  • 2-3 tbsp. spoons of mayonnaise 67%
  • salt and pepper to taste

The most important thing is to choose a delicious hard cheese, the one you like best. I bought cheese at the market, tried 3 or 4 types of cheese and chose a very tasty, in my opinion, hard cheese. The taste of the finished product depends on the cheese.

Processed cheese is also important. I buy 50% or 55%. Choose high-quality, tasty processed cheese.

My eggs are rustic (homemade). But you can buy eggs in a store, supermarket or market.

I also use garlic for pungency and piquancy. And of course, crab sticks. I bought 2 packs of 100 grams each.

Take store-bought mayonnaise 67%, or prepare homemade mayonnaise. The choice is yours.

Preparation:

Eggs should be hard boiled. Be sure to add salt to the water to help clean the eggs better. Cool the boiled eggs and peel them.

Crab sticks, if they are in film, remove them from the film.

I grate hard cheese on a fine grater. If the cheese does not rub well, place it in the freezer for 30 minutes.

Peel the garlic through a press and squeeze it out using a garlic press. Alternatively, you can grate it on a fine grater or finely chop it with a knife. But in this appetizer of cheese and crab sticks, I like the garlic pressed through a press.

  1. Place the olives on a paper towel to dry. Grate the cheese on a fine grater, add mayonnaise and asafoetida.

Cooking method:

  1. The eggs should be hard-boiled (a post about how to properly boil eggs), and the crab sticks should be frozen, so it’s easier and faster to grate them.
  2. Grind both types of cheese using a grater. Small is better.
  3. We do the same with boiled eggs. Add to cheese.
  4. Season the mixture with mayonnaise. Naturally, I recommend making homemade mayonnaise.
  5. Grate the crab sticks finely.
  6. Let's start making Raffaello from cheese. Take a little cheese mixture on a spoon, put an olive in the center and form a ball.
  7. Roll it in crab shavings.
  8. Well, put it on a plate. Serve to the table. Raffaello cheese balls are delicious, beautiful and very short-lived.

Raffaello with walnuts

Ingredients:

  • hard cheese - 300 grams;
  • chicken eggs - 3 pieces;
  • mayonnaise - to taste;
  • crab sticks - 150 grams;
  • walnuts - 11 pieces

Cooking method:

  1. I haven’t made the “Raffaello” appetizer with cheese for a long time, and then for my birthday I decided to remember it.
  2. It is done very simply.
  3. First, a lot, a lot of cheese is grated on a fine grater.
  4. Place it in a container. And then grate the chicken egg on a fine grater.
  5. Mix cheese with egg and mayonnaise.
  6. We are preparing a surprise - a walnut.
  7. We make balls of cheese with an egg, and put a walnut inside. But while the cheese is soft, the balls are not perfect. Then we put it in the refrigerator.
  8. We grate the frozen crab sticks on a fine grater and roll the cheese balls into them, previously leveled.
  9. Place them on a plate and this is what the cheese balls look like
  10. They turned out delicious and are quick to make!

Cheese "Raffaello"

This snack is reminiscent of Raffaello candies in appearance, but instead of coconut shavings there are shavings of crab sticks. Instead of a nut in the middle there is an olive or an olive. Olives can be stuffed with walnuts. The snack itself, unlike the original sweets, is not sweet at all, but a little spicy and salty.

Ingredients:

  • crab sticks,
  • processed cheeses,
  • eggs,
  • olives,
  • garlic;
  • mayonnaise.

Cooking method:

  1. You will need crab sticks, processed cheese, eggs, olives, garlic and mayonnaise.
  2. Cut the processed cheese into 8 pieces and press them through a garlic press.
  3. Boil the eggs hard. Cool. Peel and press through the garlic press.
  4. Peel the garlic. Press it through the garlic press to the main mass. Add mayonnaise.
  5. Mix everything with a fork.
  6. Take well-frozen crab sticks. Cut off the red stripe from them
  7. Grate the white part of the crab sticks.
  8. The red part of the crab sticks is not needed in the recipe.
  9. Form a cake from the cheese mixture. Place the olive in the middle of the flatbread.
  10. Make a ball and roll it in crab flakes.

"Raffaello" with olives

Ingredients:

  • Pitted olives - 1 jar
  • Shelled walnuts - 100 g
  • Hard cheese – 100 g
  • Crab sticks - 1 pack
  • Garlic 1-2 cloves
  • Mayonnaise - 2-3 tbsp. spoons

Cooking method:

  1. Place a walnut inside each olive;
  2. Grate the cheese and crab sticks into a fine grater, mix the cheese with mayonnaise, add grated garlic;
  3. Take the prepared olives one at a time and roll them first in the cheese mixture and then in crab sticks. Place the resulting balls on a plate on a leaf of green lettuce.
  4. It turns out very tasty and unusual, but I also made it on canapés, pricking each Raphael with a toothpick.
  5. And the most delicious thing is if instead of an olive you take a prune and put a walnut inside it. I like it better this way. because the taste is more piquant and fresh.
  6. You can sprinkle finely herbs on top.

