Your beginning XuXu liqueur takes in Germany. In the 9th century, the Underberg Family began producing herbal tinctures, which were presented to the world at an exhibition in England.
Since 1939, production stopped due to problems with raw materials.
About 10 years later, the Underberg heirs resumed the production of tincture in small bottles, giving rise to the development of a new alcoholic drink. The recipe itself was originally taken from German bartenders who mixed strawberry puree with vodka.
Since 1997, we have known this liqueur under the global brand XuXu.

Modern liqueur Ksyu Ksyu is made from natural strawberries, lime juice and high-grade vodka. It has a bright red color and does not taste very sweet with a hint of slight sourness from lime.

Due to its composition, the liqueur, which contains about 70% juicy strawberries, has become very popular among the fairer sex.
It was even given the name "Drink of the Goddesses."

Liquor Xu Xu (XuХu)

If anyone doesn’t know, XuXu is a German liqueur made from fresh strawberries with vodka. Although, the name “liqueur” here is very arbitrary - the drink is not even sweet at all. But thick and very fragrant.
Honestly, I have respected “Ksyu Ksyu” since my youth - it’s very, very tasty. And from time to time I buy it for my beloved, exclusively.
But, apparently, over the years I have somehow become more tight-fisted, or perhaps my “toad” has grown up and is no longer strangling like a child, or excise taxes have become such that you can’t buy anything without a toad...

In general, I was returning from Tunisia, but in “duty free” and stocked up on all sorts of drinks while I was waiting for the flight. Well, I bought Ksyu Ksyu at the same time.
And while we were flying, my toad attacked me and started strangling me - and why was I, in my right mind and memory, given 22 euros for a liter of strawberries with vodka?!

It fit perfectly - the pulp goes away (although you literally have to wipe it with a spoon), but the strawberry seeds remain.
I had to fiddle with 1 liter for about 15 minutes. No rush.

The result is obvious! After filtration, even the color became more saturated.

And after a day in the refrigerator, Xu Xu was infused and did not even separate, as often happens with the original XuXu, which is supposed to be shaken before use.

This is such a delight - homemade Ksyu Ksyu. Even if you open a production facility, you can estimate the markup yourself, at the exchange rate of 22 euros per bottle.
But, lazy. And there will obviously be problems with the license.
So, make XuXu yourself, at home, as they say - you won’t regret it. Everything about everything - no more than an hour.
And the result is amazing, I’m not afraid of this word. I respect Ksyu Ksyu very much.
And it drinks “soon”, as it says on the bottle.

Using Xu Xu liqueur in cocktails

In terms of its composition, Ksyu Ksyu liqueur cannot be classified as a cream. Rather, it is a low-alcohol representative of liqueurs. It is consumed chilled (up to 10 degrees), often added to ice cream and fruit desserts, thanks to which the liqueur has become a popular summer drink.
There are many cocktails with Xu Xu liqueur:

1. Ksyu Ksyu with sparkling champagne

The most popular type of Xu Xu cocktail in the world is a combination of liqueur with champagne or any other sparkling wine.

To make it you need:
- XuXu liqueur - 50 ml;
- 10 ml fresh lemon juice;
- 100 ml of champagne.

You need to put ice in the glass, pour liqueur, add lemon juice and champagne (sparkling wine) on top. Mix everything well. The composition can be supplemented with a piece of strawberry.

2. Banana Xu Xu

The basis for the cocktail should be:
- XuXu liqueur - 50 ml;
- banana juice - 150 ml.

You also need to put a couple of pieces of ice in the glass, add banana juice, and add liqueur on top. Decorate the cocktail with mint leaves and strawberries.

3. Milk Ksyu Ksyu

The ingredients of this cocktail are dairy products:

Each of us knows that the strawberry season is very short, and the price category of this product changes every time. But still, there is a way to extend the pleasure of such a delicacy for longer, namely by preparing a very original drink at home - strawberry liqueur.

Classic recipe for homemade strawberry liqueur

The drink prepared according to this recipe has a very rich aroma of fresh strawberries, a rather pleasant soft taste, and a beautiful red color.

All we need for preparation is:

  • cognac or vodka, alcohol if desired - 1 liter;
  • fresh strawberries – 1 kilogram;
  • sugar – 1 kilogram;
  • lemon juice -30 grams;
  • clean water - 0.5 liters.

Cooking method step by step:

The first step is to very carefully sort out the strawberries themselves, remove the missing fruits and separate the tails and stems from the fruit itself. After which they need to be washed under running water, then each berry is divided in half into two even parts.

