Pour the egg yolks into a deep bowl and beat with a mixer until fluffy. Important: There is no need to mix the components vigorously; it is enough for them to become homogeneous and viscous in consistency.

Step 4: Prepare the cookie dough.


Place soft pieces of margarine and curd mixture into a medium bowl. Using a fork, mix everything thoroughly until a homogeneous mass is formed. Then pour in the beaten egg yolks and begin adding sifted flour in small portions. Important: At the same time, mix everything thoroughly with a fork or beat with a mixer at low speed so that no lumps appear.
When the mass begins to become very thick, transfer it to the kitchen table, crushed with a small amount of flour. We continue to knead the dough with clean hands, and so on until it becomes dense and elastic. Attention: Also, the mass should not stick to your fingers, otherwise the “Roses” will not work out.

Now we give the dough the shape of a ball, use a knife to cut it into four parts and wrap each part with cling film. Place the pieces in the refrigerator and leave for 2 hours, so that they brew and freeze.

Step 5: prepare the filling.


5–7 minutes before completion Infusion of the dough into a clean deep mixer bowl (which must be rinsed under running water and dried well so that there is no liquid) pour the egg whites. Using a mixer, beat the ingredients at high speed until a strong foam appears. Immediately after this, we begin to pour in the sugar and cinnamon in small portions and continue to mix everything thoroughly with the available equipment. We should get a beautiful fluffy foam, without sugar crystals, that holds its shape.

Step 6: prepare cottage cheese cookies.


When the dough has settled, take it out of the refrigerator and remove it from the cling film. We place the pieces one by one on the kitchen table, crushed with a small amount of flour, and roll them into a rectangular layer. Attention: The thickness of the cake should not be more than 5 millimeters.

Next, spread the protein mass over the entire surface of the layer, making small indentations from the edges. Important: Each rectangular cake should contain no more than two tablespoons of filling.

Now we wrap the dough with the filling into a roll, starting from the larger edge. Using a knife, cut it crosswise into pieces approximately 1–1.5 centimeters.

Now turn on the oven and preheat it to temperature 200 degrees. Attention: We immediately place the baking sheet on the middle tier so that it can also heat up well. Pour some flour into a deep bowl and start preparing the “Roses”. Using oven mitts, lightly remove the baking sheet and grease the bottom and sides with vegetable oil using a pastry brush. Now, having dipped one side of each cookie into the bulk ingredient, carefully place it on a hot surface. We place all the “Roses” in the container at a distance of two centimeters from each other and then put them back in the oven. Bake the dish for 15–20 minutes until a golden crust appears on the surface. During this time, the cookies should double in size. At the end, turn off the oven, and use oven mitts to remove the baking sheet and set it aside. Let the "Rosies" become warm.

Step 7: serve cottage cheese cookies.


When the cookies become warm, use a kitchen spatula to transfer them to a special plate and serve them to the dessert table along with tea or coffee. It turns out very tasty and satisfying, so you can easily treat your friends to these “Rosettes”.

  • Eggs – 2 pcs.
  • Sugar – 1 tbsp. (200 ml.)
  • Margarine – 150 g
  • Flour – 300 g
  • Baking powder – 2 tsp

How to bake cottage cheese cookies at home

The recipe for curd dough for cookies is simple: first, grind 250 grams of cottage cheese into a large container. I take it with 5% fat content, I like it this way the most. I grind it through a sieve so that there are no lumps or large particles. Here, the finer the better, so you can take curd mass, which is already sold with a homogeneous consistency. Homemade cottage cheese is also suitable, but it is advisable that it is not dry and not too greasy. Instead of grinding, you can grind it with a blender. Then I separate the yolks from the whites, since only the yolks go into the dough, and the whites are needed for the cream, so I’m still fine-tuning them. I also add vanilla and half of the total amount of sugar, that is, 0.5 cups.

I mix everything until smooth. I melt the margarine in a water bath and add it to the rest of the mixture. If you are making cookies for children, you can replace the margarine with butter. I also add baking powder.

I mix it back and start adding flour in several approaches, or preferably 2 - 3 tbsp at a time, to make kneading more convenient. First I mix it in with a spatula or spoon, and then I continue the process with my hand when it becomes difficult to do it with a spoon.

As a result, you get a very soft dough, which is important not to overfill with flour and not to knead for too long, so that you get really soft and tender curd cookies. Next you need to prepare the filling, so pour the remaining 2 egg whites and half a glass of sugar into the mixer bowl and beat it all for 4 minutes. Now I’ll show you how to form such rosette cookies from curd dough. I divide the dough into 2 parts. First, I roll out one part into a thin layer. It is advisable to roll it into a long rectangle, then there will be more cookies.

I grease it with 1/3 of the filling on top and distribute it evenly on all sides.

Then I carefully roll the dough into a long roll and cut it into pieces, the width of which is 1 - 2 cm. Now I put these simple cookies with cottage cheese on a baking sheet with parchment, but do not forget to leave a small distance between them.