Appetizer Raffaello with olives and walnuts

Ingredients:

  • 1 can of olives or black olives
  • 50 g walnuts
  • 1-2 processed cheese (not sweet)
  • 1 pack of crab shells
  • 2 cloves garlic
  • mayonnaise

Cooking method:

  1. We buy olives without pits.
  2. Grind the walnuts, but do not turn them into dust.
  3. It is very good that they are pieces.
  4. Then, when you bite into Raffaello’s appetizer, you will feel the taste of nuts.
  5. Lightly freeze the processed cheese and crab sticks and grate them on a fine grater.
  6. Peel the garlic, rinse and pass through a garlic press.
  7. Mix processed cheese with garlic and season with mayonnaise.
  8. The cheese and garlic mass should not be liquid.
  9. Stuff each olive with walnuts.
  10. We make a flatbread from the cheese and garlic mass, place the stuffed olives inside and form into balls.
  11. Then roll them in crab sticks.
  12. Place the formed balls on the dish that you will serve and place in the refrigerator for 10-15 minutes.
  13. They are not difficult to prepare and Raffaello’s appetizer looks very beautiful on the holiday table.

Cheese Raffaello with garlic

Ingredients:

  • 250 grams of hard or processed cheese;
  • 5 boiled chicken eggs;
  • mayonnaise;
  • 2-3 cloves of garlic;
  • 200 grams of frozen crab sticks;
  • 1 small fresh cucumber;
  • 200 grams of lightly salted red fish;
  • light sesame;
  • a mixture of white and black sesame seeds;
  • raw carrots;
  • walnut quarters;
  • a bunch of green onions;
  • greens (dill or cilantro);
  • Sun-dried tomatoes;
  • olives, pitted;
  • ground sweet red pepper;
  • pita.

Cooking method:

  1. First, we need to prepare the base for the holiday snack. To do this, grate hard cheese and eggs on a fine grater. Squeeze the garlic through a garlic press. Some housewives use processed cheese, but I prefer hard cheese.
  2. Salt and pepper to your taste, dilute with mayonnaise and knead. (You need to add enough mayonnaise so that the consistency of the mixture is suitable for making balls).
  3. Divide the cheese and garlic mass into 5 parts.
  4. Pour 2/3 of the grated crab sticks into the first plate and add a spoonful of mayonnaise. Mix everything thoroughly. (We reserve the remaining crab sticks for breading). With wet hands, form balls. They can be any size: I like them small, so I use one teaspoon of the mass. Balls with this filling can be decorated with finely grated chicken yolk or rolled in crab breading.
  5. Peel the cucumber, chop it into small cubes and add to the cheese mixture. Then cut the red fish into small cubes. We form cheese balls in the same way, and hide a small piece of salted fish in the middle. We bread the finished balls separately in each type of sesame.
  6. Raw carrots need to be grated and mixed with cheese. We fill these balls with a quarter of a walnut. For decoration we use pre-roasted and ground nuts.
  7. Then add very finely chopped fish and green onions and half a spoon of mayonnaise to the cheese and eggs. We use greens for decoration.
  8. To prepare the fifth version of the holiday snack: add chopped sun-dried tomatoes to the base. We hide an olive in the middle of each ball and bread it in paprika.
  9. Cut the pita bread into squares and dry them in a frying pan. The result is crispy chips for festive serving of our breaded cheese balls.

Holiday snack

Ingredients:

  • Leafy greens (salad) - 4-5 pieces
  • Hard cheese - 100 grams
  • Crab sticks - 200 grams
  • Chicken egg - 2 pieces
  • Mayonnaise - 100 grams
  • Black or green olives - 50 grams (pitted)
  • Salt, ground black pepper - To taste

Cooking method:

  1. So, prepare your food. Boil the eggs, cool and peel them. Free the crab sticks from the plastic bags. Strain the olives from the liquid.
  2. On the finest grater, grate the cheese, eggs and crab sticks. Set aside a third of the crab shavings separately for breading the balls. Add mayonnaise. Salt and other spices are optional, I didn’t add anything, not even salt, it was just enough for my taste. Mix well.
  3. Roll the cheese and crab mixture into balls, the size doesn’t matter, make whatever you like. Mine are about the size of a walnut. Dip each ball in crab shavings.
  4. Place the balls on lettuce leaves. Cut the olives into halves and place each half on a ball, pressing it in a little. So the “Christmas balls” are ready.

