Based on the prepared sourdough, wheat bread can be made. To do this, pour 250 ml of water into the bowl, add 2 tablespoons of oil and sugar (it can be replaced with honey), 2 small ones - salt. Still need rye bran (4 tablespoons). Sourdough needs about 7 tablespoons. 400 grams of flour are divided into 2 parts. The starter is placed on top of the first portion and the rest is poured. The mode in which you can bake sourdough bread in a bread machine is baking. If sourdough from the refrigerator is used in the preparation, then it must be activated. To do this, the top layer is removed, water and flour are added. The mixture must be set aside until it increases in volume. Only then can it be applied.

Rye bread

If the farm has a bread machine, sourdough rye bread is prepared without much effort. But it is important to remember the moment that this cake requires a large proofing (3-4 hours), and if there is no necessary program, then the time for raising will have to be set independently by trial method. So here is one of the recipes. It is necessary to take 500 ml of sourdough, 1 glass of water, a teaspoon of salt, 2 tablespoons of sugar, a small amount of vegetable oil. According to another recipe, sourdough rye bread in a bread machine has the following ingredients: 4 tablespoons of sourdough, 300 ml of water, 400 grams of flour are needed. There are also bran (100 grams). Salt, sugar, butter in about the same proportions. You can add various spices, dry garlic, seeds.   • 50 grams of rye sourdough (water, rye flour)
  • 185 grams of rye flour
  • 185 grams of water

We take dishes of suitable volume (pot, cup), put them on electronic scales - it’s very convenient with one touch of a button you can reset the mass of the selected dishes, put 50 grams of rye sourdough, then add water, stir a little (I use a regular fork, beat a little), then flour and knead again.
We leave the saucepan for 10 - 12 hours at room temperature. It is very convenient to prepare the dough after 9 pm, in the morning put it on a batch in a bread machine.

If I need to make the dough rise faster, I put it on the heating radiator and cover it (this is in winter), and in the warm season in the oven with the backlight turned on, the temperature is about 30 degrees. Cooking time is reduced by two or more - 4.5 hours.

Pour 1 tbsp. a spoonful of vegetable oil on the bottom of the bread machine. We spread 375 g of dough, add 485 g of whole wheat flour to it. We dilute salt 10 g in 200 ml of water, thereby it is evenly distributed and will not fall into lumps in one place, pour it into a mold where there is already dough and flour. Salt is an essential ingredient in the preparation of dough. It reduces the swelling and solubility of flour proteins, makes the dough more plastic, which is especially important for rye dough.

We select the batch in the Panasonic SD-2501 bread machine, the “Rye No. 17” program is the process of kneading and lifting (without baking), at the end of the program, open the lid,
cover the form with a towel (to retain heat), close and wait. In your case (if the model is different), you can choose to prepare the dough for "Pizza", for clarification, it is better to look at the instructions for the bread machine. The result of the test kneading is shown in the photos below.

We leave our kolobok to stand (the lid is closed) for 3 hours 30 minutes. The rise time depends on the type of flour (whole wheat, premium wheat, a mixture of rye and wheat flour, if you add sugar - for lovers of rich bread) and can last from 2 to 4 hours depending on the air temperature in the room. To prepare yeast-free bread in a bread machine, the following products are needed:

    1 tsp baking soda

    1 tsp salt

    0.5 tsp Sahara

    1 tbsp sesame

Baking soda dough should not be kneaded for a long time, as carbon dioxide, which makes the dough porous during baking, can simply evaporate before the moment of baking.

Therefore, the baking soda dough needs to be baked at an accelerated rate. My bread maker has 3 speed baking settings: Fast Bake, Super Fast Bake 1 for 750g Bread and Super Fast Bake 2 for 900g Bread.

For this type of bread, I used the Super Fast Bake 750. With its help, bread is baked in 58 minutes, of which only 10 minutes the dough is kneaded.

To prepare the dough, pour kefir into the mold.

We send the form to the bread machine, set the program for ultra-fast baking of bread with a weight of 750g. After kneading the dough, sprinkle it with flour to make a delicious crust on top.
