pinch of sugar. Remove bay leaf. Put the cabbage on a dish and pour over the beer sauce. Put sausages on top. Can be served with potatoes.

Rice with vegetables and sausages
Ingredients:
1 red sweet pepper
1 green onion stalk
1 bulb
1 garlic clove
2 sausages
200 ml broth
1 teaspoon vegetable oil
60 g rice for risotto
salt, ground black pepper
turmeric on the tip of a knife
1 sprig thyme
40 g frozen green peas

Cooking method: Coarsely chop the pepper. Chop onion and garlic. Cut sausages into pieces. Boil the broth. Fry sausages in vegetable oil and lay out. Sauté the peppers in the remaining fat. Add onion, garlic and rice. Lightly fry and season. Mix in sausages. Add turmeric to the broth. Pour in half the rice and bring to a boil. Simmer covered for 15 minutes, adding broth. Chop thyme. Prepare the sauce: mix oil, lemon, mustard, salt, pepper.

Ingredients:
1/2 bunch radishes
1/2 bunch green onions
150 g hard cheese
200 g salami
4 smoked sausages
100 g each of red and green leafy lettuce
4 tbsp. tablespoons of wine vinegar
8 art. spoons of vegetable oil
salt
ground black pepper

Method of preparation: Thoroughly wash the radishes and onions and dry them on a paper towel. Radishes, cutting off the "tail" and the place of attachment of the leaves, cut into thin circles (you can cut it on a grater for chopping cabbage). Green onions, if necessary, peel and cut into rings. Cheese, cut off the crust, cut first into cubes, then into cubes. Salami clean and cut into thin slices, sausages - wheels. Lasagna with beef and sausages
12 dry sheets of lasagna
225 g spicy Italian sausages, casings removed
225 g ground beef
1 medium onion, diced
800 g canned tomatoes
2 tbsp. spoons of tomato puree
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon dry herb mixture
425 g ricotta cheese (or gouda)
1 medium egg
15 g chopped fresh parsley
225g half-fat grated mozzarella cheese

Boil the lasagna according to the instructions on the package, but do not add salt to the water; drain in a colander and rinse with cold water. Place back in saucepan and cover with cold water. Prepare the meat sauce: sauté the sausages, ground beef and onions in a 4-quart saucepan over high heat, stirring frequently and breaking up the sausages into small pieces. Put the mixture in a bowl and drain off the fat. Put the tomatoes along with the juice and the next 4 ingredients. Bring to a boil over high heat, crushing the tomatoes with the back of a spoon. Pancakes with sausages
(for 8 servings)
1 cup flour
1 1/2 tsp salt
1/2 tsp. marjoram and paprika
1 tsp baking powder
2 eggs
1/3 cup milk
2 tbsp. l. sherry
1 cup diced sausages
1 cup canned peas

We will prepare all the products. Sift flour with salt and baking powder. Beat the yolks until creamy, add milk, sherry and beat again. Continue whisking while adding flour. Beat egg whites until stiff and fold into batter. Lastly, put chopped sausages and peas into the dough, mix. Heat the oil to 190 degrees and, taking the dough with a tablespoon, spread the dough in the form of pancakes. Fry on both sides until a delicious crust. Put the finished pancakes on a dish and serve with tomato sauce, vegetables or sour cream.

Stuffed cabbage with sausages
4 sausages, 4 leaves of cabbage, half of red and yellow peppers, 50 g of cheese, egg, crackers, vegetable oil for frying.

How to cook:

Sausages baked with bacon
Ingredients:
sausages - 3 pcs.
hard cheese - 80 g
fat bacon - 3 slices
mustard ready - 1 tsp.

Cooking method:

Cheese cut into cubes. Cut the sausages, grease the cut with mustard, put a block of cheese, wrap each sausage with a slice of bacon, secure everything with a skewer and bake in the oven. Serve on green lettuce leaves.

Sausages in puff pastry
. Ingredients:
500 g puff pastry
8-9 sausages

pickled cucumbers

Recipe:
Cut the cucumbers lengthwise into several pieces.

CHEESE PIE WITH SAUSAGES

3 eggs
250 g mayonnaise

Meatloaf with scrambled eggs and sausages

We will need a thin, long and very sharp knife, with which we carefully "reveal" the meat. I had a piece for carbonade. They opened the meat into a 2 cm thick plate. It is laborious, but it's worth it. Salted, peppered, combed, sprinkled with your favorite seasonings for meat.
On a flat frying pan, cook an omelette. We fry it from other sides. To flip the omelet, use either a lid from a frying pan or a flat plate of the desired diameter. We turned the pan upside down and let the omelet slide off the plate again onto the pan, but on the other side.
Sweet peppers, scrambled eggs, sausages, cut into strips, were laid out on the meat. Roll tightly, secure with kitchen string. You can sprinkle more seasonings.

Fritata with spinach, sausages and feta
Ingredients:
350 g spinach
1 st. l. olive oil,
1 large onion, chopped
220 g sausages
8 eggs
60 ml cream (35% fat),
0.5 tsp salt,
0.5 tsp freshly ground black pepper,
150 g feta cheese,
fresh parsley.

Cooking method:

Preheat the oven to 170ºС. Glass baking dish 20x20x5, grease with oil.

Boil a large pot of salted water. Add spinach and boil for 2 minutes to soften the leaves. Drain the water. Chop the spinach, then drain on a kitchen towel and squeeze dry.

Heat the oil in a large non-stick skillet. Add the onion, cover and sauté for 4-5 minutes until soft. Add sausages (cut into pieces) and fry under the lid until golden brown for 5-7 minutes. Remove from fire, let cool.

Whisk eggs, cream, salt and pepper in a large bowl. Add spinach, fried sausages, feta, Mix everything and transfer to a preheated baking dish.
