Despite the fact that I offer you two recipes for the basics of beef today, I will make a reservation right away. It is impossible to cook a real, classic basics in a slow cooker without using a frying pan. Because one of the main ingredients of the dish - according to the recipe, fry the potatoes separately and only then add them to the rest. Therefore, the option prepared in a slow cooker can be considered the basics only conditionally. However, the dish still turns out delicious, albeit wrong. Most of all, I liked the gravy in this performance, even more than in the traditional case, with which we will begin.

There are pickled cucumbers in the dish (by the way, they should be just salty, not pickled with vinegar), the sauce is sour, because of which the potatoes “dunet” a little, which means it takes longer to cook and does not give starchyness.

Ingredients:

  • beef pulp - 400g;
  • potatoes - 3-4 tubers;
  • cucumbers - 2 pieces;
  • onion - 1 pc;
  • tomatoes - 1 pc;
  • flour - 1 tablespoon;
  • sunflower oil - 0.5 cups;
  • salt and pepper - to taste;
  • garlic - 2 cloves;
  • fresh greens.

How to cook azu from beef

  1. We wash the meat, dry it with paper towels and cut into cubes against the fibers. Cutting is important! Since beef is a meat that takes much longer to cook, cutting it across the grain will speed up the process.
  2. We clean the potatoes, cut into large strips, while pouring water so that it does not darken and leave it aside.
  3. Cucumbers are cut into random pieces, not very large, but not small, so that they do not boil in the finished dish.
  4. Onion cut into feathers.
  5. The main ingredients are ready. For the tomatoes. In my photo, these are fresh tomatoes peeled and seeds, chopped and frozen since autumn. If you wish, you can take and peel one large fresh tomato, or you can take several tomatoes in their own juice without skin and mash them with a fork. In the absence of all this, tomato paste is also suitable.
  6. Pour half of the oil indicated in the list into the pan, heat it well and lay out the pieces of beef.
  7. Fry the meat over high heat for 5-7 minutes.
  8. Pour hot water from the kettle into the pan. Approximately 1-1.5 cups. Reduce the heat to medium, cover the pan with a lid and simmer until the liquid has evaporated and the meat is tender.
  9. I put onion and flour.
  10. Mix and cook for 5 minutes.
  11. Add tomatoes.
  12. Mix again.
  13. We wait 2 minutes and put the cucumbers. Mix, salt a little, taste and add more if necessary. Pepper. Simmer for 10 minutes. If you want more gravy in the dish, add water from the kettle again.
  14. Put the beef with cucumbers, onions and tomatoes in a bowl.
  15. Wash the pan to fry the potatoes. Sometimes it is advised to fry it in an unwashed pan, but I don’t like it that way. I like it when it forms a nice golden crust from fresh butter.
  16. There is no need to cook the potatoes until fully cooked. It is enough just to get a crust. Might be a little salty. Return the meat to the skillet. We mix. Close the lid and cook for 5 minutes until the potatoes are soft.
  17. In the meantime, we clean the garlic and finely chop it with a knife, wash the greens and cut them too.
  18. We put garlic with herbs to beef with potatoes, hold for another 1 minute and turn off the basics. It's ready! You can call everyone to the table.

  1. Rinse the chicken meat in running water and cut into oblong slices.
  2. Set the multicooker to the “Baking” mode and heat a little sunflower oil in a bowl.
  3. Fry beef for 10 minutes until fragrant broth is formed.
  4. Remove the core of the sweet bell pepper and chop it into thin strips.
  5. Pickled cucumbers are also cut into strips, and onions into thin half rings.
  6. Transfer the vegetables to the meat, mix and cook for 5 minutes with the lid open.
  7. At this time, dilute the tomato paste in water and pour the mixture into a slow cooker. Add parsley, brine and salt to taste.
  8. Switch the slow cooker to the "Extinguishing" program and cook for 10 minutes.

So, if you are lucky enough to get tender veal, you should not spoil it with too long heat treatment. And if you couldn’t find anything better than frozen meat of “indeterminate age”, it’s better to sweat it longer.

Helpful Hint: Meat does not tolerate stress defrosting, so if you want to retain the few health benefits left in frozen beef, thaw it gradually. Dip the piece in cold water and wait for it to thaw. It is better to fill the meat with water in the evening, and the next day cook the basics in a slow cooker. So the meat will be saturated with water and will be juicier.

  4. Separate cooking of products allows you to get a thick consistency of the dish and the ideal shape of the pieces. If you cook everything together, the vegetables will fall apart, and the dish will turn out to be liquid.
  5. It is served sprinkled with fresh herbs. Fresh parsley is ideal.

