Blueberries - recipes for preparations for the winter - jam, grated with sugar, jam, confiture. New blueberry syrup recipe for winter

Blueberries are an extraordinary berry that contains many vitamins. And what delicious pastries turn out to be real magic! What kind of blueberry pies do not make open, closed, with the addition of cream, yogurt, cottage cheese and any dough is suitable for them, there are no specific criteria, whether it be puff or shortbread, yeast or unleavened.

Regardless of what kind of dough and what form the pies are baked from, they will always delight with their original, exquisite blueberry taste and aroma.

Pies with blueberry filling always turn out to be very tasty, you just have to follow a few rules and you will get a delicious dessert:

In the filling of blueberries, sugar and lemon juice are necessarily added to reduce the bitterness that occurs during the heat treatment of berries.

To make the filling thick and not flow out of the pie, add for every 250 gr. berries 2 tbsp. spoons of starch.

Add citrus zest to the filling, and the berry will get a brighter taste.

If the berries are frozen, they must be immediately added to the dough and baked. Don't wait for the berries to thaw, or they'll release their juices and ruin the whole look and taste of the pie.

Avoid recipes that add baking soda to the dough. It can cause blueberries to turn an unappetizing green color.

Follow these simple rules, and you will get the most delicious, mouth-watering and unforgettable dessert.

Frozen blueberry pie

Ingredients:

For the test we need:

  • Egg - 1 pc.
  • Flour - 2 tbsp.
  • Butter - 100 gr.
  • Sour cream 25% - 140 gr.
  • Sugar - ½ cup
  • Baking powder - 0.5%

For filling:

  • Blueberries - 2 tbsp.
  • Sugar - 3 tbsp. l.
  • Starch (potato) 2 tbsp. l.

Cooking

Before we start kneading the dough, you need to get the frozen blueberries from the freezer. Let the berries melt completely, then drain the liquid. Or drain in a colander, excess water will still drain while you work on the dough.

So, let's start preparing the dough for our pie. Break 1 egg into a deep bowl and add half a glass of granulated sugar and beat lightly.

Melt the butter and pour it into the egg-sugar mass, mix with a whisk.

Pour the baking powder - mix, then add sour cream and mix again until a homogeneous consistency.

Add flour in batches and knead the dough. First, knead the dough with a spoon, as soon as the dough becomes tight, put it on the table, and continue to knead the dough with your hands. If necessary, you can add more flour (it took me 2.5 cups). The dough should be very soft and pliable.

The dough is ready. Divide the dough into 1/3 and set aside for a while.

We roll out a large layer. It should roll out easily, the only thing may be slightly torn, just keep this in mind and work more carefully with the dough.

Lubricate the baking dish with butter (I have a form with a diameter of 22 cm). We spread the dough on the bottom of the form so that the sides still turn out.

Let's start preparing the filling. Add starch and sugar to the blueberries, mix and spread on the bottom, evenly leveling.

The remaining smallest piece of dough is rolled out and spread on top of the filling. We wrap the sides from the first layer down and press it to the top layer of dough. Make a hole in the middle of the pie.

We send the cake to the oven preheated to 190 C and bake for about 1 hour until golden brown.

Baking time is individual, so be guided by the color of the dough - bake until golden blush.

We take the cake out of the oven. Let it cool, then cut into portions and serve.
