Sometimes the cottage cheese cookies turned out “rubbery”, sometimes raw inside, sometimes hard.

And now, thanks to a series of experiments, culinary observations and, of course, accumulated experience, the ideal recipe for delicious cottage cheese cookies has been found.

Ingredients:

  • Cottage cheese - 400 grams
  • Butter - 200 grams
  • Flour - 300 grams
  • Baking powder - 10 grams (1 sachet)
  • Sugar - 7-8 tablespoons

How to make cottage cheese cookies:

Cut the butter into pieces and put it in the oven or microwave until it becomes soft.

I don’t have a microwave, so I put the butter in the oven for 20 minutes at 40 degrees.

We choose cottage cheese for cookies of medium fat content, but not too dry.

If you mix the cottage cheese and butter with just a spoon, then the finished cookies will contain grains of cottage cheese on the cookie crust. Which will become hard during the baking process and will greatly spoil the taste of the cookies. Ideally, you can use cheese mass for this recipe. But I have natural cottage cheese from the market, so I need a blender.

Add flour and baking powder to the creamy curd mass. It is best to add flour in small portions; you may need a little more or less flour from the amount indicated in the recipe.

Knead the dough, divide it into two parts and put it in the refrigerator for 1 hour.

We do this so that the oil in the dough cools down, the dough becomes elastic and easy to work with.

We take the dough out of the refrigerator and roll out one ball into a thin layer no more than 3 mm thick. It turns out quite thin, but we will fold it in 4 layers, so the thickness is quite normal.

Using a glass or cup, cut out pieces from the dough. I used a cup with a diameter of 9 cm. A glass with a smaller diameter did not work: the cookies turned out too small.

Thanks to this method, the cookies will turn out with beautiful, even edges and the same thickness.

Pour sugar into a plate (I used a little cane sugar for greater clarity, because white sugar blends in color with the dough). Dip each circle in sugar on one side.

Then fold the circle in half, sugar side inward.

Dip only one side of the half circle into sugar again.

Fold the sugar inside again, dip it again in sugar on one side only, and lightly press the curd cookies with your fingers so that they do not “open” during baking.

Place our cookies on a baking sheet lined with parchment paper, sugar-free side down.

Regarding the sugar: due to this layering, the cookies seemed too sweet to me. Therefore, you can make the sprinkles at the “semi-circle” stage. For the child, I sprinkled the cookies only on top, and this did not affect the quality of the cookies themselves. In the end, we make homemade cookies and decide how much sugar we put in.

It should be noted that when the baking sheet is completely filled with cookies, do not rush to fill the second one. If cottage cheese cookies sprinkled with sugar stand for a long time at room temperature, the butter will begin to melt, followed by sugar. In the oven, such cookies will “float”, sugar will flow onto the baking sheet in the form of caramel, and as a result the cookies will turn out tasteless.

Therefore, we put the remaining dough in the refrigerator. And we will continue making cookies when the first batch of cottage cheese cookies is on the way.

In the case of cottage cheese cookies, it is very important to maintain the oven temperature. Since we are dealing with one of the types of puff pastry (yes, yes, please don’t be alarmed), you need to bake cookies at a temperature of at least 210 degrees. At this “shock temperature”, the moisture from the cookies will quickly evaporate, the layers will rise, the dough will bake evenly, and the cookies will turn out with a crispy crust and a soft layered structure inside.

If you make the temperature lower, for example 180 degrees, the moisture from the dough will not have time to evaporate, and you will get cookies with a crispy crust - raw inside.

Oven temperature instructions have been received and it's time to send our cookies off to bake. Preheat the oven to 210 degrees. Turn on the top and bottom heat at the same time. Bake the cottage cheese cookies until golden brown for 10-15 minutes.


Even if you don’t like to eat cottage cheese in its natural form, you will definitely like cookies made from cottage cheese dough. If you add this product to any homemade dessert, it will definitely be airy, tender and nutritious. Moreover, cottage cheese itself is universal; it combines well with any ingredients.

In addition, it contains many vitamins and minerals, which, by the way, are not destroyed by heat treatment. And also, homemade baked goods will naturally lack any dyes and other “chemicals” that are found in almost all confectionery products sold in grocery stores.

The highlight of it is that you won’t immediately guess that it consists of cottage cheese. And at the same time, it’s made quickly and from ordinary ingredients, and the end result is crispy on the outside and fluffy on the inside—simply incomparable.


Ingredients:

  • 250 gr. cottage cheese;
  • 150 gr. flour;
  • 1 tbsp. + 5 tbsp. Sahara;
  • 100 gr. butter;
  • 1 tsp baking powder;
  • a pinch of salt.

