Recipe for buns with cottage cheese from yeast dough “Snowballs. Cottage cheese buns Butter buns stuffed with cottage cheese

For lovers of delicious baked goods, I offer a recipe for cottage cheese buns that turn out very soft. The dough for them is made incredibly quickly, in almost 5 minutes, which is why they are called: cottage cheese buns like fluff in 5 minutes. Their big advantage is that they do not need to rise at all, and they will increase themselves during the baking process. The dough is suitable due to the baking powder in the composition, since we do not add yeast, because then the whole cooking process would take longer.

The taste of such baked goods can be diversified by adding candied fruits or chopped dried fruits, but this is not necessary, because they are already delicious. You can also slightly reduce the amount of flour and add semolina instead, which will make them even fluffier. If you are a fan of cottage cheese baking, then this recipe will be a real find for you. Bake them and see for yourself.

How to make buns from cottage cheese dough

First, I will prepare the ingredients to make curd dough for buns in the oven. I grind the cottage cheese through a sieve into a deep bowl, or you can simply mash it well with a fork. The main thing is that it becomes as small as possible. I take homemade cottage cheese, and if there is no such cottage cheese, I buy it with a fat content of 9%.

Next, I beat the eggs into the curd, add sugar, salt, baking powder and vanilla sugar. I mix everything until the curd mass is homogeneous. You can beat the eggs and sugar separately, and then add them to the cottage cheese, this is optional, see what is more convenient for you.

Then I add flour, which needs to be sifted so that the dough for the buns turns out like fluff.

Then I knead the dough, it may remain a little sticky, but this is not a terrible thing, and there is no need to add more flour.

Transfer the dough to a surface lightly sprinkled with flour or a silicone mat.

I divide it into 12 approximately equal parts using a knife. If the knife sticks to the dough, soak it in water.

To make it easier to form the product, I wet my hands with water and only then take a piece of dough and roll it into a ball. I grease the baking dish with butter and place the prepared circles into it.

These buns need to be brushed with a little milk or beaten egg on top.

I turn the oven on at 180 degrees and when it is hot, I put the cottage cheese buns in the oven for 10 minutes. Then I sprinkle them with powdered sugar or sugar and put them back to bake for another 10 minutes.

After the time has passed, take them out of the oven, let them cool and remove them from the mold. The finished buns have a very soft center.

Well, the cottage cheese buns are ready in just 5 minutes and now you know how to make them.

If you love baking from cottage cheese, then you will undoubtedly like the recipe. Moreover, the preparation itself takes only 5 minutes. Bon appetit!

COMPOUND
YEAST DOUGH
0.5 cups water, 7g dry yeast, 3 tbsp sugar, 0.5 tsp salt, 2 eggs, 3~3.5 cups flour, 3 tbsp vegetable oil, vanillin
CREATURE FILLING
400g cottage cheese, 2~5 tbsp sugar, 2 tbsp starch
STREUSEL (SPRINGING)
2 tbsp flour, 2 tsp sugar, 10~15g butter

Prepare ordinary yeast dough.
For the filling, grind the cottage cheese with sugar and starch.
For beauty, you can make a multi-colored filling - divide the cottage cheese into 3 parts, add fresh raspberries to one, grated chocolate to the other, turmeric and lemon zest to the third.
Divide the dough into 3 equal parts.
Roll each part into a 25x20 cm rectangle.
Place 1/3 of the filling along the long edge.

Lightly grease the second unoccupied edge with water. Roll the dough into a roll so that the filling is inside.
Roll up all 3 rolls in this manner and leave for 5 minutes until the edges stick.
Weave the rolls into a braid.

Place the braid on a greased baking sheet (or parchment paper) and sprinkle water on top. Leave until increased by 1.5 times.
While the bun is rising, make the topping.
Mix sugar with flour and grind with butter. It is necessary that the mass remains crumbly. If the butter is too soft, you may end up with a dense dough. In this case, it must be placed in the freezer until completely hardened.
Before placing in the oven, grease the bun with water again and sprinkle with butter grits (option with dense dough - remove it from the freezer and rub it on top of the bun).

