Selecting testicles is simple: they should be pink or pale pink with blue veins. In addition, their elasticity will indicate the young age of the bull and the freshness of the product, and the smell, or rather its complete absence, will also speak eloquently about this.

Before preparing the testicles, they must be thoroughly washed and poured with cold water. In this form, they should stand for at least 1 hour, but it is better to leave them overnight.

Soaked bovine eggs must be cleaned from the skin. To do this, make one longitudinal incision and remove the skin with your hands. There can be one or two layers, so the seller must immediately clarify whether the topmost layer has been removed. Completely cleaned testicles are uniform in color and do not look very smooth. That's all, now there's nothing left but to cook bovine eggs deliciously!

Bull eggs: recipe with mushrooms and onions

Most often, bull testicles are cooked with champignons or barbecued from them. Also, this product goes well with potatoes, if stewed all together. Fresh or stewed vegetables are also a great addition to this delicacy. You can prepare white sour cream sauce for them and serve it separately with fried, stewed and even baked testicles.

To prepare bovine eggs with mushrooms, you will need:

  • testicles - 4-6 pieces;
  • onions - 3 pcs.;
  • champignons (other mushrooms are possible) - 300 gr.;
  • sour cream - 250 gr.;
  • salt, pepper - to taste;
  • vegetable oil - for frying.
  1. The onion is cut into half rings and fried in vegetable oil until golden brown. Mushrooms are cleaned and cut into large pieces and fried separately from the onion. If dried mushrooms are used, then it is better to soak them in water beforehand.
  2. Peeled testicles are cut lengthwise into strips: first in half, and then each half into 3 or 4 more parts (depending on size). These strips are soaked in cold water for half an hour, then they must be rinsed and boiled for 10 minutes.
  3. Oil is poured into a saucepan, prepared onions, mushrooms, eggs are laid out, all this is poured with sour cream, salted, peppered, mixed and stewed until cooked. This usually takes 15 minutes.

It must be remembered that bull eggs, the recipe for which is quite simple, will decrease in size by almost 2 times during cooking and stewing, so portions should be approximately calculated in advance.