In the next stage, we transfer our strawberries into a clean separate container (jar, bottle), pour cognac, vodka or alcohol, adding lemon juice. Close the whole thing very tightly with a lid.

It is important to take into account the fact that the alcohol covers the berries by at least two centimeters.

After this time, it is necessary to strain our liqueur through a sieve and carefully filter several times through a triple layer of ordinary gauze.

Now we will need our unaccounted for ingredients, namely a kilogram of sugar and water. Mix them in a saucepan and put on the stove. You need to wait until the water boils, and then let it stand for about five minutes, removing the resulting foam with a slotted spoon. You must wait until the resulting syrup cools.

Strawberry liqueur xuxu (popularly called xu or xu) made in Germany has a bright, opaque, rich raspberry tone and has a strength of 15°. This is a sweet and pleasant-tasting berry alcoholic drink. The manufacturer, Georg Hemmeter, included vodka, strawberries, lime juice in the recipe, and E129 food coloring is used for color stability. But no matter how natural it is, it is still an unnecessary component that negatively affects health, and sensible winemakers refuse it when producing xu xu liqueur at home.

Features of the drink

The original German alcohol is produced without sugar and is additionally colored with a “charming red” (official name E129) dye (as in the photo), which makes it different from the drink made at home.

After all, few winemakers would dare to include such additives in a recipe and refuse to sweeten an alcoholic product.

The second difference between factory-made and home-made alcohol: the original one also gives color to cocktails, while a drink made at home does not, but its strawberry taste and aroma will be more pronounced. But the home-made liqueur xuxu has retained its main feature: it is recommended to drink it from a glass container, with ice, undiluted, or adding it to champagne, chilled to 13° C - then it reveals its full bouquet.

Selection of ingredients

It’s no secret that if you want to get a delicious alcoholic product at home, you need to select the highest class ingredients.

  • For liqueur, you should take high-quality alcohol, the strength of which does not exceed 45° (the alcohol is diluted). Vodka (or well-refined moonshine), cognac, rum are suitable as a base - the main thing is that its strength is not higher, and the taste and smell does not end up overwhelming the strawberries.
  • The berries chosen are only ripe, whole, elastic, without spots or sour or other unpleasant smell. Ideally, these are homemade strawberries that ripen in dry, sunny weather - they are sweet and not watery.
  • An orange-colored lime resembles a lemon-tangerine taste, it lacks bitterness, and a green or yellow-green fruit will traditionally be sour-bitter and can be replaced with lemon.

Recipe No. 1

No acidifier required here. Homemade recipe includes:

  • vodka or other alcohol (1000 ml);
  • strawberries (1 kg);
  • sugar (1 kg);
  • settled boiled water (500 ml).

Making XuXu liqueur at home involves 5 steps.

  1. The berries are sorted, washed, allowed to drain, then the stalks are removed. Strawberries should be cut in half, and large varieties - lengthwise into 3-4 parts, placed in a 3 liter glass jar.
  2. The berries are poured with alcohol prepared for the base and covered with a lid. The alcohol liquid should be 2-3 cm on top of the strawberries.
  3. The container with the ingredients is placed on the windowsill and left for 2 weeks, the swollen lid is removed, the gas is released, and covered again. Then the strawberries are separated from the vodka by straining through a sieve, the alcohol is additionally filtered so that there are no berry seeds.
  4. Make syrup: dissolve sugar in a saucepan with water and put on fire. It should boil slowly for 5 minutes, remove the foam with a slotted spoon, remove from heat, and let cool to 20 °C.
  5. Combine vodka infused with strawberries with sugar syrup, stir thoroughly and pour into bottles. It should be infused in a dark place for 7 days at room temperature.

Strawberry liqueur can be stored at home in a bar for 1.5–2 years. Serve and drink in the same way as the original. In appearance, it resembles wine made from pink grape varieties, with a strength of 14–18°, but the taste is sweet, slightly viscous, without sourness, and by infusing the strawberries in the sun (on the windowsill), the winemaker gets a more saturated color of alcohol (photo attached).

Recipe No. 2 with lemon

Required:

  • 0.5 l 40° alcohol;
  • 0.5 kg strawberries;
  • 200 ml of settled water;
  • 250 g (less possible) sugar;
  • juice from half a lemon.