Preparation:

1. To begin, mix cottage cheese with 1 tbsp. sugar and a pinch of salt. If you want a more homogeneous dough, you should grind it in advance or grind it in a blender. Then add the melted cooled butter and mix again.


It is better to add flour in parts to make it easier to knead the dough.

When you knead, it may not hold its shape and fall apart. Therefore, it should be put in the refrigerator for 1-2 hours (the longer the better) to make it pliable.


3. When the time is up, remove the dough from the refrigerator and divide it in half. First we will work with one part, and put the second back in the refrigerator.

4. So, roll out the dough thinly and use a mold to cut out identical circles with a diameter of 7-10 cm. By the way, you can also form other circles from the remains of the dough.


5. Pour sugar (5 tbsp) into a small plate. Next, take the circle and dip one side into it. Then fold it in half with the sugar side facing in and press down a little. Dip one side again in sugar and fold inward again. Dip the resulting triangle into sugar for the last time. The same process must be done with the remaining circles.


As you can see, a lot of sugar is used for sprinkling, so you don’t have to add it to the dough if you wish.

6. Place the ears on a baking sheet covered with parchment paper, sugar side up. Bake at 180 degrees for 25 minutes until golden brown or golden brown. Before serving the baked goods, of course, you need to let it cool.


An old recipe for cottage cheese cookies through a meat grinder

Have you ever tried making cookies through a meat grinder? Yes, I did, and I liked it. You don’t have to roll out the dough with a rolling pin and you don’t need to cut out shapes from it with molds. You just need an electric (or manual) meat grinder, through which we will pass the dough and immediately send it for baking. Just 15 minutes and the delicious crumbly treat is ready!


Ingredients:

  • butter - 250 gr.;
  • cottage cheese - 250 gr.;
  • sugar - 4 tbsp;
  • egg - 2 pcs.;
  • flour - 500-600 gr.;
  • vanilla sugar - 2 sachets;
  • baking powder - 1 sachet;
  • a pinch of salt.

Preparation:

1. Place in a large bowl and mix together softened butter, cottage cheese, sugar, a pinch of salt, vanilla sugar, 2 eggs and baking powder. Next, add the sifted flour in small portions so that the dough does not become hard. As a result, it should turn out soft and not stick to your hands.


2. In the meantime, you can preheat the oven to 180 degrees and install a grid with large holes in the meat grinder. Divide the curd dough into 4 parts, roll each of them into a “sausage”.


3. Scroll the “sausage” through a meat grinder and cut the emerging flagella with a knife to the desired length of the product. This is what it should look like when rolled through a meat grinder. Next, place on a baking sheet with parchment paper and sprinkle with sugar on top.


4. Place in a preheated oven and bake for 15-20 minutes until golden brown. I usually serve these cookies with condensed milk or jam for tea. It turns out very tasty and it is swept off the table very quickly!


Simple and delicious cottage cheese cookies without butter, margarine and eggs

And this version of cookies will appeal to those who are on a diet or those who just want to try a light dessert with low calorie content. We will exclude butter or margarine and eggs from the ingredients, but will add ripe apples. And we will get a low-calorie, healthy, but at the same time tasty and sweet dessert.


Ingredients:

  • 250 g cottage cheese;
  • 100 ml. kefir (yogurt);
  • 250 g flour;
  • 1-2 apples;
  • 5 tbsp. Sahara;
  • a pinch of salt;
  • cinnamon;
  • powdered sugar.

Preparation:

1. First, grind the cottage cheese through a blender or with your hands to remove large pieces, while adding sugar and salt. Then pour in kefir or yogurt and sift through the flour. Knead the dough, which in the end should be soft and elastic.


2. Now roll out the resulting dough thinly (2-3 mm) and cut into equal squares 5*5 cm using a shaped wheel.


3. Take the apples and cut them into thin slices. Place an apple slice on each cut-out square diagonally, then sprinkle with a little sugar and cinnamon.

Therefore, if you don’t want to bother with the oven, I suggest this method of cooking. And if you want it to be unsweetened, exclude sugar from the ingredients.


Ingredients:

  • 100 g cottage cheese;
  • 200 g flour;
  • 100 g butter;
  • 2 tbsp. Sahara;
  • 1/2 tsp. cinnamon;
  • 1/2 tsp. baking powder;
  • a pinch of salt.

Preparation:

1. Place sugar, baking powder and salt in a container for kneading dough. Then sift the flour to make the dough more airy. Mix everything well.


2. Take the butter and grate it on a coarse grater. Then the whole mass should be ground into crumbs.

The oil must be chilled, so put it in the refrigerator for half an hour before use.


