An eggplant fan baked in the oven is a wonderful summer snack. The dish is very tasty, satisfying, simple, vegetable and even vegetarian. Looks nice on the table. Can be a side dish for fish or meat.

To prepare an eggplant "fan", we take: eggplant, tomatoes, any hard cheese, garlic, mayonnaise and salt.

Wash the eggplant and cut it in two lengthwise.

Then we cut each half lengthwise into strips 0.5 centimeters wide, but not completely, as shown in the photo.

Salt the resulting "fans" and leave for 15 minutes. You can pepper if desired.

In the meantime, cut any hard cheese into slices.

My tomatoes and also cut into slices.

Peel the garlic, wash and chop.

And now we stuff each eggplant "fan" with cheese, tomatoes and garlic. To do this, put a slice of cheese and a tomato into the cuts of the eggplant. Then add chopped garlic. We spread the "fans" on a baking sheet with baking paper. You can lubricate it with sunflower oil, but this is not necessary. Juice will suffice.

Lubricate each "fan" with a small amount of mayonnaise.

Bake in the oven at 180 degrees C for 40-50 minutes.

Eggplant "fans" are ready. Beautiful, tasty and satisfying.

In today's menu, I propose to cook an eggplant fan from minced meat, tomato and, of course, with cheese and mayonnaise. In this combination, eggplants turn out to be very tasty and can be served at the table as an independent dish without a side dish.

Cooking method:

I will cook two types of eggplant, one from minced pork. And the other from chicken diet, so I myself am now on a diet. If you bake more eggplants of the specified amount, then double all the ingredients.

We cut the eggplant into strips 5-8 mm thick, without cutting to the end, leave the tail.

If the eggplants are small, then cut them whole, and if they are large, then you can cut them in half lengthwise.

Sprinkle the surface of the cuts with salt and leave for half an hour.

During this time, prepare the filling. Cut the tomatoes into thin slices. Stripes - cheese.

Sweet peppers, removing the stalk and seeds, turn into long strips.
Grind the garlic and herbs.
Mix homemade minced meat with garlic and, if you like, with herbs.

In mayonnaise, or sour cream, or a mixture of both, add salt and pepper, mix. If mayonnaise is contraindicated for you, then you can just use one sour cream. For myself, I mixed low-fat sour cream with yogurtand cheese took mozzarella.

Lubricate a baking sheet or form with vegetable oil, or cover it with foil, put the eggplant.

Distribute a thin layer of minced meat on each eggplant plate, then we put tomatoes, peppers, cheese into the cuts.


Lubricate with sauce and put in the oven for about 30-35 minutes, which was turned on in advance at 180 °.


Top with grated cheese.

Serve sprinkled with herbs on the table.

As a filling, you can use chicken fillet, bacon, brisket and other meat delicacies.
And you can generally get by with only vegetables - also very tasty, but not so high in calories. In this case, it is better to pour boiling water over the eggplants already cut into fans and hold for 5 minutes.
Cheese does not have to be put into cuts - you can sprinkle on top.
And you can bake eggplants simply with tomato sauce, adding garlic and herbs to it.Usually a medium eggplant is just enough for 2 servings.

- fresh garlic - 1-2 small cloves (to taste);
- table salt - to taste.

1. To prepare this spectacular snack in all respects, it is better to use young "blue ones". Overripe vegetables have rougher skins. Wash the eggplant well and cut off the green tail. Cut each eggplant in half lengthwise. And then he will also divide each half into thin (moderately) longitudinal plates, without cutting to the end. As a result, you should get such a “fan”, as in the photo. Sprinkle the prepared eggplants with salt. put in a bowl and wait until the juice begins to stand out.




2. You will have to wait 10-15 minutes, so I suggest you spend this time usefully and prepare other ingredients. Wash and pat tomatoes dry with a towel. Cut into circles. If the tomatoes are large, cut each circle in half again.




3. Cut a piece of hard or semi-hard cheese into thin slices. If more convenient, you can grate it on a coarse grater.




4. Prepare a fragrant sauce. To do this, mix mayonnaise and chopped garlic. Garlic can be passed through a press or finely chopped with a knife. Add a pinch of salt and stir. The sauce is ready.

5. Drain the juice from the eggplant. Rinse vegetables from salt. Lightly wring out moisture. Lubricate between the plates with mayonnaise-garlic sauce. Place on a baking sheet greased with vegetable oil.

Fan-baked eggplant in the oven - a step-by-step recipe:

First, let's prepare the eggplant., try to choose small young even eggplants, do not cut the stalk from them.

We cut the eggplant lengthwise into strips 5-8 mm thick, without cutting a couple of cm to the end, leave the tail as a whole. Should get a fan.

Let's take a separate dish in which we will put them.

Each eggplant needs to be salted a little on all sides and left for 15-20 minutes so that they let the juice go and excess bitterness comes out.

Cut the tomatoes into slices, 5 mm thick. I will use 2 slices of tomato for each slice of eggplant.

Cut the cheese into thin slices. The amount of cheese, like other products, take arbitrarily, you can use any cheese.

And now we will prepare the sauce with which we will grease the eggplants

We mix sour cream and mayonnaise in equal proportions, add garlic, chopped in any way convenient for you, any fresh or dried herbs, I have oregano and finely chopped green onions.

Sprinkle the sauce with salt, pepper, mix thoroughly and set aside for now, we will need it a little later.

As for bacon, you can use any smoked meat product: loin, chop, ham, ham, or skip this ingredient in the recipe altogether.

I have uncooked bacon.

Cut it into strips equal in length to eggplant slices.

While we were preparing the food, the eggplants let out juice, they became soft and pliable.

Rinse them under running cold water and squeeze lightly.

We will bake eggplants on a baking sheet, which can be covered with parchment paper or greased with vegetable oil, as in my case.

Lay the eggplants on a baking sheet, forming a fan out of them.

We send the baking sheet to the preheated 180°C(356°F) oven and bake for 35-40 minutes. Focus on your oven.

Heat vegetable oil in a frying pan, put the tomatoes, fry them over medium heat for several minutes, stirring occasionally. Then add salt and sugar, pour in a little lemon juice, simmer over low heat until the tomatoes soften (the result should be a sauce). Add chopped garlic, heat the sauce for another 1 minute on fire and turn off the gas.

Cut the remaining fresh tomatoes into slices. Put 2-3 circles of tomatoes and 2 thin slices of cheese into each cut of the eggplant (leave a little cheese for roasting the eggplants). Prepare the second eggplant fan with tomatoes and cheese in the same way.

Line a baking dish with parchment paper and place eggplant fans. Pour the prepared tomato sauce on top of the fan.

Then remove the foil and sprinkle the eggplants with the remaining grated cheese. Bake eggplant for another 10 minutes at the same temperature.

Very tasty, satisfying and unusual eggplant fans, cooked with cheese and tomatoes in the oven, serve hot, sprinkled with chopped parsley.
