Ingredients:

Flatbreads are wonderful relatives of the so popular pies.

There was a time when they differed in the presence or absence of filling. And they made pies in wealthy houses, and flatbreads in simpler houses.

Those times are long gone, and flatbreads with filling are no longer uncommon, but they are distinguished from pies... well, except that they have a more rounded, “flatbread” shape, and they usually try to make the dough lean and rough.

However – to whom, what to taste!

Flatbread with ham - general principles of preparation

Homemade flatbreads with ham are baked in the oven or fried in a frying pan in a small amount of vegetable fat. They are prepared with or without filling.

Any ham will do for flatbreads. It is crushed with a grater or cut into small thin pieces, after which it is mixed with dough or placed in the filling. Often, in addition, grated cheese and finely chopped herbs are used. To enhance the flavor, the ham can be lightly fried without drying out the pieces.

The dough for flatbreads can be made with yeast, kefir, sour cream or water. It can even be prepared from mashed potatoes or canned corn. Flour is added to them in small quantities to bind the other ingredients together.

Flatbread with ham is served with soup and meat dishes instead of bread. They are also served with tea, coffee or milk drinks.

Flatbread with ham - cooking tricks and useful tips

Do not add a lot of filling to the flatbreads and glue the edges tightly so that the filling does not fall out during frying.

When frying flatbreads, do not pour a lot of oil into the pan, otherwise the products will turn out to be too greasy; after frying, place them on a disposable towel or napkin to remove any remaining oil from them

To prevent sesame seeds from falling off the finished products, lubricate their surface with water or oil before you sprinkle.

Try adding pickled cheeses to the filling instead of hard cheese, or to it. The filling will be more loose and the taste of the flatbread will improve.

Ham from large, flat cans is not suitable for filling flatbreads; it contains too much moisture. But homemade types of ham, especially from poultry, are simply created for such baking.

If you prepare homemade ham, knowing in advance that some of it will be used as a filling for flatbreads, make it a little saltier and a little less fatty. Excess moisture is also not good, but the ham should not be too dry either.

If you bake the scones in the oven, be sure to line the baking sheet with parchment or grease it with oil to prevent them from sticking to the broiler.

In the northern regions of Ukraine, flatbreads with ham filling are served with sour cream and garlic sauce. The baked goods are made slightly under-salted, and salt, crushed garlic and sour cream are mixed, whipped and served separately in gravy boats. Such flatbreads are called “Smazheniki” and they act as a completely independent dish. Hot lubricants are dipped in chilled sauce and washed down with sweet tea.

The small number of ingredients and ease of preparation make this dish so special. The product will be appreciated by both adults and the smallest gourmets. After all, in the end there will be delicious cheese cakes with ham on the table.

First of all, pour the flour, all 300 grams, into a large round container. Add shelled eggs and mix the dough thoroughly. Next, add kefir to this entire mixture. For this dish, it is best to choose high-fat kefir (3.2%). You can use both a mixer and improvised means for mixing ingredients.

You need to ensure that the dough is not viscous, but not liquid. Cheese and ham scones in a frying pan may burn due to the dough being too watery. Also, you need to maintain a balance in order for the result to please you.

Add a little salt to the dough, it is very important not to overdo it. Keep in mind that the ham itself is salty and over-salted dough can ultimately spoil the overall taste. Place the finished dough in a cold room and cover with a towel.

The advantage of this recipe is that it is cooked in a frying pan. This way you can safely monitor how the roasting is progressing. The dough is burnt, or vice versa, it is not yet sufficiently prepared. In the oven, it is not always possible to keep track of the baking process.

Also, you can complement the cheese cakes with whatever your heart desires. Bell peppers, pickled cucumbers, chicken, peas, corn, zucchini, eggplant, various sausages - everything is ideal for cheese flatbreads with ham. The recipe can be supplemented with many other ingredients.

So, let's get back to the actual preparation of delicious flatbreads. Remove the dough from the cold room and mix it with half of all the hard cheese (100 grams). The cheese must be shredded on a coarse grater in advance. It is important to ensure that the cheese is evenly distributed throughout the dough. Roll out the dough so that its thickness does not exceed half a centimeter.