Modern housewives have developed their own recipe for beef basics in a slow cooker. It turns out to be less high-calorie, since not all ingredients are fried. But also more liquid, which, however, is not at all bad if there are small children in the family. So, to prepare a dish using lightweight technology, use:

Cooking

  1. Cut the meat into cubes, onion into half rings. Add vegetable oil to the bowl, turn on the “Frying” mode. Fry food for 20 minutes.
  2. Put pickled cucumbers, finely chopped, and tomato paste. Cook all ingredients for 5 minutes.
  3. Finely chop half of the garlic, put in a bowl and pour in the water. Close the lid and simmer for at least an hour (“Extinguishing” mode). If the beef is tough, simmer longer.
  4. Peel and fry half-cooked potatoes (in a separate pan), add to the bowl 20 minutes before the end of the stew, cover with the remaining 2 cloves of garlic, put parsley and pepper. Prepare for the signal.

Potatoes can be put in a bowl and raw, but then when adding, pour 1 more multi-glass of water. Increase the extinguishing time by 30 minutes.

3. Grind the garlic, transfer to a slow cooker.

4. Add pasta, stir and cook for another 10 minutes, do not change the mode.

5. Season the meat with hot and sweet pepper, salt.

6. Lay the potatoes, chopped coarsely. If the tubers are small, then you can just cut them in half.

2 pickles;

400 g beef tenderloin;

4. As soon as the onion becomes transparent, it's time to add the meat. Bring it to half-cooked.

5. While the meat is fried, rub the tomatoes, discard the peel. Rinse eggplant, squeeze out excess water.

6. Add tomatoes to the meat, evaporate some of the moisture and pour the eggplant.

7. Now is the time to add various spices to the basics, you can take ready-made mixtures for oriental dishes.

8. Pour in water, add chopped bell pepper.

9. Extinguish for 35-40 minutes by setting the appropriate program. After half an hour, it is advisable to taste, add salt, add hot pepper.

Azu in a slow cooker in Tatar style with tomato juice

For this option, the basics in a Tatar multicooker will need natural tomato juice. It is advisable not to use a packaged product. You can simply chop the tomatoes with pulp with a blender.

Ingredients

500 g of veal;

400 ml of tomato juice;

2 cucumbers;

2 onion heads;

1 carrot;

2 bell peppers;

Spices, garlic.

Cooking

1. Cut the veal into cubes. If beef is used and not very young, then the meat can be beaten off slightly.

2. Put in a slow cooker with heated oil, three tablespoons are enough. Fry on baking for a quarter of an hour.

3. Add chopped onion.

Azu in a multicooker of beef with mushrooms

To cook the basics of beef in a slow cooker according to this recipe, you need salted mushrooms. Together with cucumbers, they will give the dish an unusual taste. Another recipe without potatoes.

Ingredients

600 g of beef;

200 g of salted mushrooms;

200 g of onion;

150 g pickled cucumbers;

1 tsp hops-suneli;

30 ml of oil;

50 g of tomato paste;

400 ml of broth;

Laurel, pepper, garlic.

Cooking

1. Cut the onion into large half rings. Put in a multicooker saucepan. Turn on the device itself on the baking program, pour in the oil

2. Fry the onion slices until translucent.

3. Add beef, cut into strips. Cook covered for a quarter of an hour.

4. During this time, cucumbers and mushrooms need to be cut. Transfer to the meat, evaporate the water.

5. Add tomato paste, fry for a few more minutes.

7. Add broth. Quantities are approximate, please refer to the thickness you need.

8. Simmer for an hour, add salt at the end if necessary. Season with laurel, sprinkle with fresh herbs when serving.

Azu in a slow cooker with pickles and chicken

Dietary version of the Tatar dish. Fillet is used for it. But you can also take other parts from the bird carcass along with the bones.

Ingredients

500 g chicken fillet;

4 spoons of pasta;

200 g cucumbers;

150 g of onion;

100 g carrots;

50 ml of oil;

2 cloves of garlic;

Spices, herbs.

Cooking

1. Chop the onion, cut the carrot.

2. Heat oil on baking, throw in vegetables, fry until half cooked.

3. Add the fillet cut into pieces. Stir.

4. As soon as a white coating appears on all pieces of chicken, add the grated cucumbers.

5. Next, you can put pasta. Stir. Warm up for a couple of minutes.

6. Add spices, chopped garlic to the base.

7. Add enough water to almost cover the chicken.

8. Close, set to stew, cook for 30 minutes. If not fillet is used, but other pieces from the carcass, then you can increase the time.

To make the azu cook faster, pickles and tomato products should be added after the meat is almost ready. Otherwise, the acid will prevent the fibers of the main product from softening quickly.

You can add any spices to the azu. In addition to suneli hops, you can use other oriental mixtures. Seasonings are good for Korean salads.

If the azu is being prepared for any side dish, then it is better to prepare a thick gravy. To do this, add a small amount of flour. To prevent it from seizing in lumps, dilute separately, strain.