Recipe for making XuXu strawberry liqueur with lemon at home:

  1. Wait until the water drains from the washed, sorted strawberries, remove the stems, and place them whole in a 2-liter jar.
  2. Mix vodka with lemon juice and add to strawberries (berries should be submerged). Close the container with a lid and place it on the windowsill.
  3. Strawberries are kept in vodka for 14 days (they will become faded, and the alcohol will be colored), filtered (do not squeeze!) so that there are no seeds, poured into a hermetically sealed bottle for storage, and left in the refrigerator.
  4. The strawberries on which the vodka was infused are put back into the jar, sugar is added, covered and left for 3 days, shaking the contents daily. Do not deform the berries!
  5. Drain the resulting strawberry syrup, add water to the jar, rinse, strain, and combine everything with vodka from the refrigerator.
  6. Leave the bottle of liquor for 5 days until the sediment settles. Gently filter - the alcohol is ready to drink.

This is a classic recipe and the resulting xu xu liqueur is very reminiscent of the original XuXu, with sourness, but moderately sweet.

Strawberry liqueur xu can be made at home using frozen berries. The taste, aroma and color of the alcoholic drink do not change. Regarding the proportions: in the original XuXu liqueur, the manufacturer puts strawberries 65% of the volume of alcohol, and does not add sugar at all.   • Strawberries – 1.5 kg.
  • Vodka – liter.
  • Sugar – 200 gr.
  • Water – 200 ml.

  1. Place clean berries in a three-liter jar, mash and fill with vodka.

Take:

  • Strawberries – 500 gr.
  • Banana – 2 pcs.
  • Sugar – 250 gr.
  • Vodka – 500 ml.
  • Water – 200 ml.

How to do:

  1. Place bananas cut into any size into a jar, add berries and pour in alcohol.
  2. Leave at room temperature for 2 weeks, and do not forget to shake the workpiece periodically.
  3. After two weeks, pour the cooled syrup into the jar: melt the sugar in water and bring to a boil.
  4. Be sure to strain the drink, even squeeze it slightly. And leave it to “ripen” for another week.

Strawberry liqueur - homemade recipe with condensed milk

An incomparable liqueur, the recipe for which I tried to bring to life last year. But I made one mistake - I didn’t look at the composition of the condensed milk. As a result, vegetable fat ended up there, and a greasy film formed on the surface of the liquor. Don't repeat my mistake, be careful.

It is worth keeping in mind that the drink cannot be stored for a long time, a maximum of a week or two in the refrigerator.

Take:

  • Berries – 300 gr.
  • Vodka – 170 ml.
  • Condensed milk – 120 ml.

How to do:

  1. Place clean berries in a bowl, pour in condensed milk and puree with a blender.
  2. Add vodka, stir and run the blender again. You can safely make this recipe, but check out other recipes in another article.

Recipe for making Ksyu-Ksyu liqueur

The terribly expensive and famous xu-xu strawberry liqueur can be easily made at home. The analogue is no worse, believe me.

Take:

  • Strawberries, fresh, frozen – 500 gr.
  • Sugar – 300 gr.
  • Vodka – 500 ml. (alcohol diluted with water to 45 degrees).
  • Lemon - half.
  • Water – 200 ml.

How to cook:

  1. Place clean strawberries in a liter jar and fill with vodka until they are completely covered with liquid.
  2. Add lemon juice and place the jar on the windowsill for 10 days.
  3. After this time, strain the drink (do not squeeze the berries).
  4. Hide the strained infusion in the refrigerator for now, and add sugar to the berries. Shake the jar to mix the strawberries with the sugar, or mix gently yourself.
  5. Return the jar to the windowsill for another couple of days so that the sugar has time to completely dissolve. Drain the resulting syrup and instead pour boiled and cooled water into the jar. Stir and pour the liquid into the syrup.
  6. Combine the syrup with the infusion and leave to infuse for 3-5 days. There will be sediment at the bottom of the jar that will need to be filtered. If measured, the strength of the liqueur will be approximately 15%.

Italian strawberry liqueur - recipe with vodka

The drink is intended for long-term storage, however, it will have to be infused for quite a long time. But the taste is amazing!

Take:

  • Strawberry - 360 gr.
  • Vodka – 750 ml.
  • Cinnamon stick.
  • Cloves – 2 sticks.
  • Sugar – 150 gr.
  • Lemon zest from 2 lemons.
  • Bay leaf – 2 pcs.

How to cook:

  1. Combine berries, lemon zest, spices and 90 g in a jar. Sahara. Pour vodka or the same amount of 40% alcohol and hide the tank in a cool place for 6 months. I want to say that just 1-2 months is enough – it’s been tested, but the original recipe specifically states six months.
  2. Strain the liqueur and pour into another jar, add 60 g. sugar and leave to ripen for another week. The longer it sits, the better it tastes. By the way, do not throw away the strawberries after straining; decorate pastries and desserts with them.