I love crispy baked goods, so I brushed them with whipped yolk

Bake in preheated temperature to t=200~220°C for 20 minutes. Then open the oven slightly, cover the top of the bun with foil, and close the oven. Reduce the heat by 20° (i.e. if it was 200°C, turn it to 180, if it was 220°C, turn it to 200°C) and bake for another 10~15 minutes. Knowing my oven, I baked for about 50 minutes. The bottom was slightly overcooked.

Buns with cottage cheese are a pastry familiar from childhood. Even if you didn’t indulge in such buns at home, they were served constantly in kindergarten and school. It wasn’t always possible to try them hot, but even when they cooled down, the buns were tucked into both cheeks: the most delicate curd filling with the aroma of vanilla had no other “prospect”!

Self-prepared buns with cottage cheese, believe me, will be even tastier! We will bake them in the form of small roses, which will be especially appreciated by young family members, for whom the appearance of the dish is often more important than the content.

Yeast dough is kneaded using a dough base, so you need to start by preparing the dough.

Mix half the sugar for the dough, yeast, milk heated to 38-40 degrees (no more) and 3-4 tablespoons of flour, leave for 15 minutes, covering with a napkin.

While the dough is being prepared, you can prepare the rich component. Melt the butter (you can do it in the microwave), let it cool, mix with the egg, the remaining sugar and vanilla sugar.

During this time, the dough will turn into a fairly large foamy “cap”; pour the oil mixture into the dough and mix.

Now, adding about half a glass of flour, start kneading the dough; you will have to knead first with a spoon and then with your hands. The dough is ready when it stops sticking to your hands, as a rule, this requires 3 cups of flour.

Cover the dough with a lid, napkin or film and place in a warm place (for example, a bowl of warm water) for 40 minutes.

At this time, for the filling, mix cottage cheese, eggs, sugar and vanilla sugar until smooth.

When the dough for cottage cheese buns has doubled in volume, you can start making rose buns.

Divide the dough into 14-15 identical pieces, roll each piece into a circle on a floured surface, make cuts on three sides. Make the cuts in such a way that the “petals” are of different sizes - small, medium and large.

Place the filling in the middle of the workpiece, wrap it with a smaller “petal”, secure it, then with a medium one and a larger one.

Make the remaining roses in the same way, place them on a baking sheet greased with vegetable oil or lined with baking paper, and leave to rise for another 10 minutes. By this time, the temperature in the oven should already warm up to 200 degrees.

Brush the tops of the buns with yolk using a brush and place in the oven. To prevent the bottom of the roses from burning, it is recommended to place a heat-resistant cup of water on the bottom of the oven.

In about 30-40 minutes the baked goods will be ready!

Remove the buns with cottage cheese from the baking sheet and serve.

The basic recipe can be modified by adding lemon zest, candied fruits, raisins or dried apricots to the filling.

Today we will prepare wonderful yeast buns with a delicate curd filling. Such buns used to be sold in school canteens and delicatessens, and for those who were especially lucky, these buns were prepared by mothers and grandmothers. The buns are very tasty and soft, they usually do not stale, despite the fact that from the specified products they are made into 12 pieces, and each one is not at all small in size.

In order to make the filling especially tender, I advise you to use homogeneous dense cottage cheese; in extreme cases, you can rub regular grain cottage cheese through a sieve.

To prepare buns with cottage cheese, prepare the ingredients according to the list. It is convenient to put the dough in a bread machine; to do this, first mix the milk with sugar and salt. Then add flour and yeast and add softened butter. Turn on the “dough” program and wait until the dough has risen well.

For the curd filling, mix cottage cheese with sugar, flour, 1 whole egg and 1 white. Reserve the second yolk for brushing the buns.

Punch down the risen dough and divide into two parts. Roll each part into a rectangle about 0.5 cm thick.

Spread with curd filling and carefully roll into two rolls.

Cut the resulting rolls into 6 buns each.

Brush the buns with yolk and let them rise a little. During this time, preheat the oven to 200 degrees.

Bake the buns with cottage cheese for about 15 minutes. Serve warm!

I can’t vouch for the taste, but it will be hot :)