The ready-made and rolled out dough should be divided into even circular pieces. Their radius should be approximately 10 centimeters. In fact, it depends on each housewife how exactly she sees her product in finished form. They can be made smaller or larger.

Onions can be marinated in vinegar and hot water in advance, which will make its taste sweet and remove the unpleasant odor. Fans of fresh onions can simply chop them finely and that’s it. Also, it can be replaced with green onions, which do not have a specific smell, but are not inferior in taste.

All ingredients should be enough for 7 flat cakes of equal size. You need to divide the onions, herbs and ham into 7 servings. Fill the dough with filling and remaining cheese. Wrap the dough so that it doesn’t end up falling apart in the pan.

After all the cakes are securely “sealed” in the dough layer, you need to carefully roll them out with a rolling pin again. This will allow them to be larger and the dough to be thinner.

Absolutely any frying pan is suitable for frying cheese cakes with ham. Place a dry and clean frying pan over high heat. Add a small amount of sunflower oil, then reduce the heat.

Fry the flatbreads so that they do not touch, otherwise the products will stick to each other and their appearance will not live up to expectations.

If desired, you can add green onions, garlic or a little basil to the recipe. These ingredients will highlight the taste of the dish. You can also fry cheese cakes with ham in breadcrumbs. This will only enhance the taste of the tortillas, the crust will be crispy, and inside there will be an amazing combination of ham and hot cheese.

This dish will decorate any holiday table and will delight even the youngest guests. Flatbreads are convenient to take with you on the road and on picnics. Even when they cool down, they will not lose their amazing taste.

Step 1: Prepare kefir.

Kefir must be taken out of the refrigerator in advance so that it warms to room temperature. At the beginning of cooking, pour it into a cup or glass, add soda, sugar and salt. Mix everything with a whisk or teaspoon. You will hear a joyful hiss with which the soda reacts with the fermented milk product. Your task is to wait until this reaction passes.

Step 2: Prepare the cheese.

While the kefir is being prepared, take the cheese and grate it on a fine grater, or even better if you grind it in a food processor or blender.

Step 3: Prepare the dough.

Pour kefir mixed with salt, sugar and soda into a deep plate, add grated cheese and start kneading the dough, gradually adding flour. In the end, you will still have to leave the mixture aside to allow the kefir to finally wet the flour. While the dough is infusing, make the filling, and then divide the finished homogeneous mass into several equal balls.

Step 4: Prepare the ham.

Peel the skin from the ham and cut the meat into thin, small cubes or grate.
Instead of ham, you can use regular sausage or some sausages, small sausages, or sausages.

Step 5: Form the cakes.

Prepare the cooking surface by dusting it with flour. Place one of the balls made from dough and roll it into a flat cake, but not very thin. Then place pieces of ham in the middle and seal the edges of your product.

To make the cake neat, roll it out again, finally sealing the edges.

As a result, you should end up with something like this, almost a round pie filled with ham. Finally, make sure your tortilla has no holes and is not too thin.

Step 6: Fry the tortillas.

Place a frying pan over medium heat, heat the sunflower oil in it and fry the flatbreads until deliciously golden brown on both sides. During the cooking process, make sure that there is always oil in the pan, adding it as needed, and that the fire is not too strong and the products do not burn. Well-fried tortillas with ham can be served.

Step 7: Serve the flatbreads with ham and kefir.

Serve hot flatbreads with ham, brew coffee or tea with them, and for an afternoon snack they will be good with tomato or sweet juice. That's all, enjoy delicious pastries with a hearty filling inside.
Bon appetit!

The kefir from which you will knead the dough for flatbreads must be fresh and not sour. It’s not a good habit to try to cook something tasty from spoiled and acidified foods.

You can also add cheese or green onions, as well as other herbs, to the ham filling.

You may need a little more or a little less wheat flour, it will all depend on the quality of the ingredients.