Homemade strawberry cream liqueur

I know that this homemade drink is more often called strawberry yogurt. You can prepare it from fresh or frozen berries, which allows you to have it on hand all year round. This is incredibly convenient; you can prepare liqueur in advance for any date. The shelf life is not too encouraging; the warranty is only a month.

Take:

  • Vodka – 500 ml. (replace with cognac if desired)
  • Strawberries - fresh - half a liter jar, frozen will take 350 grams.
  • Vanilla is a pod.
  • Cream syrup – 350 ml.

For the cream syrup:

  • Cream, thick – 250 ml.
  • Sugar – 250 gr.
  • Yogurt, vanilla – 350 ml.

How to cook:

  1. At the first stage, make the syrup: combine the cream with sugar and let it boil over low heat. Be sure to stir all the time.
  2. Cool and pour in yogurt. Stir, pour from the pan into a jar. By the way, the syrup can be stored for up to 2 weeks if refrigerated.
  3. Next, cut the berries into halves, pour vodka and add a vanilla pod (if you don’t find them in the pods, add vanilla sugar).
  4. Place the tightly closed jar in a cool place for 5 days.
  5. Then strain the liqueur, combine with cream syrup and let stand for a couple more days to ripen the drink. Pour into bottles and store in cold storage.

The homemade version of the German liqueur with strawberries differs from the original in that it does not give color to the cocktail, because it does not contain a dye. What is it prepared with? First of all, with a high-quality alcohol base. If it is alcohol, then it should be diluted to 45 degrees. Both, and, and good will do.

We select berries that are firm and juicy, without rot, stains or sour smell. The best option - homemade strawberries, but in its absence, frozen will do. Xu-xu also contains lime, but it can be replaced with lemon.

Recipe one

No acidifier. We need:

  1. alcohol 45%, vodka or rum - one liter;
  2. kilogram of strawberries;
  3. kilogram of sugar;
  4. boiled, settled water - half a liter.

First, wash and peel the berries, remove the stems and let them drain. Cut it lengthwise into three parts and put it in a jar (capacity 3 liters). Fill the strawberries with alcohol so that it is three centimeters higher than the berries. Having placed it on the windowsill, we wait a couple of weeks. If the cap inflates, release the gas.


After a couple of weeks, separate the berries from the tincture. We don't need them anymore. Strain the infusion and prepare a simple syrup. Mix the tincture with syrup and let the drink brew for another seven days. You can drink. Shelf life is up to one and a half years.

Recipe two

With lime or just lemon. This homemade strawberry liqueur is also an imitation of Xu-Xu liqueur. In order to prepare it, you will need:

  • lemon juice (from half a fruit);
  • strawberries - 0.5 kg;
  • settled water - 200 ml;
  • alcohol (40 degrees) - 0.5 kg;
  • sugar - 250 g.

We sort the berries, get rid of everything unnecessary and wash them. We give them the opportunity to drain. Then we put the whole thing in a large jar. Mix the alcohol with lemon juice and pour it over the whole berries so that they are immersed in the liquid.

We close it hermetically and wait half a month on the windowsill. Afterwards we strain (do not squeeze) and pour into a bottle, leaving it in the refrigerator. Place the remaining berries in a jar and cover with sugar.

We wait three days, shaking the jar periodically. Pour the syrup into the tincture, pour water into the jar, rinse it and also add it to the tincture. You can strain again. We insist for another five days, wait until sediment appears, express it and put it in the refrigerator. Can be stored for about a year.

Important! If you are using frozen strawberries, place them in a jar frozen. Let it thaw while cooking. This way it will retain much more flavor.

With rum

There are two types of alcohol, so the taste of the liqueur is extraordinary. For preparation you need:

  • fresh strawberries - 2 kg;
  • liter of vodka;
  • 700 g rum;
  • kilogram of sugar.

Mix with sugar and vodka. Wash and peel the berries, cut them and put them in a jar with alcohol. It should be about three centimeters higher than the strawberries, since the berries will definitely absorb alcohol when infused.

Cover tightly and hide in the cold for a couple of months. Remind yourself of the tincture once every couple of days to shake the jar. All that remains is to strain and pour.


Strawberry liqueur is an excellent dessert drink that is suitable for the most romantic dinners and get-togethers in the company of beautiful ladies. If you try, you can cook it at home, and it will be no worse than store-bought.