3. Make a depression in the middle and lay out the cottage cheese. Knead the dough until it becomes homogeneous and does not stick to your hands. If it is difficult to mold, add a tablespoon of water or sour cream.

4. Then shape the dough into a sausage and wrap it in cling film to then refrigerate for 30-40 minutes. After this, cut the sausage into slices approximately 1 cm thick.


5. Place these slices in a heated frying pan and fry until golden brown on each side for about 4 minutes without using vegetable oil.

Echpochmak is prepared in much the same way as Ushki. Thanks to the cottage cheese, it turns out sweet and tender, although you can’t feel it. By the way, this name for cookies was borrowed from the Tatar pastry Echpochmak (translated as triangle), which has a triangular shape. So, see how to prepare this delicacy step by step.


Ingredients:

  • 200 gr. cottage cheese;
  • 4 tbsp Sahara;
  • 150 gr. flour;
  • 100 gr. butter;
  • 5 g baking powder;
  • 5 g vanilla sugar.

Preparation:

1. First, grind the cottage cheese with soft butter until an airy, homogeneous mass is obtained. You can use an immersion blender or a sieve.

By the way, if you use homemade cottage cheese, the cookies will be more airy.


2. Then gradually add the sifted flour and baking powder.

If the cottage cheese is dry, add less flour.

Knead the dough with your hands until it becomes elastic and stops sticking to your hands. And put it in a plastic bag and leave it in the refrigerator for half an hour.


3. Sprinkle the surface of the table with flour and lay out the dough. Divide it in half. Roll out one part of the dough into a layer 3-5 mm thick. Using a glass, cut out round pieces with a diameter of approximately 8 cm. Do the same with the other part of the dough.


4. Take a separate plate and add sugar, as well as a little vanilla sugar. Now dip each circle on one side in this mixture. Then fold in half with the sugar side facing in. Fold the circle again to form a triangle and dip in sugar again.


5. Place the finished products in a baking dish lined with parchment paper, non-sugar side down and place in a preheated oven. Bake at 200 degrees for 10-15 minutes until they are golden brown.


6. This is how golden they turn out. They are especially tasty when served cold, so let them cool in advance and serve with tea or milk.

  • 200 gr. cottage cheese 9% fat;
  • 100 gr. sour cream;
  • 1 packet of vanilla sugar;

Knead the dough with your hands, but without fanaticism. We won’t knead for long, otherwise the oil will heat up from our hands and ruin the entire structure. 5 minutes of kneading is enough.

Form the dough into a ball, wrap it in film and place it in the refrigerator for 20 minutes.

In the meantime, let's prepare the filling for our delicacy. The butter here may be slightly softened, cut it into pieces, mix with flour and sugar. Knead with your hands until crumbs form.

Take the dough out of the refrigerator and roll it out into a thin layer, and pour the crumbs of cottage cheese and flour on top. If desired, you can add nuts or poppy seeds, for example.

After grating some butter, mix it with flour and knead it with your hands. Then grate again and combine with flour again. The dough comes out in the form of crumbs.

Now the cottage cheese needs to be crushed using a blender to a homogeneous soft mass.

  • cottage cheese - 200 gr.
  • flour - 1 cup
  • butter - 100 gr.
  • sugar - 100 gr.
  • eggs - 1 pc.
  • zest of 1 - 2 oranges
  • zest of 1 lemon
  • baking powder - 1 tsp.
  • vanillin
  • cinnamon

For the glaze:

  • powdered sugar - 1/2 cup
  • cold water - 8 tsp.

First, mix flour and baking powder.

Pre-heat the oil at room temperature until it becomes soft. You can cut it into pieces, so it will be easier to knead. Combine butter, cottage cheese and egg, add sugar, vanilla sugar, salt and cinnamon.

Grate the zest of 1 large or 2 medium oranges and the zest of a lemon. Also add to the dough and knead.

Pour the flour according to the recipe onto the table and mix it into the butter and curd mass. The dough should not be tight and not stick to your hands.

Knead the dough until smooth and roll out. The thickness of the dough is approximately 0.5-0.7 mm. Cut out diamonds or figures from the dough and place on a baking sheet.

These cookies are baked at a temperature of 200 degrees quite quickly, no more than 15 minutes.

While the delicacy is cooling, prepare the sugar glaze. To give the glaze a beautiful color, we use food coloring. Just dilute a little dye with water and mix with powdered sugar.   • flour - 300 gr.
  • butter - 80 gr.

Add flour and mix well until smooth.

The dough turns out soft and elastic. Wrap it in cellophane and place it in the refrigerator for 30 minutes or in the freezer for 10-15.

After refrigeration, the dough rolls out very well. We need to roll it out thinly, about 2 mm thick, so that it is easy to form roses.
