1. Traditionally, in many families, the highlight of the New Year's table is a dish of fried poultry. Duck in orange sauce is amazingly tasty and always delights guests. Shall we try cooking? Wash a medium-sized duck thoroughly, dry with a towel and rub with a mixture of salt and black pepper. Cut the incision on the abdomen of the duck with wooden toothpicks. Cross the wings of the duck and press tightly against the carcass, tying it with cooking string. Turn the carcass on its back, cross the thread at the legs and, wrapping around the ends and slightly pulling the legs, tie the thread in a knot. Preheat oven to 190 degrees. Place the duck breast side down on the grill and place in the oven. Place a baking sheet with water under the rack with the duck. Roast the duck for an hour, adding water to the pan as needed. After an hour, turn the duck on its back and carefully pour the fat that has melted onto the baking sheet. Roast for another hour, occasionally basting the duck with the rendered fat. Then increase the temperature in the oven to 220 degrees and roast your duck for another half hour. Do not forget to water with the rendered fat and juice! While the duck is roasting, prepare the sauce. Wash 4 oranges thoroughly. From two of them, peel the zest in thin strips and squeeze out the juice. Cut one orange into thin slices. Disassemble the remaining orange into slices and free each slice from the outer films. In a small saucepan, melt 2 tbsp. spoons of sugar and warm it up until a slightly golden caramel is obtained. Remove caramel from heat, add 2 tbsp. spoons of white wine vinegar, orange juice and half of the whole zest. Mix everything thoroughly, return the pan to the fire and, stirring constantly, reduce the sauce by half. Remove the finished duck from the oven, pour the remaining duck juice and fat after frying into your sauce and bring to a boil. Add to the sauce 40 gr. butter, orange pulp, salt and black pepper. Heat until thickened, stirring constantly, and remove from heat. Put the finished duck on a dish, pour over the sauce, garnish with orange slices, the remaining strips of zest and parsley.

2. An unusual and very tasty holiday dish can be prepared from chicken and beef tongue. Rinse the tongue, boil in salted water, peel and cut into thin slices. Cut the chicken carcass (about 1 kg.) into portions, fry in a pan in butter until golden brown and remove from the pan. Four onions cut into 4 parts, lightly fry in vegetable oil and put in the pan in which the chicken was fried. Add 100 gr. finely chopped mushrooms and 1 minced garlic clove. Put the fried chicken pieces on top, sprinkle with 2 tbsp. flour, salt, black pepper and ground thyme, add 50 gr. cognac and simmer over low heat for 10 minutes. Then add 2 cups of dry red wine and 1 teaspoon of sugar. Simmer everything together for another 45 - 50 minutes over medium heat. Put slices of boiled tongue on heated plates, place pieces of stewed chicken on top. Filter the sauce formed when stewing the chicken through a sieve, boil it in half and pour it over the chicken on the tongue. Serve with a side dish of fresh vegetables.

3. Very easy to prepare, but at the same time, escalopes are invariably fragrant and tasty. Anyone can cook this dish, and the result will please everyone. Wash thoroughly and cut into portions 1.5 - 2 cm thick, 500 grams of pork loin without rib bones. Beat the pieces of meat thoroughly, rub with salt and black pepper. In a hot skillet, melt 2 tbsp. tablespoons of butter and fry the escalopes for 5 - 7 minutes on each side. Serve with fried potatoes and fresh vegetables, pour over the juice formed during the frying process and sprinkle with herbs.

4. Another simple recipe for a hot meat dish for a festive table is lamb baked in marinade. Lamb prepared according to this recipe turns out to be unusually tender, juicy and fragrant. Cut one kilogram of lean lamb loin into thin slices. To prepare the marinade, mix in a bowl 2 tbsp. spoons of soy sauce, 2 tbsp. spoons of tomato paste, 1 tbsp. spoon of mustard, 1 tbsp. 1 teaspoon lemon juice, 3 finely chopped garlic cloves, and ½ cup chopped rosemary leaves (you can substitute 1 tablespoon of dry rosemary). Put the pieces of meat in a glass or enamel dish, pour the marinade, mix thoroughly and leave to marinate for 6-8 hours in cool place. Transfer the marinated lamb to a baking dish, pour the remaining marinade and bake in the oven at 190 degrees for an hour. Lay out a wide dish with fresh lettuce leaves, put pieces of lamb on top, pour over the juice left over from baking, and garnish with fresh vegetables and herbs.

5. Delicious and unusual veal tubes with ham are obtained. 500 gr. cut veal into thin slices and beat off. 150 gr. cut the ham into small cubes, cut two boiled eggs into long slices. Put some ham and eggs on each piece of veal, roll up and secure with a wooden toothpick. In a hot skillet, heat 2 tbsp. tablespoons of butter and quickly fry the meat rolls until golden brown, then add 2 cups of meat broth and simmer over low heat under a lid for 1 hour. Take out the rolls and remove the toothpicks. 2 tbsp. mix spoons of sour cream with 2 teaspoons of flour and add the mixture to the liquid left over from stewing the rolls. Mix thoroughly and heat over low heat until thickened. Serve the rolls to the table, pouring sauce and sprinkling with finely chopped parsley.

6. Hot boiled tongue served with Madeira sauce will surprise your guests with tenderness and delicacy of taste. Soak beef tongue in cold water for 8 hours. Boil 2 liters of water in a saucepan, add 1 whole peeled onion and 1 celery root. Let it simmer for 5 minutes, then place the tongue and boil it for 2 hours. Dip the prepared tongue in cold water, peel, cut into portions and place back in the hot broth to prevent it from cooling. In a small skillet, heat 1 tbsp. tablespoon butter, add 1 tbsp. a spoonful of flour and 1 teaspoon of sugar. Fry until golden brown, then pour in, stirring, 2 cups of boiling meat broth, add 2 tbsp. spoons of cream, 2 tbsp. spoons of Madeira, 3 cloves, 1 bay leaf, salt and black pepper. Boil the sauce for 10 minutes, stirring constantly, then strain and season with 1 tbsp. a spoonful of butter. Stir gently and heat over medium heat for 1 to 2 minutes. Remove from heat, add salt and pepper to taste and serve immediately.

10. Vegetarians can be offered an easy-to-prepare, but extremely tasty and spectacular holiday dish. Cauliflower baked with nuts and cheese. Separate one kilogram of cauliflower into florets and boil in salted water for 5 minutes. Throw the prepared cabbage into a colander and let the water drain. In a shallow skillet, heat 3 tbsp. tablespoons of vegetable oil and fry in it 4 tbsp. spoons of ground crackers and 4 tbsp. tablespoons of any ground nuts. Tomato hangover soup with garlic and croutons

No less easy-to-prepare soup that will quickly bring you to life after a feast.

Ingredients:

  • Bank of canned tomatoes - 480 gr.;
  • Dried bread - 4 slices;
  • 2 sprigs of celery;
  • 5 cloves of garlic;
  • 500 ml. strong chicken broth;
  • Salt and spices;
  • A little vegetable oil.

Cooking:

  1. In a large blender bowl, add garlic, chopped medium-sized celery, and pour the tomatoes in their own juice. Ideally, they should be skinless. You can also use salted tomatoes, but you need to remove the skin and soup from them, then do not add salt, but rather add a little sugar to balance the taste.
  2. Beat the mass until it is vaporous, season with spices and hot pepper, dilute with hot chicken broth.