New Year's appetizer Rafaelo

Ingredients:

  • 250 gr. hard cheese
  • 5 boiled eggs
  • 2-3 cloves of garlic
  • mayonnaise
  • salt and pepper to taste

Cooking method:

  1. Grate boiled eggs, garlic and hard cheese on a fine grater, add allspice, mayonnaise and mix well until a dense, homogeneous mass is formed.
  2. Taste it, add salt if necessary.
  3. The base for our cheese balls is ready, the mass should not be dry or liquid, so that it will be convenient to form the balls in the future.
  4. Divide it into 5 separate parts and place in different bowls.
  5. First, let's prepare the crab balls. Pour 100 grams into our base. Finely grated frozen crab sticks, add a spoonful of mayonnaise and mix well. Another 100 gr. Set aside the grated crab sticks for sprinkling.
  6. To get beautiful crab shavings, it is better to grate the sticks frozen. The mass is prepared, let's start forming the balls.
  7. It’s more convenient to do this with gloves moistened with water; we’ll use a teaspoon. We take a full teaspoon of the mixture and roll the ball with wet hands, breading each one in crab shavings. We put the balls on a separate plate, this is what we ended up with.
  8. Now let's start making another type of cheese balls.
  9. To do this, peel a small fresh cucumber, cut it into very small cubes and add it to the main cheese mass, mix well.
  10. Using a teaspoon, scoop the mass into your hand, make a small depression in which we place a piece of any lightly salted red fish that you can afford.
  11. We make blanks for further sprinkling. And now we roll the prepared balls in a mixture of white and black sesame seeds, as well as in pure white sesame seeds.
  12. To prepare the third type of balls, add small raw carrots grated on a fine grater to the cheese base and mix well.
  13. We take a teaspoon of the mass, put a quarter of a walnut in the center and roll into balls, making blanks.
    We bread our balls in pre-fried and chopped walnuts.
  14. Let's start preparing the fourth type of cheese balls; to do this, add lightly salted red fish cut into small cubes, finely chopped green onions to the set aside cheese mass and mix gently.
  15. If you see that the mass turns out to be dry, add half a spoon of mayonnaise so that it is softer, more pliable, rolls easily, does not stick to your hands, but does not spread.
    We roll cheese blanks from the prepared mass; they themselves turn out beautiful, marbled, they don’t need to be breaded.
  16. To prepare green balls, bread them in any finely chopped herbs, fresh or dried. You can use dried cilantro.
  17. And the last fifth option. Add finely chopped sun-dried tomatoes to the cheese mixture and mix.
  18. Take a teaspoon of the prepared mass, place one whole pitted olive in the middle, and form balls. Breaded in paprika.
  19. All the cheese balls are cooked and place them on a serving plate.

Appetizer of crab sticks "Raffaello"

An original and light appetizer “Raffaello” will decorate any holiday table. I believe that this recipe is not for everyone, since the appetizer of crab sticks and cheese has a rather salty taste and will appeal more to olive lovers. Try to make the balls as small as possible, then the snack looks more elegant and is more convenient to eat.

Ingredients:

  • Cheese 150 gr
  • Crab sticks 200 gr
  • Pitted olives 100 gr
  • Walnuts 30 gr
  • Garlic 2 cloves
  • Mayonnaise 4 tbsp

Cooking method:

  1. Stuff each olive with a piece of walnut.
  2. Grate the cheese on a coarse grater, add the garlic squeezed through a press. Season with mayonnaise and mix well.
  3. Grate crab sticks on a fine grater. It's better to take frozen ones.
  4. Make a small cake from the cheese mass. Place an olive in the center. Form a ball with an olive inside.
  5. Roll the cheese ball in chopped crab sticks.

Appetizer Raffaello with crab sticks

Ingredients:

  • frozen crab sticks - 100 g
  • several walnut kernels - 30 grams
  • black olives without pits - quantity at your discretion
  • hard grated cheese -100-150 g
  • clove of garlic
  • 1 boiled egg
  • mayonnaise
  • lettuce leaves for decoration.

Cooking method:

  1. Grate the cheese on a fine grater.
  2. Grate the boiled egg or finely chop it.
  3. Finely chop the garlic.
  4. Add enough mayonnaise so that the mixture slightly sets, but is not liquid.
  5. Finely break (cut) the walnuts so that they fit in the middle of the olive instead of the pit. Read more:
  6. Grate slightly thawed crab sticks on a fine grater or grind in a blender (it’s better when the crab sticks come out as shavings).
  7. An olive with a nut will be the core of the Raffaello cheese appetizer.
  8. From the cheese mass, make a thin small cake on your palm.
  9. Place the olive in the middle and form a ball.
  10. Roll the ball on all sides in crab shavings.
  11. Place lettuce leaves on a flat plate and place cheese balls.
