How to make homemade cottage cheese

This is the healthiest thing that can be made from fermented milk. Real homemade cottage cheese, grainy and soft, tender, what could be better and tastier for breakfast with raspberry jam. By the way, in the summer there is especially a lot of milk and cottage cheese has to be made often so that it does not spoil; we freeze it in bags and put it in the freezer, sometimes it’s enough for half the winter.

I usually make cottage cheese in a three-liter jar, but you can use a pan, just not an aluminum one. It is important here not to overheat the sour milk, otherwise the cottage cheese will turn out to be small grains and will be very dry. And if you don’t allow the whey to separate normally, it will be watery and sour.

A jar or saucepan with sour milk must be placed in a water bath, in another saucepan of larger diameter and capacity, so that the water level reaches more than half of the jar. Slowly heat the water, not letting it boil, and look at the condition of the curdled milk. Soon the transparent yellowish whey will begin to separate, and white curdled flakes will appear, this is the future cottage cheese.

When the curdled clots separate well and remain at the bottom, you can strain and discard the curd. To do this, take gauze, fold it into four and line a colander with it. Carefully pour the whey, do not drain it, you can also cook something with it. I usually make cottage cheese in a three-liter jar, but you can use a pan, just not an aluminum one. It is important here not to overheat the sour milk, otherwise the cottage cheese will turn out to be small grains and will be very dry. And if you don’t allow the whey to separate normally, it will be watery and sour.

A jar or saucepan with sour milk must be placed in a water bath, in another saucepan of larger diameter and capacity, so that the water level reaches more than half of the jar. Slowly heat the water, not letting it boil, and look at the condition of the curdled milk. Soon the transparent yellowish whey will begin to separate, and white curdled flakes will appear, this is the future cottage cheese.

When the curdled clots separate well and remain at the bottom, you can strain and discard the curd. To do this, take gauze, fold it into four and line a colander with it. Carefully pour the whey, do not drain it, you can also cook something with it. The cottage cheese will remain in the gauze; you don’t need to shake or mix it the whole time, then it will turn out layered,

Now you need to tie the ends of the gauze and hang the cottage cheese to drain over a bowl, after a while, usually about two hours, you can eat it.

    We do not roll out the dough completely, cut out circles using cups (regular 200 g) so that they are all the same. Then we roll out each circle to the required thickness (not too thin, it doesn’t need to be like dumplings, it’s thin, then the pies won’t be fluffy, although some like them thin, like pasties) and stuff them. And all at once to evenly distribute the filling. Then I make pies.

    I fry in the amount of refined vegetable oil necessary for frying ordinary pies made from yeast dough, not on high, but not on low heat.
